Simple Recipe for Easy Vegan Cookies: A Guide
The best vegan cookies use just a few simple ingredients and taste as good as ‘regular’ cookies (if not better.) This recipe is for simple vegan chocolate chip cookies.
They’re easy to make and don’t make use of any egg replacements – they’re just made of good vegan ingredients. Best of all, they’re also gluten free, making them perfect for those with an intolerance to gluten.
- 1 cup of oat flour
- ½ tsp of baking soda
- ¼ tsp of salt
- ¼ cup of sugar
- ¼ cup of coconut sugar
- ⅓ cup of dark chocolate chips
- 2 tbsps of almond milk
- 2 tbsps of vegetable oil
- ¼ tsp of vanilla extract
And here’s how you do it:
- Add all of your dry ingredients to one bowl, including the oat flour, baking soda, salt, and sugars. Gently mix.
- Add the almond milk, vegetable oil, and vanilla extract, and stir until all ingredients are combined. If your dough is too dry, add an extra 1-2 tbsps of almond milk.
- Mix in the chocolate chips and chill for approx. 2 hours.
- Preheat your oven to 325 F and prepare a baking tin by lining it with greaseproof paper.
- Form balls from the dough and add them to the tray, leaving enough room around each cookie dough ball so they can spread.
- Bake for 10-12 minutes or until just browned.
