Roasted Tomato Soup


One of the things I always try to have on hand is a batch of soup. Does not matter the kind, but there is always one in the freezer, or one in the refrigerator or one simmering on the stove. This is my cure for everything. From being homesick to missing tooth.

Tomatoes


The latter is me today. After a painful molar extraction yesterday, the only thing I wanted to eat last night was soup. Smooth tomato soup. I was too drugged up to even want to thaw the batch I had in the freezer so my dear honey brought me some home from the local eatery.

Today, in between two rounds of painkillers, I am putting this Roasted Tomato Soup on the stove. It is my drug of choice to nourish me while I can’t have solid foods and to calm down the sounds coming from my stomach. A girl’s got to eat and even beaten to a pulp, I will try to make something tasty.

I am really honored to be sharing this recipe with the reader of Joanna at Cup Of Jo today in her "Best Simple Recipes" series, here. I also wrote a bit of my long love story with soup for her readers.

Roasted Tomato Soup



Roasted Tomato Soup With Tomato Parmesan Croutons
Serves 4-6

Ingredients:
2 pounds fresh tomatoes
4 garlic cloves (skin on)
4 small Vidalia onions, cut in half (or 2 regular onions)
2 tablespoons olive oil
2 teaspoons dried basil
2-4 cups water (depending on how thin/thick you like your soup)
Salt and pepper to taste

For the tomato parmesan croutons:
8 to 12 large cherry tomatoes
1 teaspoon dried oregano
1 tablespoon grated parmesan
Fresh oregano to garnish

Preheat the oven to 400F.
Slice the tomatoes in halves and place them on a baking sheet. Drizzle with 1 tablespoon olive oil.
Place the garlic cloves and onion halves on a separate baking sheet and drizzle with 1 tablespoon olive oil. Season with salt and pepper.
Place both baking sheets in the oven and roast the vegetables until soft, about 20 minutes.
Remove from the oven and let cool.
Peel the skin off the garlic cloves and place with the rest of the vegetables, in a food processor. Add about 2 cups of water and puree until smooth. Add more water to reach your preferred consistency. Adjust the seasoning with salt and pepper if desired.

For the tomato parmesan croutons:
Turn your oven broiler on high.
Thinly slice the cherry tomatoes (I usually get 3 slices per tomato) and layer on a baking sheet line with parchment paper. Sprinkle evenly with the dried oregano and parmesan. Broil for about 1 minute or until the parmesan starts to get golden brown. Remove from the oven and let cool completely.
To serve, place the soup in a large saucepan and re-heat quickly over medium heat right before serving. Ladle the soup into bowls and garnish with the tomato parmesan croutons. Enjoy!

I was going to start this by saying that I had not married into a typical Southern family but to tell you the truth, I can’t think of one typical Southern home. Here in the South you can be from the Lowcountry, the Midlands or the Mountains. Three different ways of life, three different Southern twang lingering after each word. Three different ways of seeing the sun shine bright and to make a tomato pie.

Homemade Ricotta


I married into a Southern family with history and well, more history. My family is nomad in comparison with a history of adaptation, made colorful by the people in it and the countries we come from. I married a guy with a keen ability to retain only the goodness of the past to move into the present. He understands that I will adapt both our traditions to keep connected to my family and call his, my home. The Lowcountry does feel like home to me now. I have embraced its food, its ingredients, the seasons (sort of) that bring picnics at the beach in December and ripe juicy tomatoes in March. And tomato pies.

I had never had a tomato pie until I met my mother in law. Actually, I met the pie first. Bill brought it to a picnic date and I also fell in love with my future family that day. If she wanted to tie me up to South Carolina through its culinary traditions, she had me at "another slice honey?" Juicy tomato slices in a buttery crust, happily nested in a creamy filling with plenty of basil, garlic and topped with a generous handful of sharp cheddar.

Nothing that my doctor would be thrilled about. Nothing that my brain, deeply anchored in its own culinary ways, could compute. Nothing that I would admit craving as soon as Spring rolls around. And yet, I could not control my will power and had another generous slice. I felt completely and utterly happy, satisfied and calm. Giddy from my brain to my toes. From a tomato pie. Alright…and from the man before me.

That very same day, I vowed to do something my grandmother and mother had advised years before: never ever, under any circumstance try to replicate that pie. I had now entered the potential "it’s not quite like when my mom makes it" territory. I ain’t no fool…Instead I decided to create my own version. The one adapting ingredients we have here to flavors and tastes from back home. A different approach to the same theme. A Tomato galette with homemade ricotta and plenty of oregano. A drizzle of olive oil and a sprinkle of parmesan.

Heirloom Tomato Galette:

Serves 4 to 6:

Ingredients:
For the crust
:
1 1/4 cup Jeanne’s all purpose gluten free flour mix (or regular all purpose flour if not gluten free)
1/2 teaspoon salt
1/2 teaspoon dried oregano
110 gr cold butter (1 stick)
1/4 cup icy cold water

For the ricotta filling:
1 cup ricotta (I use this recipe to make homemade ricotta)
1 garlic clove, minced
1 tablespoon finely chopped fresh oregano

Topping:
3 to 4 heirloom tomatoes
1 tablespoon parmesan
2 teaspoons olive oil

Directions:
Prepare the crust:

In the bowl of a food processor, (or follow the same instructions if doing by hand), pulse together the flour, salt and oregano until incorporated. Add the butter and pulse until the butter resembles small peas and is evenly incorporated. Gradually, stream in the cold water until the flour just comes together. Turn the mixture out onto your work surface and form into a 2-inch thick, round disk. Wrap with plastic wrap and refrigerate at least 30 minutes (or overnight) before rolling out.

Preheat the oven to 350F and position a rack in the center.

Prepare the filling:
In a large bowl, mix all the ingredients together and keep refrigerated until ready to use.
Slice the tomatoes and spread them out on layers of paper towels to drain some of their moisture out while you roll out the pastry.

On a large surface area, well floured, roll out the pastry dough to a 10-inch circle, spread the ricotta filling but not all the way to the edge. Leave a 2-inch border of pastry all around. Layer the tomatoes on top. Gather the edges of the pastry dough, pleating as you go with your fingertips (don’t worry about being even – these are free form. Imperfections are wonderful anyways…). Sprinkle the tomatoes with parmesan. Bake for about 40 to 50 minutes. Let cool slightly, drizzle with the olive oil, some more oregano and serve.

It looks like the bout of bronchitis going around town has find a way to sneak into our house and beat me to pulp. Or at least it feels like it. I can’t complain though. We each get sick about once a year and thankfully not at the same time. That would be miserable for everyone around us…and we would drive each other crazy.

Meyer Lemons


While B. tends to crave fruits and juice when he is sick, I tune in to hot, energizing, shock-full-of-good-for-you ingredients soups. As soon as I feel I am about to get sick, and it always settles on my throat and chest, I make a huge pot of chicken broth and creates a couple of soups to have on hand. I may feel like a lion is coughing up a storm in my bronchi but at least, I have hot and nutritious liquids to navigate through it.

And it’s good for the soul too. Which always makes one heal faster.

Taking the next couple of days off and staying under the cover to get better.

Lemon, Chicken & Orzo Soup



Lemon, Chicken & Orzo Soup:

Serves 4 to 6

Ingredients:
2 teaspoons olive oil
1 medium carrot, peeled and cut into fine matchsticks (or diced)
1 small celery stalk, diced
1 small onion, finely chopped
6 ounces boneless, skinless chicken breast
1/2 cup roughly chopped fresh spinach
1 teaspoon chopped fresh oregano
1 cup gluten free orzo
salt and pepper
8 cups chicken broth (or water if you prefer)
Zest and juice of a lemon

Directions:
In a large pot (4 quart or more), heat the olive oil over medium heat and add the carrot, celery and onion pieces. Cook for about 3 minutes, stirring occasionally. Add the chicken breast, the spinach, oregano, orzo, broth and season with salt and pepper. Cover and bring to a boil. Reduce the heat to low and simmer, half covered for about 30 minutes or until the orzo is al dented.
Remove the chicken breast from the soup. Let cool enough to handle and shred it into pieces. Return the shredded meat to the pot. Add the lemon juice and zest, stir and serve.

To say that it has not really been good "soup weather" around here this winter would be an understatement. We have spent more days in short sleeves and sandals than in sweaters and boots. Granted South Carolina has a sub tropical weather year round and we do joke that we have two seasons, Hot and Hotter also called Humid and More Humid. Yet, February is a month we all look forward to as it usually offers a bit of a chill, a couple of weeks of fireplaces burning, of hoodies and gloves.

Making Soup


Not this year. I can count on both hands the days I wore a sweater and on one those when I put my coat on. And boy do I love Winter. I grew up in an area of Provence where the Mistral wind often blew stronger in the Winter time, giving way to clear and chilly skies. Here the winds unmistakably bring thunderstorms or clear warm days. If I want a Winter mood, it is up to me to create it.

Rosemary


Soup will put me in an instant winter cozy mood. But here obviously, soups cannot be only for cold grey days. I grew up with my mom serving soup every dinner before the rest of the meal but I did not really continue that habit once I moved away on my own. Instead, soups of all kinds became standard lunch fare at the house. Piping hot a few times but mostly warm or room temperature to be able to taste every bit of subtleties in the marriage of the vegetables used and their dance on my palate.

This soup is no exception to my rushing to lunch time every day. I am not much of a breakfast eater and I usually work straight through lunch but comes 2pm and my stomach wants to jump hoops and make loud cavernous noises until I settle it down with a little something. I find the most satisfying lunch to be a big cup of soup and a tartine these days.

I can sit down, catch up on the news around, satisfy my hunger and recharge my internal batteries with the minimum fuss and the most gratifying bowl of goodness. I usually start a big pot of soup while I cook other things for dinner or as soon as I get up and start production on my shoots for the day. The smells wrapping up or kicking off a day at work are tantalizing enough to make me wish for that first spoonful with great anticipation.

This soup has been made three times in the last ten days. We just can’t get enough of it. My friend John who is a chef at my favorite restaurant downtown, reminded me that most of the vegetables I used for it were what we call back home "les légumes oubliés" or heirloom vegetables. Vegetables that are finely and firmly coming back on menus and dinner tables all around.

Sunchokes or Jerusalem Artichokes (topinambours), parsnips, turnips. I added Vidalia onions, cauliflower and a bit of rosemary to round up the flavors. Served with a slice of grilled bread smeared a bit or goat cheese mixed with plenty of herbs and topped with a few slices of radishes and it was the perfect lunch.

I am thinking of adding a poached egg to my tartine next time and makes this dinner…

Roasted Vegetable Soup



(Mostly) Root Vegetable Soup & Herbed Goat Cheese Tartines:

Serves 4 as a main dish

Ingredients:
1 small head of cauliflower
3 cloves garlic
3 to 4 small Vidalia onions
1 pound sunchokes (peeled and quartered)
4 turnips (peeled and quartered)
3 parsnips (peeled and cut into 1-inch thick rounds)
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 or 2 rosemary sprigs
1/2 to 1 cup water, or veggie or chicken stock

Directions:
Preheat oven to 375F and position a rack in the middle.
Trim the outer leaves from the cauliflower head. Cut in quarters, remove the core, and cut the cauliflower into medium size florets. Place on a large baking sheet.
Peel the garlic and place on the baking sheet with the cauliflower.
Trim the white part from the green stalk of the Vidalia onions. Keep the white part and cut into medium sized chunks. Wash well under water and place also on the baking sheet.
Finely add the sunchokes, turnips and parsnips to the same baking sheet.
Drizzle with the oil, salt and pepper. Place the rosemary on top and roast for about 20-25 minutes. Remove the rosemary.
Let cool slightly. Place in a food processor, start running the machine and add enough water to have a creamy soup. Re-season if necessary with salt and pepper. Serve with the herbed goat cheese tartines.

Herb Goat Cheese & Radish Tartines:

Makes 2 tartines per person

8 slices of your favorite bread
8 oz plain goat cheese, at room temperature
1 teaspoon fresh rosemary, finely chopped
1 teaspoon parsley, finely chopped
1 small bunch radishes (about 6 to 8) cut into thin slices

Grill or toast the bread and set aside.
In a small bowl, mix together the goat cheese and herbs until well blended.
Spread some of the goat cheese mixture on the tartines, top with some radish slices.

It’s the little things that make me happy. Not just smiling. Truly happy. The little things that instantly make my eyes sparkle, my memories ramble and my step take a lighter beat.

A wine my grandfather served me on my last Christmas home that I spot on a menu in a restaurant downtown. The sound of the foam bubbling away after a cold beer is poured too fast in a glass. The crack of a spoon hitting the burnt sugar crust of a freshly made creme brulee.

Opening a book at the very first pages, heart and mind ready to dive in, wrapped around with words, images, and possibilities. Lifting one’s head after a day at work and be greeted by the most beautiful sunset.

Smelts


Little pleasures. Finding them in all things around us. Sometimes, it can be as simple as seeing a familiar food from childhood. Like smelts. I know, weird… I think the guy behind the fish counter at the market thought I was mildly eccentric when my eyes grew wide open at the sight of freshly caught smelt in his display.

The mere sight if these tiny little fish, bright of their silver and gold reflections, transported me back to my family’s chalet in the Southern Alps of France. Every school holiday was spent there, skiing in the winter, hiking and swimming in the summer. Lots and lots of fishing too.

It was a place meant for simple things. Like a dinner made of pan fried smelts and a big salad. Food did not define every waking moment of our time together. Being together around the table breaking bread and passing plates did. Cousins, uncles, aunts, brothers and sisters. Food was the excuse to be a family, to argue and make up.

I remember my mother dipping the smelts in lemon juice, then breadcrumbs flavored with freshly cut herbs from the garden, and quickly pan searing them in a little olive oil. A good sprinkle of salt and pepper and we were good to go. The more people at the table and the bigger the pile of fish. And the bigger the sighs coming from the kitchen as my mom kept on cooking and cooking the tiny little things.

Pan seared smelts are not most refined dinner items but to me there are the heroes of family moments I cherish everyday. Hence the little skip in my heart when I spotted them at the market. I was sure not to find them again for a long while so I got more than enough for two dinners. I loved seeing my mom’s eyes sparkle when I pulled a bag out of the freezer for us one evening.

I knew instantly where her mind had wandered. I recognized that little smile at the corner of her mouth. I could imagine the memories going through her head. I pulled out a skillet and started preparing dinner. She set the table and told me a few stories.

It was my turn to nurture her. Around something as simple as plate of tiny seared fish. The connection was solid and gave us room to add this moment to the memory bank. And our tastebuds…

Pan Fried Smelts



Pan Seared Smelts:

Serves 4

Ingredients:
2 pounds smelts (they usually come gutted and cleaned up but ask your fishmonger to do it for you if needed)
1 cup Panko style breadcrumbs (gluten free or not – your choice)
1 teaspoon of kosher salt
1/2 teaspoon freshly ground pepper
1/4 cup finely chopped thyme
juice of 2 lemons
4 tablespoons olive oil, divided

Directions:
Rinse the smelts under cold water, dry thoroughly with paper towels. Reserve.
Place the breadcrumbs, salt, pepper and thyme in a large shallow plate. Place the lemon juice in another shallow plate.
Heat up one tablespoon of olive oil in a large skillet over medium high heat.
Dip about 1/4 of the smelts in the lemon juice, then toss in the breadcrumbs. Place them in the skillet in one single layer and sear for about 3 minutes on each side.
Repeat with the remaining smelts, lemon juice, breadcrumbs and oil. Serve immediately with a simple side salad.

Lemon Parsley Shrimp & Vegetable Ribbon Salad

If you have been reading this blog for a while, you have noticed that I very seldom do product reviews or promotions. Part is because I am seldom solicited to do so. Part is because although I am asked every so often, I either don’t like the product I am offered or I don’t think it fits this blog. But there are the rare times when something piques my interest, and the people asking for my collaboration do not take my opinion, time and readers for granted.

Through my relationship with Martha Circle, the folks at Truvia hired me to develop and shoot a recipe for their New Year Healthy You campaign. I would probably have passed on the offer if it weren’t for my own current use of this stevia based sweetener and my desire to develop more and more recipes with it for a couple of family members who could benefit from it such as my mother who will be visiting soon.

Even if I eat healthy almost every day of the week, there are always those periods of time when a few extra pieces of chocolate add up, that one little extra sliver of cake passes my lips and that extra creamy bite of macaroni and cheese just calls my name. Sometimes, it’s simply too much work and general lack of organization and the first things to take a backseat are proper homecooked meals.

Just A Whiff


Food that is healthy and good for you does not have to be bland and boring. I have learned that along the years of cooking for family members with health issues as well as my own desire to keep my health optimum. Whether you need to pay attention to sugar, fats or carbohydrates in your cooking, there is always a moment when you feel something is a lacking or not working right yet. For me, it was sugar. Or the desire to reduce it without losing taste or texture in the dishes I’d cook.

Enters Truvia. A natural sweetener made from the stevia plant. Although I have used stevia based sweeteners for a while, I became a Truvia user in the last year or so when my mom and I decided to try it in her favorite cake recipe. Maple syrup, honey, molasses are usually our sweeteners of choice but draining on the budget (especially if you bake or cook often) and not as portable as little packets of Truvia when you travel.

We followed the direction on the box as far as dosing: 3/4 teaspoon of Truvia equals 2 teaspoons of sugar and not only did the cake texture turned out fine but there was also no strange aftertaste. This is a huge deal when a savory recipe calls for a pinch of sugar such as in marinades, sweet and sour dishes, etc…

Meyer Lemons


One of the dishes I like to make to get back into healthy habits after the holidays is a sweet and savory seafood salad with shrimp infused with a lemon, parsley and garlic marinade and served on top of zucchini, squash and carrots cut very thinly into ribbons. The marinade needs that little bit of sweetness to break down the acidity of the lemon marinade and Truvia works perfectly there (I use raw honey usually). A pinch and you are set. It dissolves quickly without over powering the rest of the ingredients.

I love making this dish with all sorts of different seafood (mussels, clams, scallops) and different vegetables. Same goes for the herbs. I always have parsley on hand but cilantro, tarragon, thyme and even rosemary work great here. Keep it light, easy, super fresh and full of flavor. Something that makes you feel good when you prepare it and light and healthy when you sit down to eat it.

Lemon Parsley Shrimp With Ribbon Vegetable Salad

Serves 4 as a light lunch or 2 as dinner

1 pound medium shrimp
3 tablespoon olive oil
zest and juice of one medium lemon (about ¼ cup juice)
¾ teaspoon Truvia
1 garlic clove, minced
¼ cup flat leaves parsley, finely chopped
¼ teaspoon kosher salt
1/8 teaspoon freshly ground pepper
1 large zucchini
1 large yellow squash
2 carrots (peeled)

Shell and devein the shrimp, rinse under cold water and place them in a non-reactive bowl. Refrigerate while you make the marinade.
In a small bowl, whisk together the olive oil, zest and lemon juice, Truvia, garlic clove, chopped parsley, salt and pepper until well combined. Set aside 2 tablespoons and pour the rest over the shrimp and toss them to make sure they are well coated in the marinade. Refrigerate 30 minutes.

In the meantime, make the ribbon vegetable salad:
In a non-reactive bowl, peel the zucchini, yellow squash and carrots lengthwise with a vegetable peeler to obtain long ribbons. Stop before you reach the core. Discard the core or keep to make vegetable stock later.
Toss with the reserved marinade. Refrigerate until ready to serve.
Heat a non-stick pan over medium heat and sear the shrimp for about 2-3 minutes on each side. Discard the marinade used for the shrimp. Remove the shrimp from the pan and let them cool off on a plate.
Plate the vegetable ribbon salad on a large platter and top with the shrimp and serve.

I hope that everyone had a great holiday break and celebrated the New Year as they wished. Quietly or with lots of fireworks and revelers. I don’t know about you but even if I don’t make resolutions I truly enjoy this feeling of starting clean that comes with January. Twelve new months, yours for the taking. Yours to create, get inspired, start, accomplish…There is something exhilarating about the new year.

Personally, it gives me an even greater wish to leap, with all my fears at times, or without any at others. It also fills me with the desire to reset the clocks, just like we do with a new calendar. Internal clocks, personal clocks, work clocks. Setting priorities and goals. Making inspiration and mood boards.

Beach


It’s been good to dive back into creating recipes, writing the stories around them and thinking about their photographs. There are lots of fun blog projects in the planning. In the middle if all these "happy new year moments", my family suffered another great loss yesterday. Once again, without my family being close enough to hug and comfort, I turned to the only things I knew to do at the time. Clearing my head, getting inspired and cooking.

Beach


Anchoring feeling of loss to the present, to tangible things I could do and explain, I took my camera and headed to the beach. I observed quietly. My fingers got numb gripping my camera straps so hard. But the colors, the quiet empty beach before me…blues, grays, reds… They put my mind at ease. The waves crashing at my feet truly reminded me that life is "it". It’s full if we make it so. It’s not perfect because we make it so. There is life inspired in everything.

On my way home, I stopped at the fish stands at the end of island and got a bag of fresh mussels. My comfort food. It was close to lunch time. Convenient to start cooking. Like most of us, beside being a necessary act of survival, food is also part of our story. My food stories involve every member of my family. They include many friends. They are full of laughters, jokes, pranks, animated discussion, etc… They are full of life.

Fangipane Cake


Deeply aware that every part of me was now bursting with energy and inspiration, I cooked and photographed. I found my rhythm in the things I knew to be my constant. After a much needed break over the holidays it felt good to be back in it. Normalcy coming back little by little.

Key Limes


Steamed mussels are pretty much my go-to super fast dinner or lunch. They really take very little time and are super flavorful when cooked with some white wine, garlic and parsley and finished off with a spritz of lime juice for example. Ok, they are a bit messy but that little imperfection is part of their charm. Just like the beaten up Key limes I got at the store (in the reject box where overdue fruits are sold for pennies to the pound). I am founding imperfection really soothing lately.

Frangipane Cake


The cake was an experiment that did not turn out the way I hoped for but which did not take away any of the wonderful taste or aroma. I had made a small galette des Rois over the weekend and had a half quantity of frangipane left. I layered it with the cake batter and swirled it, hoping it would create a nice design when cut through. I apparently did not swirl hard enough. Imperfect result. Perfect taste. Paired with a cold glass of milk and I suddenly felt my entire body relax.

As cliche as it may sound, food truly has magical powers. Well…cake does…!

I truly wish you the happiest of New Years. Live fully. Play hard. Leap and take chances. Tiny or big. Do what makes you truly happy.

Fangipane Cake



Steamed Mussels:
1 pound fresh mussels
1 cup of white wine
1/3 cup seafood stock (or water)
2 cloves of garlic, minced
2 tablespoons chopped fresh parsley
lime or lemon juice (I used a Key lime)

Clean the mussels by scrubbing them under cold water and remove the little fuzzy "beard" that hangs on some of them.
Place a large skillet over medium heat and add the white wine, stock and garlic. Bring to a strong simmer, add the mussels all at once. Cover the pan with a lid (or if you are like me, lid-less, another skillet of the same dimension). Let the mussels cook 6 to 8 minutes. Thrown in the parsley, toss with the mussels. Discard any that did not open and serve immediately with some of the an juices and a spritz of lime or lemon.

Buttermilk & Frangipane Cake:

Makes two 8-inch loaves

Ingredients:
1/2 cup (125ml) buttermilk
1/2 cup (125ml) sour cream
1/2 cup (100gr) sugar
2 eggs
1/2 cup (125ml) olive oil
zest and juice of one lemon
2 cups (280gr) Jeanne’s gluten free all purpose flour mix (or 2 cups regular flour)
2 teaspoons baking powder
1 portion frangipane filling (recipe follows)

Directions:
Preheat the oven to 350F. Position a tray in the middle. Grease two loaf pan and line the bottom with parchment paper. Place the pans on a baking sheet. Set aside.
In a large mixing bowl, whisk together the buttermilk, sour cream, sugar and eggs until pale (takes about 2 minutes). Add the oil and lemon juice and zest and mix until well blended. Add the flour mix and baking powder and whisk about 50 strokes until the batter is smooth. Divide half the batter in between the two pans. Top each pan with the frangipane filling over that first layer. Divide the remainder of the cake batter in between the two pans to cover the frangipane.
Bake for about 40-45 minutes (on convection) to a hour (regular) until a knife inserted in the middle comes free of raw batter.

Frangipane:

Ingredients:
1/2 stick (55 gr) butter, softened
1/4 cup (25gr) sugar
1/2 cup (50 gr) ground almonds (blanched, slivered, whole, your call)
1 egg
2 tablespoons (30gr) heavy cream

Directions:
Place the butter, sugar, ground almonds, and the eggs in a large bowl and whisk until smooth (can also be done in a food processor). Add the cream but stir in it instead of whisking not to emulsify it or it will rise while baking.

Mixed Nuts Tartelettes


This close to the American holiday of Thanksgiving, I figured it was high time I shared some of the eats that we will have with friends this coming Thursday. It’s not all that we are preparing but when trying these recipes out for the big day, they really stood out. Tomato And Roasted Garlic Tartines as little bites with cocktails. Winter Greens and Squash Gratin as one of the sides and Mixed Nuts Tartelettes instead of the traditional pecan pie.

These recipes were the kind that made B. proclaim "please-please-please-put-these-on-the-Thanksgiving-menu-or-I-will-pout-and-throw-a-temper-tantrum". No, he didn’t really say that. He gestured it while eating another spoonful. So, while planning the menu with my friend Laura, I penciled these down along with tried and true favorites and this Cider Brined Turkey from Bon Appetit. It’s mildly concerning how excited I am about this one!

That also has me wildly excited about the day. It’s not about buying into the hype. It’s not about food. It’s about making a meal for people you love. It’s about sharing. Making dishes that honor traditions as well as making new ones.

The fact that this meal is centered around Thanksgiving is just icing on the cake. Like many of you, I give thanks everyday for the good fortune I receive and the lessons I learn, bitter or sweet. I think it’s nice however to have another chance to give thanks it out loud. To others. To yourself. There are never too many opportunities for gratefulness and wishing good upon others.

A while back, we decided to do have Thanksgiving with friends and Christmas with family. It seemed a lot easier on our sanity given B’s family dynamic and the fact that we do have a close knit group of friends we absolutely love hanging with during the holidays. Of course we compare weird family stories! But most importantly, we can keep our shenanigans up and no one will get offended. We can let loose and do exactly what we want. No pressure. I am grateful for that…

Mixed Nuts Tartelettes



Tomatoes And Roasted Garlic Tartines:

Makes enough for 6 to 8 people as an appetizer/nibble

Ingredients:
2 cups cherry tomatoes (gold or red)
1 whole head of garlic
1 tablespoon olive oil
salt and pepper
baguette toasts (gluten free or regular slices of bread, toasted to your liking)
oregano or other herb of your liking

Directions:
Preheat the oven to 375F (convection) or 400F (normal). Position a rack in the middle.
Place the cherry tomatoes in a baking pan and drizzle about half a tablespoon of oil over them. Season with a pinch of salt and pepper and toss to coat. Set aside.
Cut the top of the head of garlic, place it in a piece of baking foil. Drizzle the remaining half tablespoon of oil. Close the piece of foil over the garlic head.
Place both the baking pan with the tomatoes and the foil with the garlic in the oven at the same time. Remove the tomatoes after 20 -25 minutes and the garlic after 30-40 minutes (it should be soft). Let cool.
Rub each piece of toast with some roasted garlic, add a couple of tomatoes on top and sprinkle with some more salt and pepper if desired. Add some oregano to taste.

Winter Greens and Squash Gratin, adapted from Virginia Willis’s Basic To Brilliant Y’all (see the original here)

Ingredients:
2 teaspoons unsalted butter, plus more for the gratin dish
1 butternut squash + 2-3 acorn squash, (about 3 pounds total), cut in half lengthwise and seeded
1 tablespoon olive oil
1 small onion
6 cloves garlic, minced
1 large bunch of Swiss chard, cleaned, stems removed and chopped
salt and freshly ground black pepper
1 /2 teaspoon freshly grated nutmeg
1 tablespoon freshly chopped thyme
1 cup milk
1/2 cup heavy cream
3 tablespoons regular or gluten free panko breadcrumbs
2/3 cup freshly grated Parmesan

Directions:
Preheat the oven to 375F (convection) or 400F (normal). Position a rack in the oven.
Place the squash, cut side up on a baking sheet and roast in the oven until soft and slightly golden brown. Let cool.
In the meantime, heat the oil in a large sauté pan over medium-high heat. Add the onion, garlic and cook for about 5 minutes. Add the chopped Swiss chard and cook until the greens are wilted, another 5 minutes or so. Season with salt and pepper to taste. Add the nutmeg and thyme and stir well. Remove from the heat and reserve.
Scoop the flash of the different squashes in a medium sized gratin dish. Sprinkle with a pinch of salt and pepper. Top with the reserved greens.
Pour the milk and cream over the vegetables and cover with aluminum foil. Bake for 25 minutes.
Meanwhile, stir together the breadcrumbs and cheese in a small bowl. Season with some salt and pepper. Decrease the oven temperature to 350F (convection) or 375F. Remove the foil from the dish and sprinkle the breadcrumbs over the top. Continue baking for another 15 minutes.

Mixed Nut Tartelettes:

Makes eight 4-inch tartelettes

Ingredients:
For the crust:
1 cup Jeanne’s all purpose gluten free mix
1/4 cup cocoa powder
1 stick (115g) unsalted butter, kept very cold
pinch of salt
2-3 tablespoons ice cold water

For the filling:
1/2 cup unsalted pistachios
1/2 cup hazelnuts
1/4 cup waluts
4 tablespoons unsalted butter
1 cup raw honey
1 teaspoon kosher salt
1 teaspoon vanilla extract
3 large eggs

Directions:
Prepare the pastry. In the bowl of a food processor, (or follow the same instructions if doing by hand), pulse together the flour and the cocoa powder until incorporated. Add the butter and pulse until the butter resembles small peas and is evenly incorporated. Add the salt and pulse on more time. Gradually, stream in the cold water until the flour just comes together. Turn the mixture out onto your work surface and form into a 2-inch thick, round disk. Wrap with plastic wrap and refrigerate at least 30 minutes (or overnight) before rolling out.

Flour your working surface with tapioca flour (if gluten free) or regular flour and start rolling out the dough to about 1/4-inch thick adding more flour as you feel the dough starts to stick. You can also roll it out in between two sheets of plastic wrap of parchment paper, especially with working with the gluten free version. Cut eight 5-inch rounds of dough and place them inside eight 3 to 4-inch tartlet pans. Place a small piece of parchment paper inside each of them, fill with dried beans and refrigerate for another 30 minutes.

Preheat the oven to 350F (both convection and not) and position a rack in the middle.
Place the tart shells on a baking sheet and bake the tartlets for about 15 minutes (with the dried beans inside). Remove from the oven, let cool for 5 to 10 minutes and remove the beans and parchment paper.

In the meantime, prepare the filling:
Place all the nuts on a baking sheet and toast until golden for about 10-12 minutes.
Remove from the oven and let cool. Remove the skin from the hazelnuts (see my tip at the end of the recipe). Coarsely chop all the nuts. Reserve.
Melt the butter in a small saucepan over medium-high heat until brown bits form on bottom of pan, about 5 to 8 minutes. Remove from heat and let cool.
Stir together the honey, salt, and vanilla in a medium bowl. Whisk in the eggs, then the brown butter. Fold in the nuts with a spatula or wooden spoon. Divide the filling among the tartlet shells. Bake tartelettes until filling is set around edges and jiggles slightly in the middle, about 30 minutes. Cover with foil over tart if the crust gets too dark. Remove from the oven and let cool.

Tip to skin the hazelnuts:
Place the nuts in a mesh bag like the one you purchase citrus in (lemons, grapefruit) or onion. Over the sink, rub the nuts together in the bag until all the skins have fallen through the holes in the mesh bag. Easy peasy…

I have a tendency to always be cold. At least chilly. I like sweaters. I like scarves. Gloves. Hats. I like cold weather. I live in South Carolina where cold weather is…well…not that cold. It comes and goes. Three days of cold, two days of warm. Christmas in shorts. Valentine’s Day by the fireplace. I think I’ve finally gotten used to it. Almost…

We were pretty happy when the temperatures dropped a few degrees this past week. Even without the magnificent Fall colors of up North, there is a certain anticipation of a seasonal change around here. The dogs were waiting for that delicious moment when they’d be able to just lie on the back deck and enjoy a little reprieve. That wonderful crispy Fall weather. No humidity. No mosquitoes.

Lady Apples


As soon as Fall rolls around, my mind turns to comfort foods. Well, foods that are comforting to me. We all have distinct food associations, flavors, scents that resonate "comfort". Mine are without a doubt apple cake, apricot and frangipane anything, soups of many kinds, roasted vegetables, winter gourds. Right now, I can’t stop baking with Lady apples (so tiny!) and squash of all kinds.

Soups and cakes are a staple at our house. All year long. Undeniably influenced by seasonal produce but staples nonetheless. A local tomato soup in the summer is replaced by roasted squash one in the Fall. Winter welcomes piping hot bowls of French onion soup.

Lady Apple Cardamom Cake


Along with cakes, Bill has a love affair with coconut soup. I must admit, I do too. After many Thai inspired versions that we have done over the years, I wanted to change it up a bit this time. Red kuri squash and local shrimp cooked until fork tender in a lemongrass, ginger and lime coconut base. We went back for seconds. We wished we had enough for thirds. Incredibly satisfying.

Cakes are quiet and discreet in our kitchen in the Spring and Summer. The above 100F temperatures are not conducive to a lot of baking but as soon as I can turn the oven on without feeling we’re operating a furnace, I turn to one of our family favorite, apple cake. It’s nothing fancy. It’s actually pretty darn rustic if you ask me. One of the may reasons I love it. It also reminds me of my grandmother. A woman I miss everyday.

She wasn’t always easy. Often stubborn. But when she loved, she loved 100%. She loved being surrounded with friends and family. My Sunday Supper tradition is a direct extension of her. Tea time was 4 o’clock around a plate of cookies and a slice of cake. Came one. Came six. It did not matter. The door was always open. Sunday lunches with a full table after church often lingered into impromptu dinners around an omelette, a bowl of soup and a piece of cake.

Grandma, Mamie Paulette even smelled of apples. And vanilla.

Everytime I make her apple compote with a touch of sugar, lemon and vanilla bean, I can feel her around me. I wish we had had a few more years together so she could have come here and see us. Happy. That’s all she wanted. To have everyone happy. Making an apple cake puts me at peace. It’s comforting to have that little bit of her whenever I want. I am grateful she was not shy of passing her recipe on to me so I can pass it on to you.

I can’t wait to meet the people I will have the chance to guide and help for three full days and I am also giddy to meet up with friends I rarely see because of geography and life in general. I’ll try to post snapshots…

Coconut Soup With Red Kuri Squash & Shrimp



Coconut Soup With Red Kuri Squash and Shrimp:

Makes enough for 4

Ingredients:
2 teaspoons sesame oil
1 small onion, diced
2 stalks of lemongrass
1 tablespoon freshly grated ginger
2 garlic cloves, minced
2 cups red kuri squash, peeled and diced (seeds removed)
4 cups seafood stock (or veggie or water)
1 can coconut milk (14 oz)
juice and zest of one lime
2 sprigs of thyme
1 pound medium shrimp (peeled and deveined)
cilantro to serve

Directions:
In a large stock pot, heat the sesame oil over medium heat, add the onion and cook, stirring occasionally until translucent, about 2-3 minutes. In the meantime, cut the stalks of lemongrass in half and pound them with the back of your knife a couple of times. The goal is to release the lemongrass essence to flavor the broth. Add those to the onion, along with the ginger and garlic and cook another 2 minutes or so. Add the Kuri squash and cook another 2 minutes. Add the stock, coconut milk, lime juice and zest, and the thyme. Bring to a boil, reduce the heat to simmer and cook covered for about 15 minutes. When the squash is fork tender but not mushy, turn the heat back up to medium high. Add the shrimp and cook until they are just cooked through (5 to 8 minutes depending on size) (over and they will feel like rubber). Remove from the heat, remove the thyme and lemongrass stalks and let cool about 5 minutes before plating. Serve with cilantro if desired.

Apple Cardamom Cake:

Makes one 9-inch cake

Ingredients:
10 Lady apples (or 2 to 3 regular sized apples)
1 cup yogurt
1/2 cup sugar
2 eggs
1/2 cup olive oil
zest and juice of one lemon
2 cups Jeanne’s gluten free all purpose flour mix (or regular flour)
2 teaspoons baking powder
1/2 teaspoon ground cardamom
1/4 teaspoon ground cinnamon

Directions:
Preheat the oven to 350F. Position a tray in the middle. Grease one 9-inch baking pan and line the bottom with parchment paper. Place the pan on a baking sheet. Set aside.
Peel, core and slice the apples very thin (a mandoline works great) and place them in a large bowl filled with water and lemon juice to prevent oxidation.
In a large mixing bowl, whisk together the yogurt, sugar and eggs until pale (takes about 2 minutes). Add the oil and lemon juice and mix until well blended. Add the flour mix, baking powder, cardamom and cinnamon and whisk about 50 strokes until the batter is smooth.
Pour it into the prepared baking pan and position the apple slices (drained slightly) on top.
Bake for about 30-40 minutes until a knife inserted in the middle comes free of raw batter.

If I had to pick my two most favorite months of the year in Charleston it would be October and February. The humidity finally drops some in October, giving us the ability to enjoy being out without suffocating. I sneak in any moment I can feeling the tall grass under my feet. I also spend more time than usual at the dock watching the porpoises huddle and play now that less boats are out now that summer is over.

February is just magical here. The light is crisp and electric. The cold finally reaches us for a few days and we gather friends around the fireplace. I love the cold nippy winds that we get for a few days. A barely there couple of weeks of wintry weather.

Lately, while the temperatures are still hot enough to have us in short sleeves and flip flops, the numerous rain showers and stronger winds put me in a definite Fall-ish mood. One that calls for hot soups and warm apple crisps.

This Acorn Squash and Sweet Potato Soup is one of those I want to have on repeat this Fall and Winter. It’s been decided by both Bill and myself after the first couple of spoons. Not only was it tasty, it was also the kind that does not need much else but a nice piece of country bread smeared with a dab of butter and sprinkle of grey salt.

Aside from the addition of acorn squash, the base of sweet potato soup is directly from Virginia Willis' latest cookbook "Basic to Brilliant Y’all – 150 Refined Southern Recipes and Ways to Dress Them Up for Company". A book she came to share in Charleston last week and which release was celebrated (among other events) in a Sunday Dinner style dinner at Heirloom Book Company. The setting was perfect, a cookbook store with wall to wall vintage and current editions.

The table setting was fun and the company engaging. In our proper form, Bill and I made fast friends with the couple next to us, visiting Charleston on their anniversary. They had just stepped into the bookstore a few hours prior to the event, completely on a whim and purchased a couple of tickets for that dinner. They did not know the book or Virginia but they "got" the spontaneity that defines Charleston.

Why celebrating Virginia in person in Charleston? Because the book was photographed here. In my studio to be exact and also on our dock where we had Virginia hold a very fiesty crab at sunset. The crew gathered in my home for 10 days and we got to work on some pretty delicious recipes. Curried Chicken Wings with Peach Dipping Sauce. Endive and Roquefort Slaw. Louisiana Duck Gumbo. Meringue Pillows with Strawberries and Cream.

Sunday’s dinner showcased some of my favorites such as the Roasted Tomato Soup and the Chocolate Monkey Bread and new ones like the Garlic and Sausage Stuffed Pork Loin. Most importantly, it gave me a chance to congratulate Virginia on her hard work and dedication to develop and write recipes so that people like me, get the chance to convey emotions and visions one level deeper.

I have been blessed to work with pretty special cookbook authors and their publishers these last few years and each time. This project where a whole team came together, fierce with dedication and love and pride of their work, made me grow as an artist and as a person. I walked away with a greater love of my profession as photographer. A greater dedication also. And let’s face it, hundreds of new favorite recipes…!

Virginia’s recipes are no different. They completely speak to me. Virginia has the perfect ability to balance her formal French training as a chef with her Southern roots. A little irreverence against ennui thrown in for good measure and you have the perfect blend: a cookbook compiling easy and intermediate recipes, interesting and fun and with a Brilliant twist that is worth exploring each time.

Take her Sweet Potato Soup for example. The basic recipe is pretty darn tasty as it is if you ask me. A blend of sweet potatoes, Vidalia onions, thyme and curry. The "brilliant" possibility? A dollop of rum spiked whipped cream. Yep. And that my friends, is indeed brilliant. It absolutely makes you smile… I did vary mine a bit by adding acorn squash and sprinkling a bit of thyme and cracked black pepper on ours too. Recipes are canvas for you to enjoy your time in the kitchen and Virginia’s are perfect for that.

When I was growing up, each meal would start with a bowl of soup. Nothing fancy. My mom would make the tastiest soups from the simplest vegetable combinations. Zucchini, onion, pumpkin, carrots, turnips. The quantity for each varied every single time which made the soup slightly different every time also. She learned that from her mother. She passed it on to me.

I carried that tradition a little further by making soups that my grandmother would surely dubbed as "fancy" if she were still alive. I never grew up with single ingredient soups beside Soupe a l’Oignon. Always a mix. Even our family trademark, Soupe Au Pistou is a medley of Provencal fragrances.

Nowadays, I am usually drawn to soups where one ingredients really shines. Mushroom soup, roasted tomato soup, pumpkin soup, smoked corn soup, this crazy good lima bean bisque from my pal Tami. The multi ingredient ones I now stir are some we never made when I was a kid, such as Pho, Tom Yum, Avgolemono.

And this fragrant and silky Acorn Squash & Sweet Potato Soup. I could not let go of my DNA apparently and had to throw in another ingredient! Acutally, I picked up gorgeous mini acorn squash at the farmers market as well as a myriad of other vegetable and I have to cook the majority before my upcoming trips to Kansas City and Seattle this week.

This soup is good company. A warm bowl of soul and a whole lot of comfort.

Acorn Squash & Sweet Potato Soup



Acorn Squash & Sweet Potato Soup, adapted from Virginia Willis' Sweet Potato Soup in "Basic To Brilliant Ya’ll"

Serves 6 to 8

Ingredients:
2 mini acorn squash, peeled and cubes (about 3 cups)1 tablespoon olive oil
1 teaspoon + 1 tablespoon olive oil, divided
1 sweet onion, coarsely chopped
1 teaspoon curry powder
3 medium sweet potatoes, peeled and cubed
9 cups vegetable or chicken stock
1/4 cup maple syrup
3 sprigs of fresh thyme
1/8 teaspoon freshly grated nutmeg
coarse salt and freshly ground pepper

Directions:
Preheat the oven to 375F.
Cut the acorn squash in halves. Place them in a baking dish, drizzle with one teaspoon olive oil and roast for about 20-30 minutes. Let cool. Peel the skin off and reserve the flesh.
Heat the remaining tablespoon oil in a large heavy soup pot set over medium high heat. Add the onion and curry powder and cook until the onion is almost translucent, about 4 minutes. Add the sweet potatoes, stock, maple syrup, thyme and nutmeg and the flesh from the acorn squash.
Bring the soup to a boil, reduce the heat and simmer, uncovered, until the potatoes are tender, about 30 minutes. Remove the thyme sprigs. Let the soup cool a little.
Puree the soup until smooth with an immersion blender or a blender/food processor.
Reheat the soup before serving and adjust the seasoning with salt and pepper if necessary.

To garnish:
1 cup heavy cream
2 tablespoons dark rum
1/4 teaspoon lemon zest
1/2 teaspoon freshly chopped thyme
freshly ground pepper

In the bowl of an electric mixer fitted with the whisk attachment, whip the heavy cream to soft peaks. Add the rum and lemon zest and continue whipping until firm. Use a dollop on top of the soup and sprinkle with fresh thyme and chopped thyme.
