I hope you all had a fantastic holiday weekend. We kept it low key having dinner with a good friend on Christmas Eve and with family on Sunday. Yesterday was spent with friends again over a light lunch and a relaxing afternoon.

Thank you everyone for the sweet and kind words of condolences about my grandfather’s passing. It made this weekend a little easier to navigate. Oh there were tears, trust me…but they were immediately followed with a feeling of peace. My heart was full of all the goodness one can give and receive in a lifetime. Pear Gratin


Every year at Christmas, smoked salmon has to be part of the appetizer offerings at my parents'. It’s tradition. Salmon, blinis and foie gras with brioche toasts. Since we started last week without any firm plans for Christmas Eve, I was making my own plans to prepare a nice dinner for two and relax on the back deck watching all the docks decorated with Christmas lights. A sight to be seen…for sure.

On the menu was a Salmon Bisque, followed by crab cakes and finished off with a Pistachio and Pear Gratin. As the soup was simmering, my inbox started buzzing and within minutes our plans had changed for the 24th. Not a problem. From the scents wafting through the kitchen, we would not be disappointed to have it for lunch the next day. The soup was a cinch to put together, light and tasty. Everything one can ask for during busy times and especially in between a few copious meals.

Red Currants


The gratin was a unexpected hit with Bill and one I will repeat soon and with other fruits too. I had a surplus of tiny cute Forelle pears from a couple of projects and was trying to find other ways than tarts and tartlets to use them. Nothing wrong with those…trust me. I am the first one to slow down for a slice of pear tart!

This dessert is the perfect results of many kitchen happenings all coming together at once. Too many pears, red currants finally being available now that the temperatures had dropped, a pound cake made on a whim one night I could not find sleep and there you have it. A light, fragrant, cozy and comforting vanilla custard blanketing thin slices of cake with tart little pops of red currants every other bites.

From the look of immense delight at the dinner table the other day, I can safely say these two recipes were a huge hit. Making another batch of soup today!

Pear Gratin



Salmon Bisque, adapted from Saveurs France:
Serves 4 to 6

Notes: do not worry about how fine a dice, cube or chop, the ingredients are since they are all going to be pureed. Croutons are somewhat of a tradition in my family with soups and I simply toss some cubed day-old bread with a little bit of olive oil, salt and pepper and toast that over the stove. Crème fraiche is a perfect topping for the soup but sour cream is a fine substitute.
Salmon can be expensive, so I usually ask my fish guy at the store to give me the good scraps they cut off when filleting whole fish. They are most happy to find a taker and usually give me half price on those.

Ingredients:
1 tablespoon olive oil
2 leeks, white parts only, well cleaned and sliced
2 garlic cloves, minced
2 carrots, sliced
2 small red potatoes, peeled and diced
½ cup dry white wine
3 cups vegetable stock
1 pound skinless salmon fillets, cubed
salt and pepper to taste
croutons, crème fraiche and chives to garnish

Directions:
In a large stock pot, heat the oil over medium. Add the leeks, garlic, carrots and potatoes and sautee for about 10 minutes, stirring occasionally. Add the white wine, stock and salmon. Season with a little salt and pepper. Bring to a boil then immediately reduce the heat to a simmer and cook for about 30 to 40 minutes. Remove from the heat, let cool and puree until smooth (see notes). Check the seasoning and serve. Top each bowl with some croutons, crème fraiche and chives if desired.
Earlier this year, the nice folks at Blendtec gifted me with one of their mixers and this is what I now use all the time to puree and blend soups. Takes less than a minute for super smooth bisques and soups. A immersion blender or any good capacity and sharp bladed food processor will also do great here.

Pistachio and Pear Gratins, adapted from Saveurs France.

Serves 6

Notes: I love my friend Jeanne’s recipe for pound cake. I had the pleasure this summer to work with my friend Clare on Jeanne’s gluten free baking cookbook and had to make about 75% of the recipes for photography. I got to tell you, Jeanne is about the only person I now trust for gluten free baking anything. Everything is always tasty, correct and of great texture. The recipe she came up with years ago for her gluten free all purpose flour blend is super easy and substitute cup for cup with regular all purpose flour so feel free to go gluten free or not without fear.
Once the pound cake is made and cooled (feel free to prepare it a day in advance), the assembly comes together in no time.

Ingredients:
6 small Forelle pears (or 2-3 medium pears)
12 thin slices of Jeanne’s pound cake (minus the glaze)
1 cup whole milk
1 teaspoon vanilla extract
3 eggs
½ cup sugar
½ cup red currants or other berries
2 tablespoons finely ground pistachios

Directions:
Butter a 9×13 gratin dish or individual ones and preheat the oven to 350F. Position a rack in the center.
Peel, core and thinly slice the pears. Set aside (don’t worry about oxidization too much since the dessert assembly is fast but you can always sprinkle them with a bit of lemon juice if you wish).
Cut the pound cake slices in triangles. Set aside.
In a large bowl, whisk together the milk, vanilla, eggs and sugar until smooth.
Layer the pear and pound cake slices in your gratin dish(es). Slowly pour the custard batter on top. Bake for about 30 minutes or until golden brown. Serve warm with some red currants and ground pistachios scattered over the top.

I was this close to posting a new recipe when I started getting a flurry of email about Christmas cookies (baking time, shelf life, etc…). It made me realize that if I did not start on my own Christmas baking soon, no one in the family would get their present.

For the past ten years, we have bagged the idea of buying presents for Bill’s family and we give each (friends too) a big box filled with homemade cookies, truffles, confections. I hope everyone celebrating Thanksgiving had a wonderful time doing so. We surely did. The whole week was actually pretty darn good. It was rich in connections and reflections. The time spent in the kitchen with Laura reminded me of the time spent at home preparing a holiday meal with my grandmother and mother. It was comforting and soothing in so many ways.

It was a lot of fun cooking a huge feast with another like minded person. It’s easy to talk food, pies, gratins, table settings, photography while chopping, boiling, cooking, peeling, etc… We made a lot of dishes. We wanted to try new recipes and still some beloved family ones. We certainly did not hold back but we had plenty to box up for our guests to take home. I have learned years ago that Thanksgiving leftovers are a must!

I will revisit a couple of the dishes for a later post but among the biggest hits were the Apple Cider Brined Turkey from Bon Appetit, Laura’s mashed potatoes with creme fraiche, a root & leek vegetable gratin and a fennel-brioche and sausage stuffing. And the greens beans! I must revisit those miso green beans soon and post the recipe!

Apple Cardamom Crisp


When everyone gathered around the table and shared some of their stories, time, themselves, my heart just fogged over. I was thankful for being surrounded by so much love and friendship. Many times I had to pinch myself that the day went as beautifully as it did. And continued the day after when Laura and her fiance Alex requested that I shot their engagement pictures. We had so much fun…well into the evening with dinner and drinks.

The weekend was spent quietly putting china and linens away, shopping at our farmers market and loading up on lots of seasonal fruits and vegetables. Taking some time to sit in the park with Bill and share a crepe and a cup of coffee. It finally started to feel like the holiday season (except for the 80F weather). Those simple things are all I crave for. They fuel me and refuel me times and times again. Just as certain foods do.

Pink Lady Apples


After a few richer meal than usual, I like the simplicity of a few good salads or soups. Without being a full blown detox, it’s nice to dig my fork into a lighter fare. Lately, it’s been lots and lots of variation around quinoa salad and this one is the one I have made countless time in the past couple of weeks. It’s versatile enough to be a side dish or main course (with a poached egg on top…fabulous!). Kale and butternut squash are abundant this time of year but any seasonal vegetable would work.

I generally pass on desserts in favor of a good juicy apple or pear this time of year. I do however have the habit of making dessert for our Sunday suppers with friends and crisps and simple tarts are always high on the list during Fall and Winter. Having a spoonful of a little sweet something always makes me feel like I am ending the weekend well and ready for the week ahead.

Apple Cardamom Crisp


The quinoa salad is one I intent to serve for lunch during the Food Photography Workshop I’ll be teaching in Charleston on December 10th. Yep, I enlisted Laura to assist and help prep some great foods for all the attendees. On a side note, there are 3 spots left for that workshop!

Quinoa, Kale and Butternut Squash Salad



Apple Cardamom Crisp:

Makes 6 to 8 (depending on your ramekins)

Ingredients:
For the fruit:
6 regular size apples (your choice) or about 12-15 lady apples
1 cup fresh cranberries
2 tablespoons honey
juice and zest of one lemon
1 tablespoon cornstarch
1 teaspoon cardamom

For the crisp:
1 cup Jeanne’s all purpose gluten free flour mix (or same quantity regular flour)
1/2 cup (100 gr) light packed brown sugar
1 stick (113 gr) butter, softened

Directions:
Preheat the oven to 350F (convection or regular) and position a rack in the center. Prepare the fruit:
Peel, core and slice thin the apples. Place them in a large bowl with the cranberries, honey, lemon zest and juice, cornstarch and cardamom. Toss well and reserve.
Prepare the crisp topping:
In a medium bowl, combine with your fingertips or a pastry blender the flour, sugar and butter and form large clumps of dough. Refrigerate at least an hour or freeze overnight.
Assemble and bake:
Divide the apples evenly among 6 gratin dishes or ramekins. If the crisp dough was refrigerated, just break apart clumps of it over the fruit with your fingertips. If it was frozen, you can simply grate it on top with a large cheese grater.
Bake for 20-30 minutes. Let cool.

Quinoa Salad:

Makes 4 to 6 servings as a main dish.

Ingredients:
1 1/2 cups quinoa
3 cups water
2 teaspoons olive oil, divided
1 onion, chopped
2 garlic cloves, minced
1 1/2 cups peeled, cored and diced butternut squash
1 1/2 cups roughly chopped kale (previously washed and cleaned)
2 teaspoons fresh thyme, chopped
vinaigrette (recipe here)

Directions:
In a large pot, bring the quinoa and water to a boil, reduce the heat and simmer, covered until all the water has been absorbed (about 20 minutes). Remove from the heat, fluff with a for and place in a large bowl to cool for 20 minutes.
In the meantime, heat one teaspoons olive oil in a large skillet, add the onion and cook until it turns translucid. Add the garlic, butternut squash and kale. Cover with a lid and cook for about 10 minutes on medium-low heat. Remove the lid, check that the butternut squash is tender but not mushy or hard when you poke a piece with a knife. Add the thyme and continue cooking until the all the liquid creating by the cover has evaporated.
Let cool to room temperature. Gently fold the cooked quinoa and the cooked vegetables together along with the vinaigrette.
Serve room temperature or cold.

This close to the American holiday of Thanksgiving, I figured it was high time I shared some of the eats that we will have with friends this coming Thursday. It’s not all that we are preparing but when trying these recipes out for the big day, they really stood out. Tomato And Roasted Garlic Tartines as little bites with cocktails. Winter Greens and Squash Gratin as one of the sides and Mixed Nuts Tartelettes instead of the traditional pecan pie.

Tomato & Roasted Garlic Tartines


These recipes were the kind that made B. proclaim "please-please-please-put-these-on-the-Thanksgiving-menu-or-I-will-pout-and-throw-a-temper-tantrum". No, he didn’t really say that. He gestured it while eating another spoonful. So, while planning the menu with my friend Laura, I penciled these down along with tried and true favorites and this Cider Brined Turkey from Bon Appetit. It’s mildly concerning how excited I am about this one!

Yes. I am cooking. Yes. I want to. Yes. I am completely thrilled about it. Nothing makes me happier than gathering good friends and family around a good meal, good wine and good conversation. That also has me wildly excited about the day. It’s not about buying into the hype. It’s not about food. It’s about making a meal for people you love. It’s about sharing. Making dishes that honor traditions as well as making new ones.

Roasted Garlic


The fact that this meal is centered around Thanksgiving is just icing on the cake. Like many of you, I give thanks everyday for the good fortune I receive and the lessons I learn, bitter or sweet. I think it’s nice however to have another chance to give thanks it out loud. To others. To yourself. There are never too many opportunities for gratefulness and wishing good upon others.

Tablescaping...


A while back, we decided to do have Thanksgiving with friends and Christmas with family. It seemed a lot easier on our sanity given B’s family dynamic and the fact that we do have a close knit group of friends we absolutely love hanging with during the holidays. Of course we compare weird family stories! But most importantly, we can keep our shenanigans up and no one will get offended. We can let loose and do exactly what we want. No pressure. I am grateful for that…

Winter Greens & Squash Gratin

Mixed Nuts Tartelettes



Tomatoes And Roasted Garlic Tartines:

Makes enough for 6 to 8 people as an appetizer/nibble

Ingredients:
2 cups cherry tomatoes (gold or red)
1 whole head of garlic
1 tablespoon olive oil
salt and pepper
baguette toasts (gluten free or regular slices of bread, toasted to your liking)
oregano or other herb of your liking

Directions:
Preheat the oven to 375F (convection) or 400F (normal). Position a rack in the middle.
Place the cherry tomatoes in a baking pan and drizzle about half a tablespoon of oil over them. Season with a pinch of salt and pepper and toss to coat. Set aside.
Cut the top of the head of garlic, place it in a piece of baking foil. Drizzle the remaining half tablespoon of oil. Close the piece of foil over the garlic head.
Place both the baking pan with the tomatoes and the foil with the garlic in the oven at the same time. Remove the tomatoes after 20 -25 minutes and the garlic after 30-40 minutes (it should be soft). Let cool.
Rub each piece of toast with some roasted garlic, add a couple of tomatoes on top and sprinkle with some more salt and pepper if desired. Add some oregano to taste.

Winter Greens and Squash Gratin, adapted from Virginia Willis’s Basic To Brilliant Y’all (see the original here)

Ingredients:
2 teaspoons unsalted butter, plus more for the gratin dish
1 butternut squash + 2-3 acorn squash, (about 3 pounds total), cut in half lengthwise and seeded
1 tablespoon olive oil
1 small onion
6 cloves garlic, minced
1 large bunch of Swiss chard, cleaned, stems removed and chopped
salt and freshly ground black pepper
1 /2 teaspoon freshly grated nutmeg
1 tablespoon freshly chopped thyme
1 cup milk
1/2 cup heavy cream
3 tablespoons regular or gluten free panko breadcrumbs
2/3 cup freshly grated Parmesan

Directions:
Preheat the oven to 375F (convection) or 400F (normal). Position a rack in the oven.
Place the squash, cut side up on a baking sheet and roast in the oven until soft and slightly golden brown. Let cool.
In the meantime, heat the oil in a large sauté pan over medium-high heat. Add the onion, garlic and cook for about 5 minutes. Add the chopped Swiss chard and cook until the greens are wilted, another 5 minutes or so. Season with salt and pepper to taste. Add the nutmeg and thyme and stir well. Remove from the heat and reserve.
Scoop the flash of the different squashes in a medium sized gratin dish. Sprinkle with a pinch of salt and pepper. Top with the reserved greens.
Pour the milk and cream over the vegetables and cover with aluminum foil. Bake for 25 minutes.
Meanwhile, stir together the breadcrumbs and cheese in a small bowl. Season with some salt and pepper. Decrease the oven temperature to 350F (convection) or 375F. Remove the foil from the dish and sprinkle the breadcrumbs over the top. Continue baking for another 15 minutes.

Mixed Nut Tartelettes:

Makes eight 4-inch tartelettes

Ingredients:
For the crust:
1 cup Jeanne’s all purpose gluten free mix
1/4 cup cocoa powder
1 stick (115g) unsalted butter, kept very cold
pinch of salt
2-3 tablespoons ice cold water

For the filling:
1/2 cup unsalted pistachios
1/2 cup hazelnuts
1/4 cup waluts
4 tablespoons unsalted butter
1 cup raw honey
1 teaspoon kosher salt
1 teaspoon vanilla extract
3 large eggs

Directions:
Prepare the pastry. In the bowl of a food processor, (or follow the same instructions if doing by hand), pulse together the flour and the cocoa powder until incorporated. Add the butter and pulse until the butter resembles small peas and is evenly incorporated. Add the salt and pulse on more time. Gradually, stream in the cold water until the flour just comes together. Turn the mixture out onto your work surface and form into a 2-inch thick, round disk. Wrap with plastic wrap and refrigerate at least 30 minutes (or overnight) before rolling out.

Flour your working surface with tapioca flour (if gluten free) or regular flour and start rolling out the dough to about 1/4-inch thick adding more flour as you feel the dough starts to stick. You can also roll it out in between two sheets of plastic wrap of parchment paper, especially with working with the gluten free version. Cut eight 5-inch rounds of dough and place them inside eight 3 to 4-inch tartlet pans. Place a small piece of parchment paper inside each of them, fill with dried beans and refrigerate for another 30 minutes.

Preheat the oven to 350F (both convection and not) and position a rack in the middle.
Place the tart shells on a baking sheet and bake the tartlets for about 15 minutes (with the dried beans inside). Remove from the oven, let cool for 5 to 10 minutes and remove the beans and parchment paper.

In the meantime, prepare the filling:
Place all the nuts on a baking sheet and toast until golden for about 10-12 minutes.
Remove from the oven and let cool. Remove the skin from the hazelnuts (see my tip at the end of the recipe). Coarsely chop all the nuts. Reserve.
Melt the butter in a small saucepan over medium-high heat until brown bits form on bottom of pan, about 5 to 8 minutes. Remove from heat and let cool.
Stir together the honey, salt, and vanilla in a medium bowl. Whisk in the eggs, then the brown butter. Fold in the nuts with a spatula or wooden spoon. Divide the filling among the tartlet shells. Bake tartelettes until filling is set around edges and jiggles slightly in the middle, about 30 minutes. Cover with foil over tart if the crust gets too dark. Remove from the oven and let cool.

Tip to skin the hazelnuts:
Place the nuts in a mesh bag like the one you purchase citrus in (lemons, grapefruit) or onion. Over the sink, rub the nuts together in the bag until all the skins have fallen through the holes in the mesh bag. Easy peasy…

Been away from home for the past ten days and although I have had a wonderful time getting work done, seeing friends and meeting new people, I am always very much itching to get back home to my family. Both workshops in Kansas City went very well and this past week spent in Seattle for a shoot was just dreamy.

There is nothing more rewarding than knowing that you helped someone get more comfortable telling a story around food with their camera, light or that you contributed to making pretty images for someone’s cookbook. Photography is always the sum of many things that are equally important to me. Practice, creativity, partnerships and opening one’s mind to the unknown. The possibilities. I love seeing people let loose of their fear they can’t this or that.

Cheese Board


Flying to Seattle was like a mini vacation. A grueling mini vacation of sixteen hour days but a time off nonetheless. One of the things that I love about Seattle is how comfortable it is to me. Great friends such as Clare and Jeanne do that. Those two have a knack for creating a homey environment everytime I come visit. Good food, great conversations and a serious amount of wine every night do keep me going for hours…

When traveling, even if I stay with friends, I make sure to eat good nutritious food as a send off and as a re-entry. Friends feed me. Restaurants too. I even bring food on location shoots. It’s me. I have a bad habit to go for a cup of strong coffee in the morning and pretty much nothing until 4pm rolls around. By then, my stomach sounds like a little green alien is forming battalion.

Champagne Grapes


I am a big fan of salads and soups as means to set my internal clock right. They are food for the bones, body and soul. Just with like a photo you create, a simple bowl of salad you assemble can take on a gorgeous palette and tell the story of what your body is craving. Even in a hurry. Colors, textures, flavor combinations. It’s very much like assembling a picture to me. I always think of what I do as I put meals together the same way I do when I compose a shot.

The act of seating down and re-visiting my dish, now complete is very much like seeing the picture as I edit it. Sometimes, there is a bit too much salt, too many colors, flavors or the vinaigrette is off. Sometimes I like the salad so much, I want to keep it my immediate memory bank. Sometimes, I cringe when a shot I thought would work ends up being not seasoned the right way, so to speak. Sometimes I know I’ll revisit that set up many months later in a slightly different way because it worked great the first time.

Autumn In Seattle


Thing is, I do that photography-story telling bit with almost every food. Salads or not. Good thing I do this for a living, eh?! It’d be easy to get in a rut unless you shop for seasonal ingredients. Again, same goes with every foods.

Right before I left, you could tell a real transition up in the air and at the market. It was a bit touch and go but the arugula was still doing well. Grapes of all sorts were having a good times. White and purple scuppernongs, Champagne, big fat juicy seedless reds. The fennels had fronds longer than my arms. It was all starting to shape up in my head.

The couple of days before I left for my trip West, I loaded up on a salad comprised of arugula, raw fennel, grapes, blue cheese, smoked Coho salmon, pecans from our tree and a white balsamic vinaigrette. Easy. Nutritious. Good for the soul too.

This week that Fall produce is slowly making an appearance, my salad making days might change. And I am looking forward to them.

Smoked Salmon, Fennel, Grape, Blue Cheese and Pecan Salad:

For 2:

In a large mixing bowl, mix the following ingredients:
– 4 oz smoked salmon (we like the thick slabs of Coho salmon)
– 1 fennel bulb, thinly sliced
– small handful of grapes, halved
– as much crumbled blue cheese as you would like or think reasonable (we do about one 2-inch piece per person)
– 1 to 2 tablespoons of chopped pecans (or other nuts)
– 1 to 2 big handfuls of arugula
– as much or as little vinaigrette as desired

Dressing:
1 teaspoon Dijon mustard
1 shallot, peeled and minced
1/2 teaspoon sea salt
1/8 teaspoon cracked pepper
2 tablespoons sherry vinegar
1/2 cup olive oil

In a small mixing bowl, whisk together the Dijon mustard and shallot. Add the salt and pepper then the sherry. Drizzle in the olive oil and whisk until emulsified. Drizzle on top of the salad.

If I had to pick my two most favorite months of the year in Charleston it would be October and February. The humidity finally drops some in October, giving us the ability to enjoy being out without suffocating. I sneak in any moment I can feeling the tall grass under my feet. I also spend more time than usual at the dock watching the porpoises huddle and play now that less boats are out now that summer is over.

February is just magical here. The light is crisp and electric. The cold finally reaches us for a few days and we gather friends around the fireplace. I love the cold nippy winds that we get for a few days. A barely there couple of weeks of wintry weather.

Lately, while the temperatures are still hot enough to have us in short sleeves and flip flops, the numerous rain showers and stronger winds put me in a definite Fall-ish mood. One that calls for hot soups and warm apple crisps.

This Acorn Squash and Sweet Potato Soup is one of those I want to have on repeat this Fall and Winter. It’s been decided by both Bill and myself after the first couple of spoons. Not only was it tasty, it was also the kind that does not need much else but a nice piece of country bread smeared with a dab of butter and sprinkle of grey salt.

Aside from the addition of acorn squash, the base of sweet potato soup is directly from Virginia Willis' latest cookbook "Basic to Brilliant Y’all – 150 Refined Southern Recipes and Ways to Dress Them Up for Company". A book she came to share in Charleston last week and which release was celebrated (among other events) in a Sunday Dinner style dinner at Heirloom Book Company. The setting was perfect, a cookbook store with wall to wall vintage and current editions.

The table setting was fun and the company engaging. In our proper form, Bill and I made fast friends with the couple next to us, visiting Charleston on their anniversary. They had just stepped into the bookstore a few hours prior to the event, completely on a whim and purchased a couple of tickets for that dinner. They did not know the book or Virginia but they "got" the spontaneity that defines Charleston.

Why celebrating Virginia in person in Charleston? Because the book was photographed here. In my studio to be exact and also on our dock where we had Virginia hold a very fiesty crab at sunset. The crew gathered in my home for 10 days and we got to work on some pretty delicious recipes. Curried Chicken Wings with Peach Dipping Sauce. Endive and Roquefort Slaw. Louisiana Duck Gumbo. Meringue Pillows with Strawberries and Cream.

Sunday’s dinner showcased some of my favorites such as the Roasted Tomato Soup and the Chocolate Monkey Bread and new ones like the Garlic and Sausage Stuffed Pork Loin. Most importantly, it gave me a chance to congratulate Virginia on her hard work and dedication to develop and write recipes so that people like me, get the chance to convey emotions and visions one level deeper.

This project where a whole team came together, fierce with dedication and love and pride of their work, made me grow as an artist and as a person. Virginia’s recipes are no different. They completely speak to me. Virginia has the perfect ability to balance her formal French training as a chef with her Southern roots. A little irreverence against ennui thrown in for good measure and you have the perfect blend: a cookbook compiling easy and intermediate recipes, interesting and fun and with a Brilliant twist that is worth exploring each time.

Take her Sweet Potato Soup for example. The basic recipe is pretty darn tasty as it is if you ask me. A blend of sweet potatoes, Vidalia onions, thyme and curry. The "brilliant" possibility? A dollop of rum spiked whipped cream. Yep. And that my friends, is indeed brilliant. It absolutely makes you smile… I did vary mine a bit by adding acorn squash and sprinkling a bit of thyme and cracked black pepper on ours too. Recipes are canvas for you to enjoy your time in the kitchen and Virginia’s are perfect for that.

When I was growing up, each meal would start with a bowl of soup. Nothing fancy. My mom would make the tastiest soups from the simplest vegetable combinations. Zucchini, onion, pumpkin, carrots, turnips. The quantity for each varied every single time which made the soup slightly different every time also. She learned that from her mother. She passed it on to me.

I carried that tradition a little further by making soups that my grandmother would surely dubbed as "fancy" if she were still alive. I never grew up with single ingredient soups beside Soupe a l’Oignon. Always a mix. Even our family trademark, Soupe Au Pistou is a medley of Provencal fragrances.

Nowadays, I am usually drawn to soups where one ingredients really shines. Mushroom soup, roasted tomato soup, pumpkin soup, smoked corn soup, this crazy good lima bean bisque from my pal Tami. The multi ingredient ones I now stir are some we never made when I was a kid, such as Pho, Tom Yum, Avgolemono.

And this fragrant and silky Acorn Squash & Sweet Potato Soup. I could not let go of my DNA apparently and had to throw in another ingredient! Acutally, I picked up gorgeous mini acorn squash at the farmers market as well as a myriad of other vegetable and I have to cook the majority before my upcoming trips to Kansas City and Seattle this week.

This soup is good company. A warm bowl of soul and a whole lot of comfort.

Acorn Squash & Sweet Potato Soup



Acorn Squash & Sweet Potato Soup, adapted from Virginia Willis' Sweet Potato Soup in "Basic To Brilliant Ya’ll"

Serves 6 to 8

Ingredients:
2 mini acorn squash, peeled and cubes (about 3 cups)1 tablespoon olive oil
1 teaspoon + 1 tablespoon olive oil, divided
1 sweet onion, coarsely chopped
1 teaspoon curry powder
3 medium sweet potatoes, peeled and cubed
9 cups vegetable or chicken stock
1/4 cup maple syrup
3 sprigs of fresh thyme
1/8 teaspoon freshly grated nutmeg
coarse salt and freshly ground pepper

Directions:
Preheat the oven to 375F.
Cut the acorn squash in halves. Place them in a baking dish, drizzle with one teaspoon olive oil and roast for about 20-30 minutes. Let cool. Peel the skin off and reserve the flesh.
Heat the remaining tablespoon oil in a large heavy soup pot set over medium high heat. Add the onion and curry powder and cook until the onion is almost translucent, about 4 minutes. Add the sweet potatoes, stock, maple syrup, thyme and nutmeg and the flesh from the acorn squash.
Bring the soup to a boil, reduce the heat and simmer, uncovered, until the potatoes are tender, about 30 minutes. Remove the thyme sprigs. Let the soup cool a little.
Puree the soup until smooth with an immersion blender or a blender/food processor.
Reheat the soup before serving and adjust the seasoning with salt and pepper if necessary.

To garnish:
1 cup heavy cream
2 tablespoons dark rum
1/4 teaspoon lemon zest
1/2 teaspoon freshly chopped thyme
freshly ground pepper

In the bowl of an electric mixer fitted with the whisk attachment, whip the heavy cream to soft peaks. Add the rum and lemon zest and continue whipping until firm. Use a dollop on top of the soup and sprinkle with fresh thyme and chopped thyme.

A couple weeks ago I boarded a plane heading toward Portland, Oregon. I had no idea of what was ahead of me. I had no expectations either. I have learned that beside the ones I put on myself or my work, expectations can ruin an adventure. They make you focus on one thing and make you miss the alternative, the little things, the beauty that lies wherein.

I had nothing on my mind than not to miss my flights because Portland, a city I had never visited awaited. And I was meeting up with Tami in Chicago to catch our connection. Both our schedules had been so incredibly intense that we had to put ourselves on a self imposed "time off – time out – see you later – don’t burn the house down and please feed the pets" to finally give each other a big hug and a good conversation.

We did not sign up for the trip just to hang out with each other but it was definitely one of the perks. Actually neither of us (and neither of the twenty or so other participants on that trip) knew the other was going for a while. It makes me smile that a group of strangers all received the same email one night, not knowing how much they would gain of the trip, discovering a new city, new kindred spirits and themselves in the process.

Yes, I had been asked on a sponsored trip. I am never asked on any of them or swanky organized parties and dinners and frankly, I am ambivalently happy about that because I’m still not sure how I’d feel if offers were frequent. I had never been to Portland. There was an opening in my schedule. Bill was busy every day and night with work and music. I said yes. So glad I did!

For three days, Travel Oregon made sure that we discovered the city of Portland, its food, its people, its landscape and many facets. From canoeing, foraging, fishing, to canning and charcuterie with people and artisans who cared about their craft, their land and wanted to invite us to come visit and leave with the desire to come back. Never were we asked to post, tweet, facebook or promote anything.

Portland, honey, I fell in love with you. You’ve got mountains like back home. You’ve got heat and snow. You’ve got magical hours and colorful places. You did not have to twist my arm, just to let me soak it in to hook me up.

This post will be part of a series of three, all accompanied with a recipe inspired by a dish I had there. There was some good eating and good drinking in Portland. Happy hour seem to start early and lasts all night. The running joke was "it’s been a full 5 minutes since my last cocktail/bite"Portland, you’re pretty special.

Tami and I flew in a day before to get our feet wet, catch up and catch our breaths before the trip would start with some friends we’ve known for years and some we were meeting for the first time. We had only one "must do" for that evening: Pok Pok and its famed Thai & Vietnamese dishes. For various reasons, I did not take any photos of the dinner. I was focused on conversing with Tami, our bartender was extremely distracting (think Toni Bourdain and Eric Rippert secretly engineered offspring), and I needed both hands to polish off the most succulent fish sauce chicken wings. The numerous cocktails created with the restaurants house made drinking vinegars, did not help with focus either.

Dinner was quite an adventure for my palate. Every bit of spicy was balanced by a hint of freshness. Every sweet met its salty. I must recreate one of the desserts we shared that night, the Pok Pok Affogato, when I have more time. Quite possibly the best of the last five years for me.

We rounded up the evening with cocktails at the hotel (Hotel Deluxe) lounge, The Driftwood Room. I am rarely impressed by the lounge within a hotel but this one quickly became a rendez-vous point for most of us on the trip. Crisp and refreshing cocktails with glamourous names and vintage appeal. The Springtime In Paris, the Ginger Rogers or the Rita Moreno kept us going and talking a little while longer each night.

The next day, the official start of the Travel Oregon weekend was not starting until late in the afternoon so Tami and I grabbed our cameras and walked about town. We stopped in the famous Powell’s bookstore and happily got lost in this mecca of new and vintage books. A short walk down to Porch Light, a lovely prop shop recommended by Lara and we met up with Paula from bell’alimento who had just arrived for the trip also.

Gruner restaurant and its shaded outdoor seating provided a lovely respite for three ladies with varied tastes and preferences. More lovely cocktails and beet pickled deviled eggs to start us off. Salad with smoked trout, apples, blackberry vinaigrette, toasted hazelnuts, a tarte flambee (Flammekueche), zucchini and ricotta dumplings with roasted tomatoes. All were passed around the table and enjoyed without restraint.

Dessert is what inspired today’s recipes. We clearly would have been happy to sample all of them but we only had room for a few more bites. And what glorious bites! The hazelnut-powdered sugar doughnuts with warm chocolate ganache were surprisingly light as a feather and melt in your mouth dangerous. The star of the meal was however the Honey Walnut Cake with Riesling Sabayon and Blackberries. A perfectly light cake with deep flavors of honey and walnut balanced by the soft and refreshing cream of the sabayon. This one was a sure winner for us three.

After more walking around town and a little get together to meet our trip companions for the next three days, we were whisked off in separate groups to different restaurants for dinner. Three of the activities on the trip were a choice between 4 or 5 options making it a truly tailored experience to our preferences or adventurous spirits. It also made it more manageable to handle small groups and to share our activities with our friends later on in the evening as we were recapping the day.

That evening Paula and I found ourselves seating across at the dinner table at Ping, created by the man behind Pok Pok. I know, two Asians restaurants in two days….Given the lack of seriously authentic ones here, I was a darn happy camper again.

The menu and cocktail pairing created for a small group was truly amazing. And abundant. Two dishes really stood out for me. The Quail Egg Skewers wrapped in local bacon and drizzled with a spicy mayo were an unusual bite of soft and crunchy, spicy, salty and neutral. The Vietnamese Style Short Ribs marinated in fish sauce, lemongrass, garlic and scallion oil were a perfect balance between balance of execution and presentation and depth of flavors. Strong, salty, refreshing and sweet.

The rest of the menu food was as rich and interesting as the setting and atmosphere of the restaurant with a theme of street food meets bistro carried out throughout the building.

The rest of the evening is a blur. My belly was full and grateful. My senses overwhelmed by this much "different" experienced in one day, one evening. Hard to believe that we all got up hungry and joking about it. Luckily for us, our next meal was just an adventure away…

Honey Walnut Cake & Riesling Sabayon

I did come in early and left late, staying and eating on my dime at the hotel and restaurants around. And it was all worth it…!

Honey Walnut Cake With Riesling Sabayon:

For the cake: Recipe from David Leite of Leite’s Culinaria
1 1/2 cups walnut pieces
1 cup all-purpose flour, plus more for the pan (or 1 cup gluten free flour mix here)
1 1/2 teaspoons baking powder
pinch salt
12 tablespoons unsalted butter, at room temperature, plus more for the pan
1/2 cup honey
1/4 cup sugar
3 large eggs
1 teaspoon grated orange zest
1/2 teaspoon vanilla extract

Directions:
Preheat the oven to 350°F (175°C). Butter and flour a 9-inch cake pan. Reserve.
Spread the walnuts on a sheet pan and toast in the preheated oven for 4-5 minutes. Allow to cool slightly.
Grind the nuts in a food processor with 1/2 cup of the flour until fine. In a medium bowl, stir together the ground nuts, remaining flour, baking powder, and salt.
In a stand mixer fitted with the paddle attachment or with an electric hand mixer, beat the butter with the honey and sugar until light and fluffy, about 3 minutes. Scrape down the sides of the bowl.
In a small bowl, beat the eggs with the orange zest and vanilla. Add it in three times to the butter mixture. Beat well to incorporate after each addition. Scrape down the sides of the bowl. Add the dry ingredients and mix until fully incorporated.
Spread the batter evenly in the prepared cake pan. Bake for 35 to 40 minutes, until a toothpick inserted into the center comes out clean.
Cool the cake in the pan for 5 minutes and then turn out onto a cake rack to cool. Serve with the sabayon.

For the Riesling sabayon:
1/2 cup Riesling wine
4 egg yolks
1/3 cup sugar

Directions:
Place a saucepan filled t 3/4 full with water over low heat. Bring water to a low simmer. Place Riesling, egg yolks and sugar in a stainless steel mixing bowl. Place mixing bowl over pan with water. Whisk vigorously until mixture thickens. Remove from the heat and let cool 10 minutes. Serve with the cake and fresh berries.

I’ve had the chance to travel to the West coast and back twice in the last couple of weeks and twice I had high hopes of experiencing some lower, nice Fall-ish temperatures. I was ready. Sweaters picked. Scarves tied up to my purse. Instead, it was tank top and summer dressed that ended up in my suitcase. It felt exactly like what October is here in the South. A soft stroke of the sun, a lull of breeze in the trees. A delicious moment.

Since we never really get a transition between seasons, it’s always a bit difficult to feel in an autumnal mood with food and recipes. I do, however, like to get in the kitchen and try to conjure up some wicked good Fall recipes whenever possible. It most often involves roasting, slow simmers, braising. Warmth and aromas filling the house with the comfort of nostalgia and the promise of another season ahead. Yes, it does make me mellow.

Artichokes


One of the dishes I made recently that really invoked Fall as I knew it back home was artichokes, braised with plenty of onions, lemon, olives, thyme and feta. I did not vary much, if at all, from the original recipe I found in a magazine my mom sent me. I usually ad lib the recipes I read but this one was too intriguing to pass up.

When it comes to artichokes, we usually fix them two ways: steamed ad served with vinaigrette to dip or barigoule (barigoule is the name of a certain kind of mushroom in Provence by the way). We had this with sauteed scallops one night which turned out to be a perfect match. Hearty and light. Not quite Summer anymore and not yet Fall either.

Baked Artichoke Hearts With Olives & Feta


I made the artichoke dish the evening before a trip to Portland last week and fully expected to have some leftover for B. to warm up while I was gone but we almost polished the entire thing with our dinner companions that evening.

Tonight, I prepared a Lavender and Buttermilk Tart for tomorrow’s dinner, right on the eve of my departure for New Hampshire. I am teaching two food photography and styling workshops at the bi-annual creative retreat Squam Art Workshops. I like for Bill to have a little something sweet while I am gone. In moderation right now because I’m pretty much here and gone for another couple of months for various work projects.

Lavender & Buttermilk Pie


The tart is from Holly Herrick's newly released "Tart Love: Sassy, Savory and Sweet" and for which I was honored to be commissioned to do the photography. I must tell you why I dig this book so much. Beside the fact that I am thrilled of the work that the designer and publisher did with the photos and lay out, I am completely enamored with all the recipes in this book. Holly is not only a prolific recipe writer but a darn good one to boot. Her flavor combination were at times intriguing but always spot on and a sure success. Trust her to know what flavors and tastes work together and in what quantity.

The woman is an amazing chef. Her pastry crust is flaky, rich, easy to make and easy to roll and re-roll without ending with rubber. The recipes are creative, fun and quirky at times: Feisty Shrimp & Grits Pockets, Salad Nicoise Tart, Raspberry Creme Brulee Tartlets, Butterscotch & Caramel Apple Tarts. I love her titles as much as I love that Holly’s personality and love of seasonal produce comes through each recipe.

I could talk about the tarts in this book for hours. I loved making all of them as much as I loved photographing them. Whether you are a novice or an advanced cook, you will find more than ten tarts you can start baking right from the start. Seriously. If you are nervous about making a tart crust, Holly takes you through each step with care and ease. If you wish you had more interesting or just some new/other tart fillings in your repertoire, this is also the book for you.

Trust me. I just received my "official" copy the other day and I have rediscovered, with great excitement, recipes I had cooked just a year ago. I am thrilled to give away two copies of Holly’s book, Tart Love. Fresh from the press, tested, tasted and approved by yours truly. And my husband and about everyone in the neighborhood when I was done taking the tarts mug shots, ahah!

Lavender & Buttermilk Pie



Braised Artichokes With Onion, Olives & Thyme, barely adapted from Saveurs (France)

Serves 6

Ingredients:
2 lemons
6 baby artichokes
1 1/2 tablespoons olive oil, divided
1 red onion, sliced
1/2 cup white wine or stock (vegetable or chicken)
1/2 cup Kalamata olives, pitted
1/2 cup feta cheese, crumbled
6 sprigs of thyme, chopped
1 teaspoon vinegar

Directions:
Turn the oven to broiler setting. Slice one of the lemons horizontally and spread the slices on a baking sheet line with parchment paper. Place under the broiler until the lemons turn a bit dark on the edges. Remove from the oven and let cool.
Fill a large bowl with water and the juice of the remaining lemon. Cut the top of the artichokes and remove the outer leaves almost down to the core (only the softer leaves should remain). Save the leaves to steam later and snack on if desired.
Cut the artichokes in half and clean the inside of that fuzzy part (in France, we call this the "hay"). Cut each half once more and place each quarter immediately in the lemon water to prevent oxidation.
Heat up one tablespoon of olive oil in a large sauteeing pan and cook the onion for about 5 minutes, until tender.
Add the artichokes to the pan, the white wine (or stock) and the same amount of water (1/2 cup). Season with salt and pepper according to your preference. Cover with a lid and cook for 30 minutes. Remove the lid and cook another 10 minutes. Let cool completely.
Place the artichokes and onions on serving plate, randomly add olives, feta cheese, lemon slices and chopped thyme. Drizzle with 1/2 tablespoon of olive oil and the vinegar. Check the salt and pepper if necessary.

Lavender & Buttermilk Tart, adapted with permission from Holly Herrick’s Tart Love: Sassy, Savory and Sweet.

(Serves 6 to 8)

Tart Crust:
2 1/4 cups White Lily all-purpose flour (or other brand if White Lilly is not available)
1/4 cup granulated sugar
pinch of sea salt or kosher salt
2 sticks (1 cup) unsalted butter, cold and cut into 1/4-inch cubes
3 tablespoons ice-cold water, or just enough to hold the pastry together

At least 30 minutes before rolling and baking (or up to one day in advance), prepare the pastry. In the bowl of a food processor fitted with a plastic blade, pulse together the flour, sugar and salt. Add the butter and pulse rapidly, 40 – 50 times, or until the butter is blended into the flour and is coarse and the butter is the size of small peas. Gradually, add the water in a small trickle, with the processor running. Continue adding just as the pastry starts coming together in the shape of a loose, crumbly ball. Turn out onto a lightly floured surface. Form into a disc, about 1″ high, and wrap tightly with plastic wrap. Refrigerate at least 30 minutes or overnight.

1 egg wash – yolk, pinch salt, splash water, blended together

For the lavender infused buttermilk:
1 1/2 cups buttermilk
1/2 cup whole cream
1 tablespoon dried lavender flowers or lavender leaves (available at most gourmet specialty stores and some groceries)

For the custard dry ingredients:
1/4 cup flour
3/4 cup sugar
1/4 teaspoon kosher or sea salt

For the custard wet ingredients:
3 large eggs
6 tablespoons sweet butter, melted
1 teaspoon best-quality vanilla extract

Prepare tart crust. Chill 30 minutes (or overnight), and roll out into your preferred tart pan, creating a little border above the rim of the pan itself. Chill 20 – 30 minutes.
Preheat the oven to 375F. Place the prepared shell on a baking pan and partially blind bake the pastry by placing a piece of parchment paper on the bottom crust, filling it with dried beans or pie weight and baking for about 10 -15 minutes. Let cool and remove weights and paper. Brush down the pastry with the egg wash, and return to the oven to finish baking until golden brown, another 10 minutes. Remove the pre-baked shell from the oven and reduce the oven temperature to 350F. Allow the shell to cool slightly at room temperature.

Meanwhile, infuse the buttermilk with the lavender. Combine the buttermilk, cream and lavender flowers in a saucepan, whisking to combine. Turn the heat on high and bring up to a low boil, reduce the heat to medium low and simmer gently for 10 minutes. Remove from the heat and set aside to steep five minutes. Using a fine sieve, strain the infused buttermilk into a medium bowl and refrigerate to cool.

Meanwhile, in a large bowl, whisk together the dry ingredients (flour, sugar and salt), whisking to combine. In a medium bowl, combine the wet ingredients. Whisk the eggs for one minute until light and lemon-colored and fluffy. Whisk in the butter and vanilla. When the buttermilk has cooled to body-temperature or cooler, it’s time to add it to the wet mixture, slowly streaming into the egg mixture and whisking to combine. To finish the custard, stream the milk/egg mixture into the dry ingredients mixture, whisking constantly. Pour the custard into the prepared tart shell. Bake 35 minutes or until the custard has browned to a light tan and the custard still quivers to the touch. Remove from oven and cool for at least one hour before slicing.

Catching up. Been wanting to catch up with everything since I came back this weekend. With both our schedules on the “busy on repeat” button in August and September, catching up is done on the fly. Early morning chats. Late night chats. With a text. Or a note left intentionally in a back pocket.

We pass each other often lately. We catch up. We appreciate the early morning hours when the pups are still snoring and we can talk seriously or giggle like children. I am traveling a lot for work lately, with his blessing and support. He’s been so busy rehearsing and playing gigs that he’s had very little to notice I was gone. Sort of…

I love that we both feel well enough in our shoes that the investment we are making in our works and creativity, the time apart working in different cities, the long nights playing music, all this is never tough. It makes us sigh and we do miss each other but it’s the kind of absence that makes us keep focused and positive.

It’s not always rosy, easy peasy and always fun but it is what it is. The best part is that our choices let us combine what we need to do with what we absolutely love to do. We are ok with it until we crave that catching up time. I see a couple of date nights in our near future and if you have any movie recommendations, send them along by the way!

It’d be easy to let good meals be forgotten or to let nutrition be a distant thought. Meals on the go or TV dinners are not something I usually keep around. Not only do I love to cook but there are a few little health issues that have us stay away from made up meals. I love to shop the farmers market too much and stock up more than I should even before I head out of town.

To make sure we get good foods in our bellies in the midst of everything else going on, I like to fix big bowls of pasta bursting with lots of fresh vegetables we just picked at the market. I love adding roasted beets, lots of fresh herbs. My pineapple sage and basil are growing wild so they end up in almost everything we cook. A drizzle of pungent olive oil. I might add a bit of chorizo or leftover shredded roasted chicken depending on what we have that needs to be used.

It’s nothing fancy but it’s wholesome and packed with everything we need to keep going. Another staple is this soup I posted recently. I think I make it about two to three times a week right now. It is so silky and so easy. Whether we cross paths or have the time to sit down and eat together, a bowl of pasta for lunch and a bowl of soup for dinner have been good sound choices to have ready.

One thing though…we can’t park away our sweet tooth. Given the temperatures above the 100s here, I tend to shy away from the oven. The ice cream machine has been churning pretty much non stop. Lots of frozen yogurts, sorbets and other experiments have been going on in the frozen department. It’s been fun and interesting to say the least.

Shiso


One of our latest concoctions and addictions has been Watermelon Shiso Sorbet. I never would have expected to find Shiso at the market but the same vendor who had purslane one week also brought in shiso and I got giddy as a five year-old given a new toy. I’ve been reading and hearing lots about it and could finally experiment on my own. A new find at the market and I am happy. I am easy that way…!

This sorbet is the perfect ending to a long day. It packs a punch of interesting flavor combining the summer flavor of watermelon and citrus with the minty touch of the shiso. Slightly exotic. Highly refreshing. A few spoonfuls shared at midnight is everything the doctor ordered after a long hard worked day…

Conchiglie With Roasted Beets and Pineapple Sage:

Serves 4 to 6 as a main dish

3 small red beets
3 small golden beets
3 tablespoons olive oil, divided
salt and pepper
one bag (14oz) gluten free conchiglie (or your favorite shell pasta)
1 small red chili pepper, chopped
freshly chopped pineapple sage or basil

Preheat the oven to 375F. Peel and halve the beets. Layer them on a baking sheet and drizzle with two tablespoons of olive oil. Season with salt and pepper and roast for about 15-20 minutes until the beets are soft and a little brown on the edges. In the meantime, boil the pasta until al dente. Drain and place in large bowl. Drizzle with the remaining olive oil, add the chopped pepper, the beets and the chopped herbs. Toss and eat right away. This is perfect at room temperature.

Watermelon Shiso Sorbet, adapted from Tara’s Plum Shiso Sorbet on Tea and Cookies.

1 cup sugar
1 cup water
1/2 cup fresh shiso leaves
One pound watermelon, cubed

In a small saucepan, cook the sugar with the water until the sugar is completely dissolved. Add the shiso leaves. Remove from the heat and set aside to cool completely.
In a blender or food processor, puree the watermelon with the syrup until smooth. Process in an ice cream machine according to the manufacturer’s instructions.

We’re back home. Everything and everyone is getting back to normal. Groceries, laundry, walks with the pups. And yet, everything’s different. Every move taken and every thing said is tinted with a veil of deep sadness and compassion.

As some of you may have learned, one wonderfully kind and talented food blogger, Jennifer Perillo, lost her husband suddenly this past weekend. I did not know Jennifer well. We had met briefly at several conferences in the past. We were Twitter and Facebook friends. We did not live close. We did not email. We did not talk on the phone. Yet, if I could wrap my arms around her today and hope it helped a little, I would.

Over the year, I have come to deal with the fact that I don’t care that much of August. I have a love-hate relationship with August actually. My brother passed away in August. My grandmother too. It’s my mother’s birthday in August. And my grandfather’s too. He’s 101 this year by the way. Talk about witnessing life and mortality.

I am finally ok with August being a crappy month for myself. I hate, hate, hate the fact that now it will be a difficult time for Jenny and her daughters. I, and others who have lost dear ones, know the journey ahead. And we hurt inside for Jenny and her daughters already. How to make it better? How to make it easier?

Just like finding a few dishes prepared for you when you come back from travels, or finding the fridge a little fuller than when you left. Just like noticing a full basket of fruits on the counter and a "welcome home" note; we can be there for Jennifer and her family just the same.

Those little gestures mentioned above done by my mother in law right before we walked in the door, were immensely appreciated and resonated deeply within us. Caring for one another does is not about climbing the highest peaks or diving the deepest sea. Little gestures. A meal. A note. A walk. A hug. Expressing respect. And compassion.

Quinoa, Feta and Watermelon Salad


When I went back home to my brother’s funerals, I came back to many cards of condolences, many phone calls and texts. I also had many friends drop by with a bite to eat. They knew food was the last thing I wanted. I wanted to disappear. I was numb. But mechanically, I ate the dishes they brought over. It was sustenance. I let Bill rocked me too sleep many many nights. It was a necessity. I still sleep as little now as I did then.

For weeks, life was on auto-pilot but I do remember the comfort of sharing memories with people who came over with a giant green salad or a pint of sorbet. I remember those moments gently pulled me out of this quiet space I had made for weeks. The comfort of my neighbor Camille’s voice as she scooped her famous peach granita into little cups for us and her kids. The warmth of the oven touching my cheeks as I opened it to retrieve the first tart I had made since…since Thierry had left us.

Normalcy mixed with extraordinary circumstances. Jennifer and her family are going through this as I write it. They need us, our thoughts, prayers and memories of them for those who knew them. They need them now but they will need them months and years form now. Thankfully, and because the food community and humanity in general is pretty damn grand, reaching out to them is already happening.

Erika from Ivory Hut, who went through her own tragedy last year, losing everything in a house fire, is gathering the troops to help out. A care package program is being organized for those who are not in Jennifer’s area so a little piece of love and care can be delivered now and for months to come right to her doorstep. Locals are also organizing a relief effort to show her that not only we care but we are here for her.

My heart is heavy for the Perillos right now. But it is also full of hope. I know there will be many a smiles in their future even only through the solace of your thoughts and words for them.

When someone around Bill and myself is going through tough times and could use a night off, we volunteer to take care of their kids, their pups or we just drop off a collection of dvds and a good meal. It’s small compared to the void we cannot fill but it’s a start. Food I can do. Which is why I am sharing three recipes (click on "continue for recipes" that are good options to bring to someone who might need a little comfort and a lot of hugs.

Quinoa, Watermelon and Feta Salad:

Serves 6 to 8 as a side dish

When it comes to food and comforting friends with a little something to nosh on, I always gravitate towards dishes that can easily last a few days and only get better with a bit of time. Lately, we have been feasting on bowls after bowls of Quinoa, Watermelon and Feta Salad many days in a row. Sometimes with a poached egg on top. In the heat of the summer, this salad is not only healthy and light but also super refreshing.

Ingredients:
1.5 cups quinoa
3 cups water
1 cup watermelon, rind removed and cut into small cubes
2 oz feta, crumbled
2 green onions, white and green parts, chopped thin
1/3 cup loosely packed mint, chopped thin
1/4 cup olive oil
juice of one lemon
1 teaspoon Dijon mustard
pinch of salt and pepper

Directions:
In a large saucepan, bring the quinoa and water to a rolling boil. Turn the heat down to a simmer, cover the pot halfway and cook until the water is completely absorbed and the quinoa is translucent (about 20 minutes). Let cool completely.
When the quinoa is cooled, add the remaining ingredients and fold carefully. Adjust the salt and pepper to taste. Refrigerate until ready to eat.

Roasted Red Pepper & Ricotta Tart:

Serves 4 as a light main dish.

Another dish that I always find easy to fix, transport and leave in someone’s fridge or freezer for them to reheat easily and quickly is a gluten free Roasted Pepper & Ricotta Tart. Accompanied by a green salad and you have something satisfying and nourishing. A little balm for the heart. And the belly.

Ingredients:

For the crust:
5 tablespoons (70gr) unsalted butter, at room temperature
1/2 teaspoon piment d’Espelette (or pinch red pepper flakes)
1/2 teaspoon dry mustard
3 egg yolks (save one white for the filling)
pinch salt
1/2 cup (80gr) brown rice flour
1/2 cup (60gr) millet flour
1/4 cup (30gr) sorghum flour
1/4 cup (40gr) potato flour
(or 1.5 cups of all purpose flour if not using gf flours)

For the filling:
3 to 4 bell peppers of various colors (red, yellow, orange)
1 cup ricotta
1 egg white
salt and pepper to taste

Directions:
Prepare the crust:
In a mixer, whip together the butter, piment and mustard on medium speed until light and airy. Add the egg yolks, one at a time and beating well after each addition. Mix until incorporated. Add all the different flours and mix briefly. Dump the whole mixture onto a lightly floured (use more rice flour) board and gather the dough into a smooth ball. Flatten the dough into a disk, wrap it in plastic wrap and refrigerate for an hour.
When the dough is nice and cold, roll it out on a lightly floured board or in between two sheets of plastic to fit your preferred tart pan. If the dough tears while you roll or/and transfer into the pan, just patch it with your fingertips. Refrigerate 30 minutes.
You can freeze the dough for up to 3 months and prepare it up to 4 days in advance.

Prepare the filling:
Method 1:
Preheat the oven to 400F and then roast the peppers until their skin turn black, remove from the oven, place then in bowl, cover with plastic wrap and let them cool completely. Remove the plastic, and peel the skin right off the pepper, seed them too and cut them in halves or at least fairly large pieces.

Method 2:
Blacken the skin of the peppers over an open flame such as a gas stove or grill. Place then in bowl, cover with plastic wrap and let them cool completely. Remove the plastic, and peel the skin right off the pepper, seed them too and cut them in halves or at least fairly large pieces.

Preheat the oven to 350F and position a rack in the middle.
In a medium bowl, mix the ricotta, egg white, salt and pepper. Layer at the bottom of the prepared tart shell. Layer the roasted pepper pieces on top.
Bake for 30 to 35 minutes.

Peach and Nectarine Granita:

Makes enough for 8

Since it’s August, and it’s still mostly to very warm just about anywhere, I got to say that the most comforting thing for me and many others I know, is still to dig my spoon in soft soothing ice cream. Or sorbet. Or granita. In this case, I was pressed to use the four peaches and nectarines we still had from our trip to the market before heading down to Florida. So easy to make and since it’s stored in the freezer, it’ll be there anytime you need a little cooling treat.

Ingredients:
2 peaches, skin and pit removed
2 nectarines, skin and pit removed
1/4 cup honey
juice of one lemon
1 cup Greek yogurt or creme fraiche

Directions:
In a food processor, puree all the ingredients together. Place in a large baking dish and freeze. After two hours, run a fork along the length of the dish, breaking up the fruit mixture into a granita. Repeat the process every hour or so for about 4-5 times until the mixture is completely frozen but you get a shaved ice consistency all the way through. We like ours chunky but the more times you run your fork in the mixture, the thinner the shavings will be.
