Tuna Nicoise Sandwiches

Speaking of that workshop in Northern Ireland, we are finalizing the schedule of lessons, shoots, cooking and fun and I am getting so excited I can’t stop smiling all day! Really can’t wait to be there and meet everyone. I am also still pinching myself that I can do this with Bill and we are taking a few days before to explore both Scotland and Northern Ireland where is ancestors are from.

Tomato Heaven


We travel well together. We have a way of dividing planning tasks without even saying it. From the first time we crossed the English Channel on a super long, chaotic and loud ferry route, we knew we could travel together without wanting to throttle each other. He’s really the best companion.

I am realizing this post is turning into a public Thank You note to my husband….but he deserves it. For everytime I have been able to spend an hour geeking out on the photos for a post or taken another more time to write and edit recipes and words – he’s been behind me, supportive of this blog, intended at first to be nothing more than a fun creative outlet.

Portuguese White Gazpacho


That fun creative outlet turned out into a fun and amazingly rewarding life, creating stories through images. And he’s been my rock throughout the process. While my mom was complaining I was "still on the internet", he would gently tell her "give it a bit more time, she’s got a plan."

Did I? Have a plan? No, not really. My guts were telling me there was something there. My creative self was telling me not to let go. So I pushed through. With Bill by my side, never complaining. Many times a day I feel the urge to tell him thank you for this gift. I pick up the phone and send a text. A smiley face, a one liner. An extra hug. Something. Anything that shows him that I am mindful of what he’s doing.

Ingredients For Portuguese White Gazpacho


To tell my husband "thank you" for his awesomeness, I know that the simple act of putting a nice lunch together will say just that. We never eat lunch together so when Summer rolls around, it’s a bit of a treat. Taking a few extra minutes to pack up a nice picnic and a bottle of cold lemonade to head out to the dock or the bench in the backyard is one way for me to say "I notice what you do".

From the first years that I moved to the US, I have always loved the idea of the "Sandwich and Soup" lunch combo one can find at restaurant. I’ve loved seeing how different years bring different favorites, from the elaborate "Salmon BLT and Vichyssoise" combo to the classic "Grilled Cheese & Tomato Soup" one. Each chef, restaurant, region and era putting its own spin on it.

Tuna Nicoise Sandwiches


One of my favorite salade is Salade Nicoise, one of my favorite sandwiches is a Pan Bagnat and one of my favorite soup is gazpacho. I finally combined them all in one of our favorite picnic fares to date: Tuna Nicoise Sandwiches and Portuguese White Gazpacho.

The sandwiches are pretty straightforward, combining all the ingredients of a Salade Nicoise; tuna, oilves, green beans, eggs, tomatoes into a sandwich that needs to be made the night before, such as the Pan Bagnat, so that the bread can get all soft inside and the flavors meld together inside.

The gazpacho has been made three times since I made it first thing last week when I came back from New Hampshire. We just can’t get enough. A creamy blend of almonds, cucumber, fennel, oregano and garlic. If a soup ought to be called "sensual", it would be it. It made my toes curl. Which is always a pretty good indication I am happy… Thank you David Leite, author of The New Portuguese Table, for the recipe!

Tuna Nicoise Sandwiches:

Makes 4 large sandwiches

Ingredients:
1 cup French green beans
4 large eggs
2 cans tuna in oil, drained, coarsely flaked
1 cup cherry tomatoes, quartered
1/3 cup small black olives, pitted
2 shallots, thinly sliced
1/4 cup torn and loosely packed basil leaves (no need to chop fine, just use your fingers)
3 tablespoons olive oil
1 tablespoon red wine vinegar
kosher salt and fresh ground pepper to taste
2 anchovy fillets, finely crushed with back of fork
1 garlic clove, minced
1 baguette (regular or gluten free)

Directions:
Bring a large pot of water to a boil, add a pinch of salt and blanch the green beans in it for about 3 minutes. Drain them in a colander and place them in a bowl full of ice until they are completely cold. Drain again well and reserve. The goal is to cook the green beans just enough to remove the raw taste of their uncooked selves but still keep the vibrant color and nice crunch of their barely cooked selves.

Bring another large pot of water to a boil. Add the eggs to the boiling water, cook for 6 minutes (soft yolks). Remove them from the water and run them under cold water until they are cooled enough to peel. Once peeled, coarsely chop them up and add them to the green beans.

Add the tuna, tomatoes, olives, shallot and basil. Toss well to combine.
In a small bowl, whisk the oil, vinegar, anchovy and garlic. Season to taste with salt and pepper and pour this vinaigrette over the green bean and eggs. Toss well until everything is nicely seasoned with the vinaigrette.

Cut the baguette in half horizontally and spread the Salade Nicoise all along its bottom part. Wrap with a layer of parchment paper and then a layer of foil or plastic wrap. Refrigerate 6 hours or overnight. The next day, cut the baguette into 4 pieces and serve.

Portuguese White Gazpacho:
I am not reposting the recipe here since I made it ad verbatim from David’s site, Leite’s Culinaria.
I skipped the crab salad included in the recipe but I have no doubt it was as good as the gazpacho.
I used gluten free leftover bread that was going a bit stale but feel free to use regular bread.

I just absolutely love this time of year. The temperatures may be higher than Spring feels like in other part of the world but we are still (and I insist on still) a few weeks away from scorching 100F (minimum) and 100% humidity (also a minimum). That means I can meander the farmers market without melting or rushing to get home once the milk and eggs find their way to my basket.

 

Russian Kale

Every Saturday that I am in town, from April to December you will find me right at opening hour at the market. I like to be able to talk to the vendors who have now become friends. Instead of "hey we’re back!" when the market opened again this season, it was hugs and stories shared all around. We had months to catch up on and lots of good news to share. New breeds for Jason at Meathouse. New lasagna and fresh pasta flavors for Brian at Rio Bertolini, new farmland for Ken and his crew. So proud to see so many young talents share their craft and passion with produce- intense people like me.

 

Shitake Mushrooms

They know my habits. I am not special. They know the habits of all their regulars. I am grateful for their enthusiasm and little extras they put in my basket once in a while. I love that they never mind my taking pictures as if they were about to disappear with their next breath. Charleston is lucky to have caring farmers and individuals. We are lucky to have this amount of gorgeousness so many months out of the year. I do my weekly shopping there and right now I am all about the greens, mushrooms and radishes. In a few weeks it will be heirloom tomatoes and squash that will be prominent.

 

Farmers' Market

Going with the rythm of the season is a treat. I am aware of it. If you have access to a farmers market or to a farm, make a trip there. There are fantastic passionate people working to get you the best produce possible. I like to honor them with photographs and still life shots. They make my work so much easy. Clients are always thrilled to see ingredients as fresh as these!

It makes getting home after a long shoot and staring at the content of the fridge with a hungry stomach that much easier. I can look at the chalkboard pantry door and see what I can combine from both dry and fresh goods to make dinner. (Side note: when we built the house back in 2005, I took the pantry door off its hinges and painted it with a coat of chalkboard paint. It makes tracking one’s fridge and pantry content that much more efficient). Lately, I have renewed a love affair with soft and creamy polenta, topped with lots of greens and once in while with an egg or a few grilled shrimp. (season kick off here was a few weeks ago)

 

Shitake Mushrooms

Fresh, easy, quick and completely satisfying. I have to thank my mother for reminding me of the wonders of polenta. When they visited last and she was so sick the whole time, it was the only thing she could eat without being bothered much afterwards. Instead of making different meals for everyone, we would just make one big batch and partake. Months after, I still reach for the tin of polenta whenever I want something light, yet comforting.

Here is my favorite way to serve it at the moment: topped with sauteed Russian kale and shitake mushrooms, plenty of garlic and parsley and with a poached egg on top.

Creamy Polenta with Russian Kale Shitake Mushrooms (with option to be topped with a poached egg):

Serves 4 

Ingredients: 

For the kale and mushroom mix:

2 teaspoons olive oil

4 cups cleaned and roughly chopped Russian kale

1/2 pound fresh shitake mushrooms, stemmed and sliced thin

1/2 cup loosely packed fresh parsley

2 cloves garlic, minced

1/3 cup water or vegetable stock

salt and pepper to taste

For the polenta:

2 cups water

1/2 teaspoon salt

1/3 cup fine grain yellow polenta

dash of freshly ground nutmeg

1 tablespoon heavy cream

For the poached egg (optional) (but oh so tasty!)

Directions:

Start by preparing the kale and mushroom mix.

Heat the oil in a large skillet set over medium high. Add the kale and mushrooms and sauteed for about 5 minutes. Add the parsley and garlic and cook for another 2 to 3 minutes. Add the stock (or water), salt and pepper, cook for another minute and remove from the heat. Let cool while you prepare the polenta.

In large pot, bring the water to a boil. Add the salt and polenta at once and stir quickly with a whisk or wooden spoon to prevent the polenta from clumping. Add the nutmeg. Reduce the heat to a simmer. Let the polenta cook, uncovered for about 20 minutes. Remove from the heat and stir in the heavy cream. Check the seasoning once again.

Divide into four portions, top with the kale and mushroom mix, adding a few tablespoons of the juice as you go along and top with a poached egg if desired.

We have been stocking on the bounty of Spring produce left and right lately. Strawberries, peas, rhubarb, ronde de Nice, baby Vidalias, etc… The farmers market is in full swing and my mind is buzzing with photographs to take of all this beauty.

It was torture however these past two weeks to cook for two and only one could eat. Yes, I had mild complications from the tooth extraction and for two weeks I was barely able to finish a bowl of soup. I would make Bill a meal and send mine through the blender. Eating was problematic so I would set out a my soup and eat a few spoonfuls at a time throughout the day.

Last Sunday I was finally able to eat my first solid meal. Little bites at a time. I have nothing against soups, I love them, and I became quite creative with mine but I am a chewer so it was getting old! Since we had friends coming over for dinner that Monday and my brain started going crazy happy on the meal planning!

I spent the day in the kitchen chopping, cooking, tasting, anticipating like a child the moment when we would all sit down and share a meal. A good meal. Imperfect, bountiful, mismatched, seasonal. With friends who made me laugh until I was about to burst.

I had prepared dessert thinking we’d be too full for it but I had forgotten about the crew at the table. Gourmands, epicureans, bon vivants. They would not pass on dessert. Especially Rhubarb and Strawberry Crisp. True Summer in a cup. I served them with a creme fraiche ice cream I must make again and blog about soon. Unfortunately there was none left for the photoshoot. That good.

We had the leftover crisps with a little heavy cream whisked just until it gets thick, no whipped and it was just as perfect. Every bit of sunshine on a spoon.

Rhubarb & Strawberry Crisp



Rhubarb & Strawberry Crisps:

Makes enough for 6 to 8 depending on your ramekins

Ingredients:
For the topping:

1 cup sugar, divided (1/2 and 1/2)
1/2 cup all purpose flour or gluten free flour of your choice (I used millet flour here)
1/2 cup gluten free oats or quinoa flakes
1/4 cup packed light brown sugar
zest of one lemon
1/4 teaspoon ground cardamom
pinch of salt
6 tablespoons cold unsalted butter

For the filling:
juice of one lemon
3 cups chopped rhubarb
2 cups chopped strawberries
3 tablespoons cornstarch
2 teaspoons kirsch or brandy

Crème fraîche, thick cream or ice cream, to serve with (if desired)

Directions:
Preheat the oven to 350F and position a rack in the middle. Lightly butter the inside of 6-8 ramekins and place them on a baking sheet lined with parchment paper.
In a medium bowl, stir together 1/2 cup of the sugar, flour, oats, brown sugar, lemon zest, salt and the cardamom. Add the butter and work it into the flour mixture with your fingertips until crumbly. Cover the cover and refrigerate while you prepare the filling.
In a large bowl, stir together the remaining 1/2 cup sugar and lemon juice with the chopped rhubarb and strawberries. Add the cornstarch and liqueur and fold well with a wooden spatula.
Divide the fruit mixture in between the prepared ramekins. Divide the crisps topping equally over each portion. Bake for about 35 to 40 minutes, until the filling is bubbly and the topping is browned. Top each crisp with a dollop of crème fraîche, thick cream of ice cream if desired.

Where Women Celebrate Cookbook


Thank you everyone for your get well wishes. It was a slow cooking/blogging week. Perfect opportunity to tell you about a project I was thrilled to be part of earlier last year. Along with some pretty awesome authors, photographers, bloggers, crafters, I was asked by the magazine Where Women Cook, to be part of their book project, "Where Women Cook: Celebrate!". The book is a collection of women’s stories on how they celebrate and gather the people they love around them.

The instant I read the first lines of the project, I knew I wanted to tell the story of how my grandmother used to celebrate. Above all the traits I inherited from her, this is by far the strongest one. The project was easy: tell with pictures and a few recipes your favorite way to celebrate, how you gather the people you love ad create lasting memories.

Tthe theme I chose to feature and photograph was the same one my grandmother would pick for family gathering: a Berber Couscous with merguez sausages, stewed veggies, chicken and mutton. Plenty of couscous and harissa to go around too. Both my grandparents were in Morocco for a extensive period of time, ten years apart, both my parents were born there, ten years apart. Moroccan cuisine is very much part of my family coding. It’s celebration food for us.

My friend John at Lana Restaurant provided all the bistro bowls, silverware and napkins I needed. We set out a pretty table with flowers in mason jars and lots of natural twine.

We sat down by the water and cheered, laughed, ate well, raised our glasses and polished off many servings of couscous. My grandmother would have been proud of us!

Fanny and Patrick from Bin 152 provided much of the wines and we lingered at the dinner table and watched the sun set over the water. We talked for hours and I completely forgot to serve a family favorite palate cleanser, a Citrus Mint Salad.

So here it is. The one recipe that never made it into the cookbook, my grandmother’s super easy refreshing Citrus Mint Salad (check at the end of the post).

Citrus And Mint Salad:

Serves 4

1 pink grapefruit
1 white grapefruit
1 large orange
1/4 cup fresh mint, chopped
3 tablespoons honey

Supreme the pink and white grapefruit as well as the orange. (here are great instructions on how to supreme citrus)
Place the fruit segments with the mint and honey in a non reactive bowl and let sit at room temperature for 20 to 30 minutes. Refrigerate until ready to serve. Divide among bowls or ramekins, adding some of the natural juices over the fruit.

One of the things I always try to have on hand is a batch of soup. Does not matter the kind, but there is always one in the freezer, or one in the refrigerator or one simmering on the stove. This is my cure for everything. From being homesick to missing tooth.

Tomatoes


The latter is me today. After a painful molar extraction yesterday, the only thing I wanted to eat last night was soup. Smooth tomato soup. I was too drugged up to even want to thaw the batch I had in the freezer so my dear honey brought me some home from the local eatery.

Today, in between two rounds of painkillers, I am putting this Roasted Tomato Soup on the stove. It is my drug of choice to nourish me while I can’t have solid foods and to calm down the sounds coming from my stomach. A girl’s got to eat and even beaten to a pulp, I will try to make something tasty.

I am really honored to be sharing this recipe with the reader of Joanna at Cup Of Jo today in her "Best Simple Recipes" series, here. I also wrote a bit of my long love story with soup for her readers.

Roasted Tomato Soup



Roasted Tomato Soup With Tomato Parmesan Croutons
Serves 4-6

Ingredients:
2 pounds fresh tomatoes
4 garlic cloves (skin on)
4 small Vidalia onions, cut in half (or 2 regular onions)
2 tablespoons olive oil
2 teaspoons dried basil
2-4 cups water (depending on how thin/thick you like your soup)
Salt and pepper to taste

For the tomato parmesan croutons:
8 to 12 large cherry tomatoes
1 teaspoon dried oregano
1 tablespoon grated parmesan
Fresh oregano to garnish

Preheat the oven to 400F.
Slice the tomatoes in halves and place them on a baking sheet. Drizzle with 1 tablespoon olive oil.
Place the garlic cloves and onion halves on a separate baking sheet and drizzle with 1 tablespoon olive oil. Season with salt and pepper.
Place both baking sheets in the oven and roast the vegetables until soft, about 20 minutes.
Remove from the oven and let cool.
Peel the skin off the garlic cloves and place with the rest of the vegetables, in a food processor. Add about 2 cups of water and puree until smooth. Add more water to reach your preferred consistency. Adjust the seasoning with salt and pepper if desired.

For the tomato parmesan croutons:
Turn your oven broiler on high.
Thinly slice the cherry tomatoes (I usually get 3 slices per tomato) and layer on a baking sheet line with parchment paper. Sprinkle evenly with the dried oregano and parmesan. Broil for about 1 minute or until the parmesan starts to get golden brown. Remove from the oven and let cool completely.
To serve, place the soup in a large saucepan and re-heat quickly over medium heat right before serving. Ladle the soup into bowls and garnish with the tomato parmesan croutons. Enjoy!

To say that it has not really been good "soup weather" around here this winter would be an understatement. We have spent more days in short sleeves and sandals than in sweaters and boots. Granted South Carolina has a sub tropical weather year round and we do joke that we have two seasons, Hot and Hotter also called Humid and More Humid. Yet, February is a month we all look forward to as it usually offers a bit of a chill, a couple of weeks of fireplaces burning, of hoodies and gloves.

Making Soup


Not this year. I can count on both hands the days I wore a sweater and on one those when I put my coat on. And boy do I love Winter. I grew up in an area of Provence where the Mistral wind often blew stronger in the Winter time, giving way to clear and chilly skies. Here the winds unmistakably bring thunderstorms or clear warm days. If I want a Winter mood, it is up to me to create it.

Rosemary


Soup will put me in an instant winter cozy mood. But here obviously, soups cannot be only for cold grey days. I grew up with my mom serving soup every dinner before the rest of the meal but I did not really continue that habit once I moved away on my own. Instead, soups of all kinds became standard lunch fare at the house. Piping hot a few times but mostly warm or room temperature to be able to taste every bit of subtleties in the marriage of the vegetables used and their dance on my palate.

Herb Goat Cheese Tartines


This soup is no exception to my rushing to lunch time every day. I am not much of a breakfast eater and I usually work straight through lunch but comes 2pm and my stomach wants to jump hoops and make loud cavernous noises until I settle it down with a little something. I find the most satisfying lunch to be a big cup of soup and a tartine these days.

I can sit down, catch up on the news around, satisfy my hunger and recharge my internal batteries with the minimum fuss and the most gratifying bowl of goodness. I usually start a big pot of soup while I cook other things for dinner or as soon as I get up and start production on my shoots for the day. The smells wrapping up or kicking off a day at work are tantalizing enough to make me wish for that first spoonful with great anticipation.

This soup has been made three times in the last ten days. We just can’t get enough of it. My friend John who is a chef at my favorite restaurant downtown, reminded me that most of the vegetables I used for it were what we call back home "les légumes oubliés" or heirloom vegetables. Vegetables that are finely and firmly coming back on menus and dinner tables all around.

Sunchokes or Jerusalem Artichokes (topinambours), parsnips, turnips. I added Vidalia onions, cauliflower and a bit of rosemary to round up the flavors. Served with a slice of grilled bread smeared a bit or goat cheese mixed with plenty of herbs and topped with a few slices of radishes and it was the perfect lunch.

I am thinking of adding a poached egg to my tartine next time and makes this dinner…

Roasted Vegetable Soup



(Mostly) Root Vegetable Soup & Herbed Goat Cheese Tartines:

Serves 4 as a main dish

Ingredients:
1 small head of cauliflower
3 cloves garlic
3 to 4 small Vidalia onions
1 pound sunchokes (peeled and quartered)
4 turnips (peeled and quartered)
3 parsnips (peeled and cut into 1-inch thick rounds)
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 or 2 rosemary sprigs
1/2 to 1 cup water, or veggie or chicken stock

Directions:
Preheat oven to 375F and position a rack in the middle.
Trim the outer leaves from the cauliflower head. Cut in quarters, remove the core, and cut the cauliflower into medium size florets. Place on a large baking sheet.
Peel the garlic and place on the baking sheet with the cauliflower.
Trim the white part from the green stalk of the Vidalia onions. Keep the white part and cut into medium sized chunks. Wash well under water and place also on the baking sheet.
Finely add the sunchokes, turnips and parsnips to the same baking sheet.
Drizzle with the oil, salt and pepper. Place the rosemary on top and roast for about 20-25 minutes. Remove the rosemary.
Let cool slightly. Place in a food processor, start running the machine and add enough water to have a creamy soup. Re-season if necessary with salt and pepper. Serve with the herbed goat cheese tartines.

Herb Goat Cheese & Radish Tartines:

Makes 2 tartines per person

8 slices of your favorite bread
8 oz plain goat cheese, at room temperature
1 teaspoon fresh rosemary, finely chopped
1 teaspoon parsley, finely chopped
1 small bunch radishes (about 6 to 8) cut into thin slices

Grill or toast the bread and set aside.
In a small bowl, mix together the goat cheese and herbs until well blended.
Spread some of the goat cheese mixture on the tartines, top with some radish slices.

Me (matter of fact): they are filled with mascarpone and a bit of membrillo left over from the shoot the other day.
Husband (amused): did you make them for Valentine’s Day?
Me (in my best Mrs Patmore impersonation): why on earth would I do that?

Silence…

Me: well you know what I mean. We don’t really do Valentine’s Day here so I did not make them for that. Specifically. I made them for you. Specifically.

Silence…

Me: dude! It’s been 14 years we haven’t cared much about that cheesy holiday and "awkward!-I forgot-a-card" day. So why push my buttons about it now?

Silence…

Him: no reason. I just love seeing you scrambling…and I like to push your button. Specifically.

Eggs


Fast forward to this morning. I did get him a card. And he did give me one. We were both at the grocery store yesterday and stopped by the stationary. I started flipping through the fun card and one made me giggle. So I got it. He did the same. They were fun cards. They made us giggle. And that will be the extent of our Valentine’s Day (he’s got a gig tonight).

I am not going to be the one whining about all the pink hearts and red cupids. They might burn a whole through my skull today too but I might have gotten softer in the last few years. Indeed, I am pretty sure I don’t dislike V-Day. I don’t like it either. I hate the pressure it adds for people in new relationships or in rocky ones. I like that it can give someone the wings to make a first step or to get someone out of the dog house.

Membrillo & Mascarpone Macarons


Why doesn’t it phase me more than that? We are happily and giddily married. We don’t wait for February 14th to extend a nice gesture, to add a nice words, to exchange a card (I often tuck one in his bag before work). But I dig the idea of an extra hug, an extra "I love you" and a extra kiss. Most of all I like the idea of taking an extra minute to be grateful for my husband’s love and generosity towards me and my family.

Similar to Thanksgiving, we don’t wait for that day in November to be thankful for the things we have and enjoy, for the people we love and who love us back. Just like on Thanksgiving, today I said an extra "thank you" to Bill for the wonderful person he is to me. I did it yesterday. But I might forget at some point some day next year, next week. And I’d be silly to pass on an extra hug today. Anyday.

It does not have to be a dozen roses, a fancy card or a box of chocolates. Or it might. Whatever makes one feel and be a little extra kind today. I can rally behind that.

An extra bit of kindness had never hurt anyone. It would probably make the world go a little rounder too. So here is my virtual extra hug and "thank you" today for your love and generosity towards this blog and what I share with you.

Membrillo & Mascarpone Macarons



Membrillo Mascarpone Macarons:

Makes about 30 macarons (depending on size)

Notes: I can’t post the exact recipe used for the membrillo (a.k.a quince paste) used to fill these macarons since the recipe is from a book not yet published (next Fall).
But I would direct you to Simply Recipes post on membrillo which I have made several times with great success.

For the macarons shells:
Ingredients:
200 gr powdered sugar
110 gr almonds (slivered, blanched, sliced, whatever you like)
90 gr egg whites (use egg whites that have been preferably left 3-4 days in the fridge in a lidded container)(explanation here)
50 gr granulated sugar

Directions:
Place the powdered sugar and almonds in a food processor and give them a good pulse until the nuts are finely ground. Sift if desired (helps keep the shells smooth in appearance).
In a stand mixer fitted with the whisk attachment, whip the egg whites to a foam, (think bubble bath foam) gradually add the sugar until you obtain a glossy meringue (think shaving cream). Do not overbeat your meringue or it will be too dry.
Add the nuts and powdered sugar to the meringue, give it a quick fold to break some of the air and then fold the mass carefully until you obtain a batter that falls back on itself after counting to 10. Give quick strokes at first to break the mass and slow down. The whole process should not take more than 50 strokes. Test a small amount on a plate: if the tops flattens on its own you are good to go. If there is a small beak, give the batter a couple of turns.
Fill a pastry bag fitted with a plain tip (Ateco #807 or #809) with the batter and pipe small rounds onto parchment paper or silicone mats lined baking sheets. Let the macarons sit out for 30 minutes to an hour to dry their shells.
When you are ready to bake, preheat the oven to 280F.
Bake the macarons for 15 to 20 minutes, depending on their size. Let cool.
Once baked and if you are not using them right away, store the shells in an airtight container out of the fridge for a couple of days or in the freezer for up to 2 weeks (longer and the sugar starts to seep out which makes them sticky). Fill the macarons and let them mature in the fridge at least 48 hours prior to eating them.

For the membrillo:

For the mascarpone filling:
8 oz (210gr) mascarpone, at room temperature (or substitute cream cheese)
2-3 tablespoons sugar
2 tablespoons heavy cream

Prepare the mascarpone filling:
In a large bowl, whisk together the mascarpone and sugar until smooth. Add the vanilla and the heavy cream and whisk until all the ingredients are incoporated.

Assemble the macarons:
Place the mixture in a piping bag fitted with a plain tip and pipe a dollop of cream onto half of the macarons. Top with a square of pate de fruits and another macaron shell.

It’s the little things that make me happy. Not just smiling. Truly happy. The little things that instantly make my eyes sparkle, my memories ramble and my step take a lighter beat.

A wine my grandfather served me on my last Christmas home that I spot on a menu in a restaurant downtown. The sound of the foam bubbling away after a cold beer is poured too fast in a glass. The crack of a spoon hitting the burnt sugar crust of a freshly made creme brulee.

Opening a book at the very first pages, heart and mind ready to dive in, wrapped around with words, images, and possibilities. Lifting one’s head after a day at work and be greeted by the most beautiful sunset.

Smelts


Little pleasures. Finding them in all things around us. Sometimes, it can be as simple as seeing a familiar food from childhood. Like smelts. I know, weird… I think the guy behind the fish counter at the market thought I was mildly eccentric when my eyes grew wide open at the sight of freshly caught smelt in his display.

The mere sight if these tiny little fish, bright of their silver and gold reflections, transported me back to my family’s chalet in the Southern Alps of France. Every school holiday was spent there, skiing in the winter, hiking and swimming in the summer. Lots and lots of fishing too.

It was a place meant for simple things. Like a dinner made of pan fried smelts and a big salad. Food did not define every waking moment of our time together. Being together around the table breaking bread and passing plates did. Cousins, uncles, aunts, brothers and sisters. Food was the excuse to be a family, to argue and make up.

I remember my mother dipping the smelts in lemon juice, then breadcrumbs flavored with freshly cut herbs from the garden, and quickly pan searing them in a little olive oil. A good sprinkle of salt and pepper and we were good to go. The more people at the table and the bigger the pile of fish. And the bigger the sighs coming from the kitchen as my mom kept on cooking and cooking the tiny little things.

Pan seared smelts are not most refined dinner items but to me there are the heroes of family moments I cherish everyday. Hence the little skip in my heart when I spotted them at the market. I was sure not to find them again for a long while so I got more than enough for two dinners. I loved seeing my mom’s eyes sparkle when I pulled a bag out of the freezer for us one evening.

I knew instantly where her mind had wandered. I recognized that little smile at the corner of her mouth. I could imagine the memories going through her head. I pulled out a skillet and started preparing dinner. She set the table and told me a few stories.

It was my turn to nurture her. Around something as simple as plate of tiny seared fish. The connection was solid and gave us room to add this moment to the memory bank. And our tastebuds…

Pan Fried Smelts



Pan Seared Smelts:

Serves 4

Ingredients:
2 pounds smelts (they usually come gutted and cleaned up but ask your fishmonger to do it for you if needed)
1 cup Panko style breadcrumbs (gluten free or not – your choice)
1 teaspoon of kosher salt
1/2 teaspoon freshly ground pepper
1/4 cup finely chopped thyme
juice of 2 lemons
4 tablespoons olive oil, divided

Directions:
Rinse the smelts under cold water, dry thoroughly with paper towels. Reserve.
Place the breadcrumbs, salt, pepper and thyme in a large shallow plate. Place the lemon juice in another shallow plate.
Heat up one tablespoon of olive oil in a large skillet over medium high heat.
Dip about 1/4 of the smelts in the lemon juice, then toss in the breadcrumbs. Place them in the skillet in one single layer and sear for about 3 minutes on each side.
Repeat with the remaining smelts, lemon juice, breadcrumbs and oil. Serve immediately with a simple side salad.

Squam Workshop


The first time I heard about Squam Lake and Squam Workshops I said outloud "Ugh?". That was last year. Now, when I hear those words, something inside of me lights up and I say "heck yes!"

Squam is truly a magical place. A three day retreat put together by a group of talented women with the gorgeous Elizabeth leading the troups. I was honored to be asked by Elizabeth to come teach last September and the experience changed me deeply. I understood I needed to be nicer to myself. My inner child resurfaced. The one everyone in my family talks about. I found her again. It made me progress and gave me what I called a work inspired. A direction. I am not letting go of that feeling, no matter how hard it is to express.

Squam Workshop


At Squam, I met women so reserved, it was a gift to see their personalities transpire through their paintings, screen printing or story telling sessions. I also meant women so gifted at expressing themselves and leading others into tapping into their resources, that it was inspiring in itself when I went to lead my workshops there.

Back in September, I taught two food photography and styling class at Squam and really did not want to see the sessions end. The morning was devoted to cooking the food we would be styling and photographing in the afternoon. We had the luxury of the camp’s commercial kitchen, equipped with everything we could need. During one session we made savory tarts and the day after we made cobblers and crisp.

And we shared with everyone…I had the best roomates to come back to at night and share a glass of wine with in front of a warm fire. A couple of slices of tarts or a spoonful of cobbler and we were good to chat the night away.

I was thrilled when Elizabeth asked me to come back and teach again this year. Not once but three times! I just can’t wait. I love how each session combines cooking and photographing so no matter what you forte is with food and pictures, you will learn and have fun in the process. I loved all my students last year and learned so much from them too that I can’t wait to meet the new ones this year!

Squam Workshop


I will be teaching two classes at the Squam June Retreat In New Hampshire(I know it reads that one class is over 2 days but both are all day classes. All day Thursday and all day Friday). Then I will be back in NH at Squam for their September Retreat with two more classes. And I am super excited to be teaching at Squam By The Sea on the North Carolina Outer Banks. Squam Workshop - Ratatouille Tart



Ratatouille Tart:

Makes one large 9-inch or eight smaller 4-inches tartelettes

Ingredients:
For the crust:
1 1/4 cups all purpose flour (or same amount of Jeanne’s gluten free flour mix)
generous pinch sea salt or kosher salt
1 stick (115gr) cold, unsalted butter, cut into 1/2″ cubes
1/4 cup ice cold water, or enough to just hold together the pastry
1 egg wash – yolk, pinch salt, splash water, blended together

Half the quantity of ratatouille recipe here.
1/2 cup feta or goat cheese.

Directions:
In the bowl of a food processor fitted with a plastic blade, pulse together the flour and salt. Add the cold butter all at once. Pulse until the flour is the size of tiny peas. Drizzle the ice water through the mouth of the food processor, while pulsing. Stop just when the pastry begins to come together. Empty the bowl onto a lightly floured surface and form into a disk using your hands. Wrap with plastic wrap and refrigerate for at least 30 minutes. This can be done up to 2-3 days in advance. You can of course, do the whole thing by hand.

Once the pastry has rested, preheat the oven to 375F. Roll it out on a lightly floured surface, to about 1/4″ thickness. Line the tart pan with the pastry (or several tart shells if doing small ones). Line with parchment paper and fill it with pie weights or dried beans and bake in preheated oven for 20 minutes. Remove the parchment and weights, brush down the bottom, sides and edges of the tart shell with the egg wash using a pastry brush. Return the tart pan to the oven and bake another 10 minutes or until golden. Remove from the oven and set aside to cool slightly.
Fill the tart shell(s) with the ratatouille, top with the feta or goat cheese and return to the oven for about 20 minutes.

Blackberry Cobbler:

Makes 6 to 8 (depending on your ramekins)

Ingredients:
For the fruit:
4 cups blackberries
2 tablespoons honey
juice and zest of one lemon
1 tablespoon cornstarch
1 teaspoon cardamom (optional)

For the crisp:
1 cup Jeanne’s all purpose gluten free flour mix (or same quantity regular flour)
1/2 cup (100 gr) light packed brown sugar
1 stick (113 gr) butter, softened

Directions:
Preheat the oven to 350F (convection or regular) and position a rack in the center. Prepare the fruit filling:
Place the blackberries in a large bowl with the honey, lemon zest and juice, cornstarch and cardamom. Toss well and reserve.

Prepare the crisp topping:
In a medium bowl, combine with your fingertips or a pastry blender the flour, sugar and butter and form large clumps of dough. Refrigerate at least an hour or freeze overnight.

Assemble and bake:
Divide the fruit filling evenly among 6 gratin dishes or ramekins. If the crisp dough was refrigerated, just break apart clumps of it over the fruit with your fingertips. If it was frozen, you can simply grate it on top with a large cheese grater.
Bake for 20-30 minutes. Let cool.

Steamed Mussels With White Wine & Key Limes


I hope that everyone had a great holiday break and celebrated the New Year as they wished. Quietly or with lots of fireworks and revelers. I don’t know about you but even if I don’t make resolutions I truly enjoy this feeling of starting clean that comes with January. Twelve new months, yours for the taking. Yours to create, get inspired, start, accomplish…There is something exhilarating about the new year.

Personally, it gives me an even greater wish to leap, with all my fears at times, or without any at others. It also fills me with the desire to reset the clocks, just like we do with a new calendar. Internal clocks, personal clocks, work clocks. Setting priorities and goals. Making inspiration and mood boards.

Beach


It’s been good to dive back into creating recipes, writing the stories around them and thinking about their photographs. There are lots of fun blog projects in the planning. In the middle if all these "happy new year moments", my family suffered another great loss yesterday. Once again, without my family being close enough to hug and comfort, I turned to the only things I knew to do at the time. Clearing my head, getting inspired and cooking.

Beach


Anchoring feeling of loss to the present, to tangible things I could do and explain, I took my camera and headed to the beach. I observed quietly. My fingers got numb gripping my camera straps so hard. But the colors, the quiet empty beach before me…blues, grays, reds… They put my mind at ease. The waves crashing at my feet truly reminded me that life is "it". It’s full if we make it so. It’s not perfect because we make it so. There is life inspired in everything.

On my way home, I stopped at the fish stands at the end of island and got a bag of fresh mussels. My comfort food. It was close to lunch time. Convenient to start cooking. Like most of us, beside being a necessary act of survival, food is also part of our story. My food stories involve every member of my family. They include many friends. They are full of laughters, jokes, pranks, animated discussion, etc… They are full of life.

Fangipane Cake


Deeply aware that every part of me was now bursting with energy and inspiration, I cooked and photographed. I found my rhythm in the things I knew to be my constant. After a much needed break over the holidays it felt good to be back in it. Normalcy coming back little by little.

Key Limes


Steamed mussels are pretty much my go-to super fast dinner or lunch. They really take very little time and are super flavorful when cooked with some white wine, garlic and parsley and finished off with a spritz of lime juice for example. Ok, they are a bit messy but that little imperfection is part of their charm. Just like the beaten up Key limes I got at the store (in the reject box where overdue fruits are sold for pennies to the pound). I am founding imperfection really soothing lately.

Frangipane Cake


The cake was an experiment that did not turn out the way I hoped for but which did not take away any of the wonderful taste or aroma. I had made a small galette des Rois over the weekend and had a half quantity of frangipane left. I layered it with the cake batter and swirled it, hoping it would create a nice design when cut through. I apparently did not swirl hard enough. Imperfect result. Perfect taste. Paired with a cold glass of milk and I suddenly felt my entire body relax.

As cliche as it may sound, food truly has magical powers. Well…cake does…!

I truly wish you the happiest of New Years. Live fully. Play hard. Leap and take chances. Tiny or big. Do what makes you truly happy.

Fangipane Cake



Steamed Mussels:
1 pound fresh mussels
1 cup of white wine
1/3 cup seafood stock (or water)
2 cloves of garlic, minced
2 tablespoons chopped fresh parsley
lime or lemon juice (I used a Key lime)

Clean the mussels by scrubbing them under cold water and remove the little fuzzy "beard" that hangs on some of them.
Place a large skillet over medium heat and add the white wine, stock and garlic. Bring to a strong simmer, add the mussels all at once. Cover the pan with a lid (or if you are like me, lid-less, another skillet of the same dimension). Let the mussels cook 6 to 8 minutes. Thrown in the parsley, toss with the mussels. Discard any that did not open and serve immediately with some of the an juices and a spritz of lime or lemon.

Buttermilk & Frangipane Cake:

Makes two 8-inch loaves

Ingredients:
1/2 cup (125ml) buttermilk
1/2 cup (125ml) sour cream
1/2 cup (100gr) sugar
2 eggs
1/2 cup (125ml) olive oil
zest and juice of one lemon
2 cups (280gr) Jeanne’s gluten free all purpose flour mix (or 2 cups regular flour)
2 teaspoons baking powder
1 portion frangipane filling (recipe follows)

Directions:
Preheat the oven to 350F. Position a tray in the middle. Grease two loaf pan and line the bottom with parchment paper. Place the pans on a baking sheet. Set aside.
In a large mixing bowl, whisk together the buttermilk, sour cream, sugar and eggs until pale (takes about 2 minutes). Add the oil and lemon juice and zest and mix until well blended. Add the flour mix and baking powder and whisk about 50 strokes until the batter is smooth. Divide half the batter in between the two pans. Top each pan with the frangipane filling over that first layer. Divide the remainder of the cake batter in between the two pans to cover the frangipane.
Bake for about 40-45 minutes (on convection) to a hour (regular) until a knife inserted in the middle comes free of raw batter.

Frangipane:

Ingredients:
1/2 stick (55 gr) butter, softened
1/4 cup (25gr) sugar
1/2 cup (50 gr) ground almonds (blanched, slivered, whole, your call)
1 egg
2 tablespoons (30gr) heavy cream

Directions:
Place the butter, sugar, ground almonds, and the eggs in a large bowl and whisk until smooth (can also be done in a food processor). Add the cream but stir in it instead of whisking not to emulsify it or it will rise while baking.
