36-Hour Chocolate Chip Cookies & Threadless Giveaway!
Cookies. Milk. Afternoon showers. Looking at the shoreline through the window. That was just the medicine needed the other day. Even if just for the enticing aroma of warm chocolate wafting through the house. I did not know the power of chocolate chip cookies until I moved to the US though. We don’t really do those back home. We have eclairs, macarons, financiers. These I knew as my pick up-feel better-never let me down treats. Until I met B.
Turns out I married a chocolate chip cookie monster. It does not matter which kind comes out of the oven, a tray usually disappears in its entirety as soon as the cookies are cool enough to handle. And before I am done with the batch I can pretty much start over. His favorites are hands down chocolate chip cookies and I think I have baked 100 different recipes so far. Always in search of the next best one.
I must say, after years of marriage and oodles of batches behind me that I get it. the French have their baguette and chocolate bar as a snack, here it’s cookies and milk….and I love that too. Unlike B. I am good after a couple of cookies but I had to find a gluten free recipe now and one that he would not even blink twice about trying. And liking.
I really had not particularly trying to find one until the good folks at Threadless contacted me about a promo they were doing. I have a personal rule not to do product review here, mostly because I hate to commit to a deadline for one when work is already full of deadlines as it is. But it’s Threadless tees…I love them. I bought my first one four years ago and probably bought over a dozen for friends and family since then. They are awesome. Different, fun and they promote artists and individual talent.
Before I agreed I checked the selection they wanted to promote, trying to tie it in somehow with this blog and give you something back at the same time in the form of a new recipe. You can guess I fell in love with the Cookie Loves Milk design. And I had the perfect reason to search for that gluten free chocolate chip recipe my repertoire was missing.
I picked the most reliable gluten free source I know, my friend Shauna from Gluten Free Girl and The Chef. I know the extent with which her recipes are developed and the love she puts in making them for us around. If you doubt it, watch this video trailer for their upcoming cookbook. See what I mean? I picked her cookie recipe in the Blog Aid cookbook we both participated in to raise funds for the Haiti this past winter. Tons of your favorite bloggers contributed pictures and recipes! And dorky as I am, I baked in my brand new Cookie Loves Milk tee….
You know what I love about that tee-shirt? It brings a smile on everyone’s face. Even the cranky bank teller giggled. Five seconds of giggles in your day and you have already done a great deal for your inner self. Smiling. The good for the soul kind of workout. Something I am definitely happy to promote and stand behind. Not to mention that this tee is so comfortable to wear I almost went to bed with it..eheheh! The flip-flops that came along? Just what I needed for the beach…

36-hour Chocolate Chip Cookies – originally adapted from David Leite from Leite’s Culinaria, now adapted from Shauna’s version.

1 cup sorghum flour
1 cup corn starch (you can sub tapioca starch)
1 cup potato starch
1 cup millet flour
1 tablespoon xanthan gum
1 1/2 teaspoons baking soda
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
2 1/2 sticks unsalted butter, at room temperature
1 1/4 cups brown sugar
1 cup plus granulated sugar
2 large eggs, at room temperature
2 teaspoons vanilla extract
2 cups chocolate chips or chocolate chunks
Sea salt
In a large bowl, whisk together each of the flours and "starches" along with the xanthan gum, baking soda and baking powder.
In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter and the sugars on medium speed for a couple of minutes. then mix for 1 minute more. Don’t overmix. the eggs, 1 at a time, beating well in between each addition and scraping the sides and bottom of your mixer bowl if necessary. Add the vanilla extract and beat an extra 30 seconds.
Add the flour mixture into the batter, 1/2 cup at a time, mixing just until the dry ingredients are coming together. Add the chocolate and mix briefly to incorporate.
Cover the dough with plastic wrap and refrigerate for 36 hours.
When ready to bake, preheat the oven to 350°F, position a rack in the middle of the oven and line baking sheets with parchment paper or a non-stick baking mat.
Scoop your preferred size of dough balls onto your baking sheet, 2 inches apart from each other. Sprinkle the tops with the sea salt.
Bake the cookies about 12-15 minutes, depending on the size of your cookies or until golden brown. Let cool the cookies 10 minutes on the baking sheets before transferring to cooling racks.

Such an adorable tee! I love it. With chocolate chip cookies, it's the same for us, but my big challenge was to re-create mom's cookies that we grew up on. I really do need to try these ones. They're gorgeous :).

My favourite cookie of all time is a chocolate chip shortbread cookie that my Mum used to make back in the early '90s… she'd freeze batches of them and I'd just sneak them out of the freezer still icey. I LOVED them.
We don't make them anymore because I love them a little too much, and could happily eat 6-8 in one sitting.

You can't go wrong with chocolate chip, but I think my favorites are cookies I found on another blog that have dried apricots, almonds, white and semisweet chocolate chips in them. I was sure they would be too full of stuff, but instead they taste fantastic!

I have a friend who makes the best molasses cookies in the universe. I don't think I've ever actually seen them after they've cooled…we normally gobble them up as they come out of the oven, sticking our fingers into as many as we can to "mark" them as ours 😀

I made these cookies for my friend's wedding last year – they were a huge hit, totally worth having to cart all the ingredients onto a plane from WI to Boulder 🙂

I love chocolate chip, but I especially love a slight variation on them for nostalgic reasons. My grandma always makes chocolate chip cookies with Smarties (chocolate candies, like M&Ms)at Christmas. They're a family favourite, and get wolfed down pretty quickly. I can't have gluten now, so both Smarties and tradiational chocolate chip cookies are out, but I'll have to try these out soon. 🙂
Another favourite is chocolate chip and toffee bit cookies. Mmmm.

In Brazil there is a naturally GF type of cookie called sequilhos. don't know how to make them…maybe that's a good project 🙂

Oh my goodness there is something so sweet about taking chocolate chip cookies so seriously, it made me laugh a little at work (in a place that is too quiet to laugh out loud). I have battles with finding cookies that aren't too sweet, so for me a recipe for zuchini lemon cookies is my favorite one on hand (though, if we are going to split hairs, they are a little closer to tiny cakes). A favorite cookie, that is so hard. I have three:
1 – The Nestle chocolate chip cookie recipe, adapted with half milk, half bittersweet chocolate. I roll the dough in chopped nuts (pecans/walnuts)before baking, so they get a lovely toasted flavor.
2 – Almond cookies sandwiched with raspberry jam and dusted with confectioner's sugar (a Valentine's day treat).

Thank you for the gluten free addition – my doctor recently prescribed that I cut gluten from my diet so this is a wonderful start. Oh goodness, I don't know if I can choose just one favorite… After flip-flopping between everything from oatmeal raisin to double chocolate, I'm split between snickerdoodle an white chocolate macadamia. They're so delicious, yet both utterly sinful. I suppose I'll go with the white chocolate macadamia because there's nothing like that satisfying crunch and end of sweetness to get me going. Speaking of which, I ought to go make some now…

My very favorite cookies are what I like to call Cowboy cookies. Although my mother corrected me the other day and said they were more of a ranger cookie. They are Chocolate Chip cookies with amlonds, pecans, coconut and cornflakes. Delicious! I am not sure what makes them Cowboy-like or Ranger-like but I think Cowboy sounds more rough and tough then Ranger. 🙂

I do love chocolate chip cookies. In Martha Stewart's Baking Handbook, she has a great recipe for white chocolate butterscotch cookies which are even better if you add toffee bits to them! Also, I have a great recipe for macadamia nut and crystallized ginger cookies which are divine! They have the texture of these French cookies with dried currants in them… Maybe I simply love all cookies! I don't think I can pick a favorite 🙂

I think my favorite cookie is probably chocolate chocolate chip cookies, or the oatmeal chocolate chip cookies my mom made when I was little.
I always find that refrigerating the dough makes the cookies taste a million times better.

Being the boring person I am (jk), my favorite cookie IS the chocolate chip. Best I've ever had–at Levain's Bakery in NYC! Jacques Torres is a close second and the two cookies are nothing alike.

i am a chocolate chip cookie baker. i grew up on my mother's, who baked them regularly for my father and goodness forbid we children eat DAD's cookies!
now i bake my own, having found better cookie recipes than my mom's and my husband will eat an entire batch before they're cold. 🙂

my worlds are colliding … I found you through Shauna (the puff pastry post!), I live in Threadless' home town (and even know a few of their employees) … how'd you all find each other?
That being said, I have to say Shauna's recipe (the one you adapted) is my newest favorite. And a new favorite among my friends who all request it for special events … not konwing/caring/understanding what gluten-free means. They just love the cookies … btw, for a real treat, try smoked sea salt. Just sayin'

Nothing beats a solid chocolate chip. My childhood favorites were white chocolate macadamia nut nibblers from Mrs. Field's counter, or a chewy lemondrop cookie from the food cart outside one of the shopping clusters my mom would visit 🙂

If I'm making them, my favorite is the classic Tollhouse chocolate chip cookie (sans nuts).
If I'm buying them from a local shop, the winners are the salty oat cookie and chocolate salty oat cookie sold at my local tea house.
I will say, though, if I'd grown up with macarons, I could see them being my favorite.

i can't (never!) resist Indonesian traditional cookies. I do love Chocolate chip cookies, but my fav always my childhood cookie indulgent. my all time fav was called Nastar.look a truffle like,some round shape and some oval shape. Its a slightly sweet dough with cooked grated fresh Pineapple-sugar-cinnamon filling (cooked until no water in it,so it can be shaped). This cookie will so much popular when festive days in Indonesia (Ied Mubarak,Christmast,Chinese New Year) its a must cookie to have for every family in Indonesia during the festive days..The exotic and fresh of pineapple filling blend perfectly with slightly nice crumbly cookie dough.. Nice comfort cookie.
I will still love to eat them after 5's !

I first learned how to make Snickerdoodles. Oatmeal cookies are highly prized to me. And Gingersnaps. And Chocolate Mexican cookies filled with dulce de leche. Meringues are also delicious. And ATK's Triple Chocolate Cookies.

Have to say that my favorite cookie is the oreo. Though I've made homemade versions that came out well and I was glad to know what was in them, I think it's funny that no variation really improves on the original – double stuff, chocolate, vanilla – doesn't matter. It cannot be improved upon.

I have to admit to reading those irratating and sometimes amusing 'junk' emails passed on from friends and family, and found THE most delicious chocolate chip/flake recipe. It makes an ENORMOUS amount (something in the region of 120 cookies), but they never ever have lasted more than a week in our home! Sometimes it pays to read between the 'important' emails 🙂

"C is for Cookie!" I can eat just about any kind of cookie, but I just can't choose one favorite between my Mom's chocolate chip cookies and my Sister-in-law's peanut butter-hershey kiss cookies. Those two are the all time best! A close third though are the candy cane cookies we twist together for the winter holidays. And right behind that I'd have to say that my Sister-in-law makes a darn fine homemade chex mix and no, that's not a cookie, but the saltiness of the chex mix really complements the sweetness of the cookies! Yum!

My favourite cookie is called Kueh Makmur aka Fouram Cookies. It's a celebrative cookie in South East Asia commonly served during Chinese New Year and Deepavali (Festival of Lights). I love the way it crumbles and, literally, melts in your mouth. Commercially made ones comes with crushed peanuts fillings. I tried to make it but it's so hard to shape by itself, least, the fillings. I had no choice but to mix everything together. I gave it away to families and friends in America as Christmas cookies and they love it!

After making almost 1000 cookies as favors for my wedding (you know, spending a week baking when I SHOULD have been relaxing!!) I think my favorite are the Grown-Up triple chocolate cookies I made, complete with a shot of espresso in the batter… or the Snickerdoodles. I have a huge soft spot for the simplicity of snickerdoodles 🙂

I am thrilled to see your gluten free recipes. I would love to make something similar as a gift for a friend. She has been recently diagnosed with severe allergies to soya, dairy and eggs. Can you recommend any good alternatives for butter and eggs in this dish?

The best I've had so far:
I make chocolate chip cookies out of homemade peanut butter, coconut flour, a bit of oil (or melted butter), a bit of honey, and chocolate chips. You could add anything into the mixture – mashed bananas, oats, dried fruits, nuts, jam toppings… just adjust the amount of oil or butter until you get the desired consistency :).

I'm a fan of the good ol' Toll House recipe for chocolate chip cookies, though I've been itching to try Kim Boyce's version in Good to the Grain ever since I got that marvelous book for Mother's Day… and for a delicious variation on the chocolate chip cookie, I love Alice Medrich's nibby pecan cookies in Bittersweet… there's a log of that dough in my freezer at almost all times…

A bakery in my neighborhood has these amazing flat, brittle almond cookies. I'm not sure what they're called but they're delicate, crispy, chewy afterwards and so delicious. It's too bad they're not a complete source of nutrition because if I were reborn as a pet, I'd want those cookies for kibble. Every. Day.

Chocolate cookies are definitely a bonding experience. Some of my first memories of the kitchen are baking cookies with my parents and then the glorious day when I turned 8 and made them all by myself for a bunch of guests!
I love the idea of having gluten free cookies…a lot of my friends have a gluten intolerance and they should be able to join in the bonding too!

my mum used to bake cookies with coconut with a blot of marmelade in the middle.

These will be nice for my zumba teacher who needs to eat gluten free. My favorite cookie is one I can't find anywhere. It was made by the Amish in Pennsylvania. It was a molasses, chewy cookie. It was big and I ate way too many of them. I looked forward to market day because of those cookies.

Although we are a family of cooks my parents and grandmother made cakes not cookies.
When I set up my own household I taught myself to make cookies and I love them all: peanut butter, nut melts, choc chip, ginger.

Sorry if that comment appears for the second time, but it was a total disaster yesterday.
Helen, your attitude towards cookies make me think that we Europeans do not love them as much as the Americans do. However, I share my entire love for Lavender Hearts, also known as The Heart of Provence 🙂 Maybe they do not fit completely the idea of cookie, but there is no better treat if you are in love with summer, south and those lavender fields that touch the horizon. So simple and so rich because of the chopped flowers- for sure you know these 🙂

I love chocolate chip cookies, the staple:) My favourite are toll house, ever since I was old enough to make them with my mom.
At the farmer's market this week I bought a chocolate macaron from a lady- I have not seen ANY in my city- j'en raffole!!

i have an amazing chocolate chip cookie recipe from a friend who used to work at Martha as a food editor. It has the amazing gooey, buttery chocolate melting on your fingers quality. Yum.

My favorite cookies are Spekulatius. unfortunately they require a special press- so I can't make them gluten free at home. But they sure are delicious! The perfect holiday cookie.

My favorite cookie is not a sweet one. It's called kaastengel here in Indonesia, a Dutch influenced cookie made with (originally) Edam cheese or any other aged cheese. I can eat a whole jar of it on my own.. 🙂

My favourites are ones my mum used to do using fresh milk cream. It got a bit sour after a couple of days on the fridge and that is what gave them their distintc flavour. Ohhh, my mouth is watering already just remembering.

My favorite cookie of all time was a puffed wheat cookie from an old Joy of Cooking cookbook.
But being gluten free means that this recipe must be adapted. I'm thinking millet puffs might bring back my joy.

I came in search of hints on how to get my macarons to NOT stick to the pan, and found this lovely contest! I love the nestle chocolate chip cookie recipe, but with browned butter on the brain I'm thinking perhaps that might be a delicious reason to bake up a batch – gluten free no, but I don't need a reason to try 2 recipes at all!

Oatmeal gumdrop was a favorite at a summer camp where I worked. It took a few hours to chop all the gumdrops and walnuts for a massive batch to feed hundreds, but they all disappeared!

I think my favorite cookie would be oatmeal lace gluten free cookies. I can have gluten but a classmate of my sons cannot, there is no difference in flavor between the gluten free and regular version, he was so happy to be able to share in the treats my son brought in for his birthday.

My boyfriend is a cookie monster, too. He always asks me to make smaller batches so that he won't devour them all straight out of the oven. I can't even begin to count the number of times I've made cookies for him during college; it was the perfect pick-me-up after or during a long night of studying. His favorite is white chocolate-chip macadamia nut, but I'm more of a snickerdoodle/peanut butter kinda girl. 🙂 I'm hoping to try out salted caramel soon!

I know this post is older and you've done a giveaway and I'm late to the party but you made me smile with your comments about our American staple of chocolate chip cookies!
Several years ago, Denver hosted World Youth Day, when Catholic teenagers from the world over converge on one city for fellowship and on the last day a Mass given by the Pope. Yes, him, the real Pope.
A friend mentioned that she was hosting some kids from another country and because she knew I had some space, I offered to as well. I had two girls of jr high and high school age so we agreed to take four teenage girls from Paris for two weeks.
We (and I think they) had the time of our lives; we were so lucky to have the girls we got. Three things remain vividly in my memory of that visit.
1. As soon as they all piled in the car, despite two of them not really speaking any English, they were all singing along to every pop song on the radio.
2. The MOST important thing they had to accomplish during their trip was to purchase some Levis (they pronounced Levas) and Nike (no long 'e' there either) products.
3. After baking them a batch of chocolate cookies to pack in what we came to call 'French lunches' I think they were willing to eliminate the need for Nikes if I would procure for each of them a big bag of chocolate chips. Thankful for Costco, that was an easy task and I heard more about those chips both here and after they returned home than anything.
So your story brought back some delightful memories of that fun time…when we grew so fond of 4 girls from Paris and we hope they will always remember as fondly the family from Denver!
