Multi Potato Goodness

Let’s back track to a couple of weeks ago when I had tooth issues. Bear with me, something incredibly tasty came out of one little inconvenience. Well, it did not feel "little" at the time but in the grand scheme of things and with two more family members in bad shape, you won’t hear me complain of anything. It was just a tooth and one minor setback not the end of the world…

I could not eat more than two or three spoonfuls of soup at at time. I started dropping weight. If you know me, you know this is the last thing I need. I was starting to lack energy while my gigs were getting more intense. Not a good combination. I knew I could easily fix this by making meals that packed a punch in nutrients. I could eat soups. I devised a plan to make a big batch of a super nutritious soup and to keep a bowl by my side at all time during the day. A few spoonfuls there, another couple here and within the course of the morning, I would finally have eaten a normal lunch. Same thing for dinner.

What soup did it? A Salmon Bisque, full of good-for-you wholesome ingredients such as wild pacific salmon, potatoes, Vidalia onions, zucchini, garlic, fish stock and herbs. I could make it thin, chunky. I could change the vegetables with whatever was in the fridge such as subbing carrots for the zucchini, lefover rice instead of potatoes, etc… As long as I had a good combo of protein, carbs, fat and veggies, I was good to go. Getting all my nutrients helped heal at a normal pace. I did that for five days and it worked. Hooray!

Radishes

Not going to lie, but the first thing I sank my teeth into after that episode was a big plate of crunchy radishes, a plump kebab of local shrimp and a big slice of tarte tatin. Rhubarb tarte tatin. With plenty of buttery goodness from the puff pastry crust and long pieces of caramelized rhubarb that just melted in your mouth. The latest edition of Donna Hay magazine was just chock full of tatin recipes with puff pastry. And well, those two words tend to make weak in the knees as soon as I see them..

Since I can occasionally eat gluten (once or twice a week without showing signs of Meniere’s) I figured a Tarte Tatin would be a darn good way to go for it. And it was. And I have one in the oven as we speak. I wish I were kidding. But this one is for my in-laws. Because they can’t ever have too much tarte tatins. Or rhubarb.

After a nice bowl of soup. This tarte is definitely melt in your mouth decadence of the best kind.

Creamy Salmon Bisque:

Makes enough for 6 to 8 large portions.



Ingredients: 

 1 tablespoon olive oil 

3 small baby Vidalia onions (sweet onion) or 1 large onion, sliced 

1 tablespoon chopped fresh rosemary 

3 zucchini, sliced 

1/2 pound small potatoes 

3 garlic cloves, minced 

1 pound wild salmon, boned, skinned and cut into large cubes 

4 to 6 cups seafood stock 

salt and pepper to taste

Directions:
In a large stock pot, heat the olive oil over medium high heat and sautee the onions and rosemary for 2 to 3 minutes or until the onion is translucent. Add the zucchini and potatoes and sautee another 2 minutes. Add the garlic and salmon and saute for a couple of minutes, making sure not to burn the garlic. Add about 4 cups of seafood stock and pinch of salt and pepper. Bring the mixture to a boil, reduce the heat and simmer, uncovered for 10 minutes. Remove from the heat, let cool for about another 10 minutes and puree in a food processor or blender (immersion blender works great too) until completely smooth. Add more stock to adjust the consistency to your liking. For example, we like thick soups but some don’t – adjust accordingly. Salt and pepper to taste if needed. Serve warm.

Rhubarb Tarte Tatin, very slightly adapted from Donna Hay magazine: 

Serves 6 



Ingredients: 
1 sheet of puff pastry (I made my own using this recipe) (you can also find a gluten free puff pastry here)
3/4 cup (165g) sugar 

1/4 cup (60ml) water 

2 tablespoons (50gr) butter 

1/4 teaspoon cardamom 

1 1/2 pounds rhubarb, cut into 10cm long pieces (4 inches long) 



Directions: 

Preheat oven to 375F. Roll the puff pastry to 1/8-inch thick. Cut out a 22cmx32cm (8.5 inch x 12.5inch) rectangle from the pastry and set aside.
Place the sugar and the water in a small saucepan over medium low hear and cook, stirring until the sugar dissolves. Increase the heat to medium high and cook for 8 minutes, until the sugar turns to a caramel color Add the butter and cardamom and stir until the butter is completely melted and combined with the caramel.
Pour the caramel into a 20cmx30cm (8×12-inch) baking pan and arrange the rhubarb pieces over it.
Top with the puff pastry and tuck the edges under a little. Place on a larger baking sheet and bake for 30 to 45 minutes. or until the puff pastry is cooked through. Allow to cool for five minutes or so. Loosen the edges with a knife. Invert the tart onto a serving tray.

An Impromptu Picnic: Salmon & Quinoa Salad and Meringues With Creme Fraiche & Berries

It’s been a game of hide and seek in our household for the past month or so. My better half has been playing music jobs left and right, on top of his day job. I, on the other hand, have been buried in the studio either shooting and editing until early evening, hoping for an evening when we can just chill. There have been a lot of "just changing clothes and heading out! I love you!" and "I won’t be home for dinner" exchanged.

It’s ok. After so many years, we are used to the fact that some months his schedule makes him a passing ghost and some other months, well, it’s my turn to hop from plane to plane for work or workshops. On a side note, for an updated workshop schedule, click here. It’s a rythm we understand and adapt to happily. His passion for playing music brings him so much that I would be the last one to complain. Same goes the other way. He knows how much I love to travel and share my passion about photography with others and help them as much as I can, and lets me be where I need to be. A happy mate is a happy house…

Radishes


Well, even with our motto of "doing things independently together", there are those moments when the in passing "love you" needs to turn into a long hug, a conversation. A sit down and a cup of coffee. A date night. Whatever it is that makes it worth it. There are so many nights with a single plate on the table, so many girls night out or in, so many chick flick marathons that one can take before the string starts wearing thin. My best way to fix that is to pack some food, a blanket, our kite and our fishing rods and head to the beach. A picnic. A moment that we create.

I started planning some of our favorites to take along. A Salmon & Quinoa Salad, a big bottle of lemonade, and to finish a cross between a Pavlova and Eton Mess. A Meringue with Creme Fraiche and Berries. Something healthy and light and something completely decadent but just as light to the palate.

I was about to put all our victuals in the car when the sky became black and thunder rolled up its big drums. Within minutes, it started pouring. So much for a picnic at the beach. Well…c’est dommage (too bad) but I was not going to let this one day off together slip away. I pushed the furniture in the living room, spread our picnic blanket on the rug and laid out our meal.

We sat there, with the pups sleeping soundly, listening to the sound of the rain and feeling grateful for this one little moment alone. And…grateful to be only steps away from the kitchen to go for seconds…!

Salmon Quinoa Salad



Salmon and Quinoa Salad:

Serves 2

Ingredients:
1 cup uncooked quinoa
2 cups water
1 sprig oregano
1 garlic clove, smashed
One 6 oz salmon fillet
1 to 2 cups arugula leaves
1/2 cup edamame
6 to 8 medium radishes
olive oil and vinegar
salt and pepper to taste

Directions:
In a large saucepan, combine the quinoa, water and oregano. Ad a pinch of salt and some cracked pepper. Bring to boil. Reduce the heat and simmer until the quinoa is translucid and soft. Remove the oregano and garlic. Let cool.
In a sautee pan heated over medium high heat, add a teaspoon of olive oil and cook the salmon for about 3 minutes on each side (longer if the fillet is thick). Season with salt and pepper. Remove from the pan and let cool.
Assemble the salad by dividing the quinoa arugula, edamame, radishes, and salmon among plates (or cups that you can place a lid on if traveling). Drizzle with olive oil and vinegar to taste.

Meringue With Creme Fraiche and Berries:

Serves 6

Note: Start this dessert the day before you serve it. The meringue needs to sit in the oven overnight (off) and the homemade creme fraiche requires you start it the day before you assemble the dessert. It is so easy, I wonder why I don’t make it more often..oh yeah… not as calorie free as it tastes! You can purchase your own creme fraiche if you wish.

Creme fraiche:
1 cup heavy cream
2 tablespoon buttermilk

Place the heavy cream in a non reactive bowl. Stir in the buttermilk. Cover with plastic wrap and let sit on the countertop overnight. The next day, refrigerate until ready to use.

Meringue:
2 egg whites
2/3 cup sugar

Preheat the oven to 350F and position a rack in the middle.
In the bowl of an electric mixer, whip the egg whites to a thick foam at medium speed for about 3-4 minutes. Slowly drizzle in the sugar, a few tablespoons at a time until the meringue is stiff and glossy.
Line a cookie sheet with parchment paper or a silpat and form circles of meringue with about 1/4 cup of the batter for each. You can make them as thin or fluffly as you wish, smaller or larger. Mine were about 3 inches round.
Place in the oven, turn the oven off and leave them overnight.

For the berries:
1 cup raspberries
1 cup blueberries
1 cup blackberries
1 tablespoon honey
juice of one lemon

Mix carefully all the berries together with the honey and lemon juice. Reserve until ready to use.

To assemble:
Place a meringue round on a plate. Whip the cream fraiche for a minute to fluff it up and spoon some on the meringue. Top with the berries and drizzle with some of the juice they gave out while sitting.
You can also, layer the meringue, creme fraiche and berries in glasses and pack them up in your picnic basket.

I hope you all had a fantastic holiday weekend. We kept it low key having dinner with a good friend on Christmas Eve and with family on Sunday. Yesterday was spent with friends again over a light lunch and a relaxing afternoon.

Thank you everyone for the sweet and kind words of condolences about my grandfather’s passing. It made this weekend a little easier to navigate. Oh there were tears, trust me…but they were immediately followed with a feeling of peace. My heart was full of all the goodness one can give and receive in a lifetime. Pear Gratin


Every year at Christmas, smoked salmon has to be part of the appetizer offerings at my parents'. It’s tradition. Salmon, blinis and foie gras with brioche toasts. Since we started last week without any firm plans for Christmas Eve, I was making my own plans to prepare a nice dinner for two and relax on the back deck watching all the docks decorated with Christmas lights. A sight to be seen…for sure.

Pear Gratin


On the menu was a Salmon Bisque, followed by crab cakes and finished off with a Pistachio and Pear Gratin. As the soup was simmering, my inbox started buzzing and within minutes our plans had changed for the 24th. Not a problem. From the scents wafting through the kitchen, we would not be disappointed to have it for lunch the next day. The soup was a cinch to put together, light and tasty. Everything one can ask for during busy times and especially in between a few copious meals.

Red Currants


The gratin was a unexpected hit with Bill and one I will repeat soon and with other fruits too. I had a surplus of tiny cute Forelle pears from a couple of projects and was trying to find other ways than tarts and tartlets to use them. Nothing wrong with those…trust me. I am the first one to slow down for a slice of pear tart!

This dessert is the perfect results of many kitchen happenings all coming together at once. Too many pears, red currants finally being available now that the temperatures had dropped, a pound cake made on a whim one night I could not find sleep and there you have it. A light, fragrant, cozy and comforting vanilla custard blanketing thin slices of cake with tart little pops of red currants every other bites.

From the look of immense delight at the dinner table the other day, I can safely say these two recipes were a huge hit. Making another batch of soup today!

Pear Gratin



Salmon Bisque, adapted from Saveurs France:
Serves 4 to 6

Notes: do not worry about how fine a dice, cube or chop, the ingredients are since they are all going to be pureed. Croutons are somewhat of a tradition in my family with soups and I simply toss some cubed day-old bread with a little bit of olive oil, salt and pepper and toast that over the stove. Crème fraiche is a perfect topping for the soup but sour cream is a fine substitute.
Salmon can be expensive, so I usually ask my fish guy at the store to give me the good scraps they cut off when filleting whole fish. They are most happy to find a taker and usually give me half price on those.

Ingredients:
1 tablespoon olive oil
2 leeks, white parts only, well cleaned and sliced
2 garlic cloves, minced
2 carrots, sliced
2 small red potatoes, peeled and diced
½ cup dry white wine
3 cups vegetable stock
1 pound skinless salmon fillets, cubed
salt and pepper to taste
croutons, crème fraiche and chives to garnish

Directions:
In a large stock pot, heat the oil over medium. Add the leeks, garlic, carrots and potatoes and sautee for about 10 minutes, stirring occasionally. Add the white wine, stock and salmon. Season with a little salt and pepper. Bring to a boil then immediately reduce the heat to a simmer and cook for about 30 to 40 minutes. Remove from the heat, let cool and puree until smooth (see notes). Check the seasoning and serve. Top each bowl with some croutons, crème fraiche and chives if desired.
Earlier this year, the nice folks at Blendtec gifted me with one of their mixers and this is what I now use all the time to puree and blend soups. Takes less than a minute for super smooth bisques and soups. A immersion blender or any good capacity and sharp bladed food processor will also do great here.

Pistachio and Pear Gratins, adapted from Saveurs France.

Serves 6

Notes: I love my friend Jeanne’s recipe for pound cake. I had the pleasure this summer to work with my friend Clare on Jeanne’s gluten free baking cookbook and had to make about 75% of the recipes for photography. I got to tell you, Jeanne is about the only person I now trust for gluten free baking anything. Everything is always tasty, correct and of great texture. The recipe she came up with years ago for her gluten free all purpose flour blend is super easy and substitute cup for cup with regular all purpose flour so feel free to go gluten free or not without fear.
Once the pound cake is made and cooled (feel free to prepare it a day in advance), the assembly comes together in no time.

Ingredients:
6 small Forelle pears (or 2-3 medium pears)
12 thin slices of Jeanne’s pound cake (minus the glaze)
1 cup whole milk
1 teaspoon vanilla extract
3 eggs
½ cup sugar
½ cup red currants or other berries
2 tablespoons finely ground pistachios

Directions:
Butter a 9×13 gratin dish or individual ones and preheat the oven to 350F. Position a rack in the center.
Peel, core and thinly slice the pears. Set aside (don’t worry about oxidization too much since the dessert assembly is fast but you can always sprinkle them with a bit of lemon juice if you wish).
Cut the pound cake slices in triangles. Set aside.
In a large bowl, whisk together the milk, vanilla, eggs and sugar until smooth.
Layer the pear and pound cake slices in your gratin dish(es). Slowly pour the custard batter on top. Bake for about 30 minutes or until golden brown. Serve warm with some red currants and ground pistachios scattered over the top.

Been away from home for the past ten days and although I have had a wonderful time getting work done, seeing friends and meeting new people, I am always very much itching to get back home to my family. Both workshops in Kansas City went very well and this past week spent in Seattle for a shoot was just dreamy.

There is nothing more rewarding than knowing that you helped someone get more comfortable telling a story around food with their camera, light or that you contributed to making pretty images for someone’s cookbook. Photography is always the sum of many things that are equally important to me. Practice, creativity, partnerships and opening one’s mind to the unknown. The possibilities. I love seeing people let loose of their fear they can’t this or that.

Cheese Board


Flying to Seattle was like a mini vacation. A grueling mini vacation of sixteen hour days but a time off nonetheless. One of the things that I love about Seattle is how comfortable it is to me. Great friends such as Clare and Jeanne do that. Those two have a knack for creating a homey environment everytime I come visit. Good food, great conversations and a serious amount of wine every night do keep me going for hours…

When traveling, even if I stay with friends, I make sure to eat good nutritious food as a send off and as a re-entry. Friends feed me. Restaurants too. I even bring food on location shoots. It’s me. I have a bad habit to go for a cup of strong coffee in the morning and pretty much nothing until 4pm rolls around. By then, my stomach sounds like a little green alien is forming battalion.

Champagne Grapes


I am a big fan of salads and soups as means to set my internal clock right. They are food for the bones, body and soul. Just with like a photo you create, a simple bowl of salad you assemble can take on a gorgeous palette and tell the story of what your body is craving. Even in a hurry. Colors, textures, flavor combinations. It’s very much like assembling a picture to me. I always think of what I do as I put meals together the same way I do when I compose a shot.

The act of seating down and re-visiting my dish, now complete is very much like seeing the picture as I edit it. Sometimes, there is a bit too much salt, too many colors, flavors or the vinaigrette is off. Sometimes I like the salad so much, I want to keep it my immediate memory bank. Sometimes, I cringe when a shot I thought would work ends up being not seasoned the right way, so to speak. Sometimes I know I’ll revisit that set up many months later in a slightly different way because it worked great the first time.

Autumn In Seattle


Thing is, I do that photography-story telling bit with almost every food. Salads or not. Good thing I do this for a living, eh?! It’d be easy to get in a rut unless you shop for seasonal ingredients. Again, same goes with every foods.

Right before I left, you could tell a real transition up in the air and at the market. It was a bit touch and go but the arugula was still doing well. Grapes of all sorts were having a good times. White and purple scuppernongs, Champagne, big fat juicy seedless reds. The fennels had fronds longer than my arms. It was all starting to shape up in my head.

The couple of days before I left for my trip West, I loaded up on a salad comprised of arugula, raw fennel, grapes, blue cheese, smoked Coho salmon, pecans from our tree and a white balsamic vinaigrette. Easy. Nutritious. Good for the soul too.

This week that Fall produce is slowly making an appearance, my salad making days might change. And I am looking forward to them.

Smoked Salmon, Fennel, Grape, Blue Cheese and Pecan Salad:

For 2:

In a large mixing bowl, mix the following ingredients:
– 4 oz smoked salmon (we like the thick slabs of Coho salmon)
– 1 fennel bulb, thinly sliced
– small handful of grapes, halved
– as much crumbled blue cheese as you would like or think reasonable (we do about one 2-inch piece per person)
– 1 to 2 tablespoons of chopped pecans (or other nuts)
– 1 to 2 big handfuls of arugula
– as much or as little vinaigrette as desired

Dressing:
1 teaspoon Dijon mustard
1 shallot, peeled and minced
1/2 teaspoon sea salt
1/8 teaspoon cracked pepper
2 tablespoons sherry vinegar
1/2 cup olive oil

In a small mixing bowl, whisk together the Dijon mustard and shallot. Add the salt and pepper then the sherry. Drizzle in the olive oil and whisk until emulsified. Drizzle on top of the salad.

The excitement of coming home is often trumped by the reality of an empty fridge. Rarely in my family actually. Back home, we have this tradition to invite the weary travelers for dinner so that they don’t have to worry about getting groceries, cooking while unpacking and sorting laundry. They also know that they can start recounting their trip and everyone will listen and partake.

The meal is nothing fancy, nine times out of ten it will be a quiche and a salad, a fruit and some yogurt. There may or may not be a cocktail or aperitif before the meal and a few many pictures looked at after dinner. The whole idea is to get together and pay attention to the ones around us, listen and smile along with them. It’s good for the soul.

Figs


Bill’s family is not like that. Nothing negative in my saying this, it’s just what it is. It’s not something they do. I am ok with that. When my in-laws were still traveling, I would do it for them. I think they thought it was "another cultural difference". I heard that comment a lot at first, always in a jovial way. And yes…there are lots of things that we do differently. But we like getting together around a good meal just the same, also.

When we travel, I try to have something easy waiting for us in the freezer. That way, I can just put them in the oven or on the stove and start unloading, sorting laundry, and all the fun stuff associated with "home atmosphere re-entry". I am not this organized for everything but I do notice that I am when there is food involved. On se refait pas…one doesn’t change!

I know that even if we have great meals while traveling, we will have a hunkering for seafood, plenty of clean and light flavors, a big plate of vegetables, and something sweet to end. It’s nothing fancy but it comes together easily while we find our bearings at home again.

I like to fix us something that packs a punch in the healthy department such as salmon. After days on the road, it makes me feel like I am bringing all our levels back up in a flash. By the time we are done unpacking and everything is sorted out, my fish is ready to cook, which takes virtually no time, and the vegetables are just crisp and al dente.

For dessert, while I am completely fine with a piece of fruit and a yogurt, I like something that brings me closer to home, even if only in my thoughts. Something that I know my mother or grandmother would have made for the travelers coming home that day. One of the things my grandmother was an ace with baking was her fruit tarts and her riz au lait (rice pudding). These are comfort food for me.

One day my aunt and uncle were coming back from their vacation, she started preparing a meal for them and plopped me on the stool next to her so I could watch her waltz with pots and pans and work her magic with ingredients. She decided to turn her rice pudding into a rice pudding cake. Gateau de riz is truly a home cook’s dessert in France. Almost an institution. She found the recipe and we made it our own. With figs. Lots of figs from the market. And lots of whipped cream. She loved whipped cream. I do too.

To this day, everytime we go away on travel, I either prepare a galette loaded with fruits (so they won’t go bad while we are gone) or a "Gateau de Riz Au Lait" and park them in the freezer. Once back home, I just sprinkle either or with some sugar, heat it up in the oven and by the time we are done with dinner, dessert is warm and ready for us. And we are ready for bed!

Rainier Cherries


In about 48 hours, and in between two photo gigs, we are taking another road trip (shorter this time) to Orlando, Florida. On Disney ground. And it’s not even a vacation and I’ve never been to Disney. I am teaching t at the USCPA Annual Conference. They revamped lots of their sessions and asked that I teach a couple of workshops of Food Photography & Styling. I am really honored to be among chefs who are small business owners and entrepreneurs and who get together to share knowledge and information. I am taking an extra day to do "the Disney thing" and get it out of my system though!

This past Sunday, as I poured over both our packed schedules for August and September, trying to secure itineraries, airfares and hotels, my brain just about exploded and I exclaimed "Oh boy, I need a drink!". I like an aperitif once in a while but I was really thirsty was something light on the alcohol content(I did not want to book a flight to Seattle while I was supposed to head out to New Hampshire!) and refreshing against the heat and humidity around.

Luckily, friends were coming over for dinner to celebrate my friend Holly Herrick’s Tart Love almost-book release (she had a review copy to show me my photographs "in action")and I had the perfect excuse to try this Apricot and Cherry Breezer cocktail from Bakers Royale. I marinated the apricot juice with dark cherries the first time (depicted above) which made it a really cool shade of red-purple. It hit the spot perfectly! Refreshing, light and not completely boozy that you can’t function. I saved the extra in an ice cube tray to thaw and use up as needed, mandated, prescribed or required…! This cocktail will be the perfect thing to have next week when we get home and unpack. To repack almost instantly.

Gateau De Riz Aux Figues, adapted from this one from Elle A Table:

Serves 6 to 8

Ingredients:
1 cup short grain rice
1 cup water
1 can coconut milk (14oz)
1/3 cup packed light brown sugar
6 large eggs
20 small figs (more if necessary to cover surface of cake, mine were really tiny)

Directions:
Preheat the oven to 350F and position a rack in the middle. Line a 9×13-inch baking dish with parchment paper.
In a large saucepan, bring the rice, one cup water and half the coconut milk to a boil. Turn the heat down to a simmer, cover and let cook until all the liquid has been absorbed (about 20 minutes). Set aside to cool slightly.
In a large bowl, mix together the remaining coconut milk, brown sugar and the eggs until well blended. Add the rice and mix until everything is well incorporated. Pour the batter into the prepared baking dish.
Cut the figs in half and arrange them on the cake. Bake for about 30 to 40 minutes until the top is golden brown. Eat warm…it’s nicer.

Miso Salmon With Ginger Vegetables:

Serves two

Ingredients:
2 teaspoons brown miso paste
1 teaspoon sesame seeds
2 teaspoons grated fresh ginger
Two 4-oz salmon fillets
sesame oil
1/2 red bell pepper (I used a couple of mini ones)
1 cup snow peas
2 garlic cloves, minced

Directions:
In a small bowl, combine the miso, sesame seeds and half the grated ginger. Rub the salmon fillets with that mixture. Heat a large saute pan and sear the salmon for about 4 minutes on each side in a little sesame oil.
In the meantime, prepare the vegetables: in a large saute pan or wok, heat a little sesame oil again and cook the red bell pepper and snow peas along with the garlic and remaining grated ginger until al dente.
Serve with the salmon.

Sometimes I get this crazy notions that I have a lot of time on my hand to do whatever. I know. Crazy right?! I mean, as the years go by I realize that "it will only take five minutes" will never be an accurate statement. It takes Bailey a mere 30 seconds to hide my shoe and I end up spending the next hour looking for it (what do you mean you have more than one pair of shoes?!!). However I relish recipes that allow me to marinate, brine or cure. Recipes that let time do its thing. Not in five minutes and surely not in thirty seconds.

There is virtue in meals quickly put together. My better half is eating a lot of leftovers with a poached egg on top as I work my way through several book projects at once. That really takes ten minutes and it’s just fine most nights. There are however days when I want to take more time with food. So I make ravioli and enjoy rolling dough to relieve stress and I release a few expletives in the process. I let my pan of ratatouille go on for hours until perfectly caramelized. I relish in the long simmering process of onion soup.

And then entered gravlax…The last time I had made gravlax was over 10 years ago. On a whim. After watching The Galloping Gourmet on T.V. I remember it distinctly because France had not been exposed to many cooking shows before and something about the concept was brilliant. The experience was so easy that I really can’t figure out why I waited this long to make it again.

It is so simple and you can literally put the cure together in less than 10 minutes and two days later have the most delicious gravlax. Bill loves it on his bagels in the morning and could not stop asking me "ready yet?" "are you sure it’s not ready yet?" I kept repeating like a stubborn mule "Thirty six hours dear. Be patient". Patience is key. The gravlax is buttery, sweet and salty and fragrant of dill and juniper berries all at the same time.

Light & Healthy


Some of us belonging to the Martha Stewart Circle were gifted with quite many pounds of fresh Norwegian Salmon as part of a campaign they were running. I love salmon but living on the waters of South Carolina, it is not a fish I buy often since it does not fish in the waters around here and I try to support local fishermen as much as possible. If I get salmon, I get Pacific wild salmon but I was intrigued by the claims of sustainability and ethically ocean-farmed raised salmon.

I got in touch with my favorite source on everything seafood, Becky from Chef Reinvented whose first cookbook, aptly entitled Good Fish is coming out in the Spring. What came out of our exchange, and without knowing lots of specifics about this company, is that not all ocean farmed salmon is equal and that some Norwegian farms are better than other farms, do not use antibiotics and monitor the growth and feeding of the salmon carefully. We both agree that even though it could be raised in better conditions than other farms in the world, it still does not compared to wild caught salmon. We also determined that it would be a waste of darn good fish not to cook with the one I had received!

I started with making Thai Coconut Salmon Soup actually and posted a preview on Flickr a couple of weeks ago but did not get around to post yet. The second one was this appetizer made with homemade gravlax and I could not help but make a quiche. No fear, everything will be up on the site at some point! Nothing could be easier than this appetizer. Well once the gravlax is done of course… I pan fried some dried prawn crackers (also named chips depending on the brand) and topped each with a slice of radish, some gravlax, a dollop of creme fraiche and sprinkled everything with chopped chives and pomegranate seeds. The combination of sea, sweet and salty was pure joy on the tastebuds.

Oh dear… we ate the entire thing that evening with some bubbly and shared it all with good friends.

Homemade Gravlax And Prawn Crackers Appetizer:

Serves 12

For the gravlax, adapted from The Minimalist.

Time: 10 minutes, plus 24 to 36 hours' refrigeration

1 cup salt
2 cups sugar
1 bunch dill, stems and all, chopped
2 tablespoons cracked juniper berries
1 2- to 3-pound fillet of salmon, pin bones removed.

Mix together the salt, sugar, dill and juniper berries. Place the salmon, skin side down, on a large sheet of plastic wrap. Cover the flesh side of the salmon with the salt mixture, making sure to coat it completely. (There will be lots of salt mix; just pile it on.)
Wrap the fish well. If the temperature is below 70 degrees, and it is not too inconvenient, let it rest outside the refrigerator for about 6 hours, then refrigerate for 18 to 24 hours more. Otherwise, refrigerate immediately for about 36 hours.
Unwrap the salmon, and rinse off the cure. Dry, then slice on the bias (see illustration). Serve plain or with lemon wedges, creme fraiche, sour cream or a light vinaigrette.

For the rest of the ingredients:
freshly fried prawn crackers/chips or already made ones – just make sure they are fresh! (available at most Asian grocery store)
12 thin slices of radish
1/3 cup creme fraiche or sour cream mixed in with some salt and pepper to taste
2 tablespoons chopped chives
1/4 cup pomegranate seeds

Make the gravlax according to the recipe directions. Fry the prawn chips according to package instructions or use already fried ones (available at Asian grocery stores) Layer slices of radishes, slices of salmon, top with dollops of sour cream, some chives and pomegranate seeds.

Use as little or as much as you want…just be prepared. The combination is seriously addicting!!
