Lemon Mousse Strawberry Trifle


I’m in Atlanta for the next few days and very excited to be meeting a whole bunch of bloggers and foodies I only know via the screen. I’ve left early to prepare a workshop and also to take time to visit with friends there and put my brain cells to rest a bit. I was off to a good start by catching up with my blogging pal Chris around a delicious bowl of Thai noodles as soon as I landed. Sweet long weekend indeed.

It’s funny but without being a homebody, I am extremely happy in the "here and now" and very comfortable where my derriere was on the couch last night. Meaning, I wish it all could happen closer to me so B. could attend too. Although not surprised, I am very grateful for his mending the fort while I am away for work and he’s stuck here with two crazy dogs and a pile of papers to grade. I’ve left a fridge full of home cooked meals and a tray of these Pinch Cake Lemon Mousse Strawberry Trifles.

Everytime I set out to leave things for him in the kitchen, you can bet that I never forget to leave dessert. This time, I went straight to the source and asked what he most wanted to have. "Something retro like a trifle or strawberry shortcakes."For the occasion, I wanted to try something different and figured it was high time I picked something from Rose Levy Beranbaum’s Heavenly Cakes. I used her recipe for Pinch Cake and layered it with lemon curd mousse and fresh strawberries. They’re in season in Florida which is just a skip and a hop from us (and tasty).

I was attracted to this particular cake recipe for two reasons, how easy it was to convert as it contained very little flour and also because I loved the story behind the name, Pinch Cake. Paraphrasing Mrs. Beranbaum: in Spain, the cake is originally known as pinch bread and the name is partially derived from the way of eating it: by pinching out pieces between your fingers. Mrs. Beranbaum calls this version Salt because it was created in 1985 by Miquel B. Costabella, pastry chef of Salt Bakery, named after the village of Salt, close to Girona, Spain. History, baking. Happy.

I did say I was working on one more surprise: I figured Seattle was so close to L.A not to go visit a couple of dear friends. Well, thanks to the organization skills of Viv from Seattle Bon Vivant, I am now teaching 3 workshops there. Two will be on photography and one on macarons. [Update: all classes SOLD OUT]. Can’t wait to meet Seattle, its wonderful community and thrilled to be staying on Shauna’s couch. After that trip I’ll have two days to get the house ready for 3 weeks with my parents. Phewee…!

Gimme cake…!

Pinch Cake Lemon Mousse Strawberry Trifle

Makes 6 to 8

Catalan Salt Pinch Cake, adapted from Rose’s Heavenly Cakes:

1 cup + 2 tablespoons (112gr) unblanched sliced almonds
3/4 cup plus 2.5 tablespoons (180gr) sugar, divided
6 large eggs
2 large egg whites
1 teaspoon finely grated lemon zest
1/2 cup plus 1 tablespoons white rice flour

Preheat the oven to 325F/160C.
Line a quarter sheet pan with a sheet of parchment paper and slightly spray with cooking spray. Reserve.

Toast the almonds on a separate baking sheet until pale golden, about 7 minutes.
Cool completely and pulse the almonds with 2.5 tablespoons sugar until finely ground. Stop before the nuts start to form a paste.
Place the eggs into a 2-cup measure with a spout and whisk them just to break them up.
In a stand mixer fitter with the whisk attachment, beat the egg whites on medium low speed until foamy. Increase the speed and whisk until soft peaks. Gradually beat in the remaining cup of sugar. Continue beating until the meringue is thick and glossy. With the beater off, stir in the almond mixture until evenly incorporated.

Reattach the whisk and with the mixer on medium speed, add the beaten eggs to the meringue, 2 tablespoons at a time, beating for 2 minutes after each addition. It should take a total of 20-25 minutes but be sure to beat for a minimum of 20 minutes. Add the lemon zest.
Sprinkle the flour over the batter and fold until completely incorporated. Pour the batter onto the prepared baking sheet and bake for 15-20 minutes until a knife inserted near the center comes out clean.

For the lemon mousse:
grated zest of 1 lemon
1/2 cup (125 ml) lemon juice
1/4 cup (50gr) sugar
2 eggs
1 cup (250 ml)heavy cream

4 cups fresh strawberries

Combine the zest, sugar, juice in a saucepan, and bring to a simmer. In a small bowl, beat the eggs until light. Beat some of the lemon mixture into the eggs to temper. Scrape the mixture back into the saucepan and cook stirring constantly until it thickens up, about 5 minutes. Strain and let it cool to room temperature, covered with plastic wrap until ready to use.
In a stand mixer, whip the cream to medium stiff peaks. Incorporate the cooled lemon curd in three additions. Place in a piping bag.

To assemble:
Cut out rounds in the baked caked that will fit inside the glasses that you wish to use. I got enough rounds for 2 layers for six 3-inch wide glasses.
Place one round of cake at the bottom of the glass, position strawberry halves inside facing out on top, pipe some lemon curd in the middle and repeat the layers. Top with some extra whipped cream if desired.

Le P’tit Coin Francais:

Pour le gateau:
112gr amandes emondees
180gr sucre
6 oeufs
2 blancs d’oeuf
1 cuilliere a cafe de zest de citron
80gr farine de riz

Prechauffez le four a 160C.
Mettez une feuille de papier sulfurise sur une petite plaque a biscuit a rebords. Beurrez legerement et mettez de cote.
Faites toaster les amandes sur une autre plaques jusqu’a ce qu’elles deviennent dorees, 7 minutes environ.
Laissez les refroidir completement et reduisez les en poudre dans un mixer avec 2 cuillieres a souple de sucre. Arretez la machine avant que les amandes ne forment une pate.
Mettez les oeufs dans un grand verre mesure et les battre legerement a la fourchette, juste pour les casser.
Montez les blancs en neige en ajoutant le reste de sucre au fur et a mesure afin d’obtenir une meringue ferme. Ajoutez les amandes et melangez.
Ajoutez les oeufs entiers battus, 2 cuilleres a la fois et tout en battant l’appareil pendant 2 minutes apres chaque addition. Le procede devrais prendre environ 20 a 25 minutes (au moins 20). Ajoutez le zest de citron.
Ajoutez la farine en pluie et soulevez a l’aide d’une maryse jusqu’a ce que la pate soit homogene.
Versez la pate sur la plaque preparee et faites cuires 15 a 20 minutes.

Pour la mousse au citron:
le zest d’un citron
125ml de jus de citron
50gr sucre
2 oeufs
250ml de creme entiere liquide

Amenez le zest, sucre et jus de citron a fremissement a feu moyen. Dans un bol de tailled moyenne, fouettez les oeufs pendant 2 minutes. Ajoutez en filet le jus de citron chaud tout en continuant de fouetter. Remettre la mixture dans la casserole et cuire a feu moyen jusqu’a epaississement. Passez a la passoire et laissez refroidir.
Pendant ce temps, montez la creme en chantilly et quand la preparation au citron est refroidie, y melanger la chantilly.

Assemblez:
Dans 6 a 8 verres, faites des couches successives de gateaux, mousse au citron et fraises.

Love the way that looks! A retro desert? My mom always made us caramelized oranges/tangerines for desert, but mind you just on festive occasions like Christmas and birthdays. (served in a glass bowl with a huge sigh of relieve because it *scary* involved caramel!)

Retro desert, hm, i doubt you'll know about the vladishka pita, my grandmother used to make. It's a bulgarian desert (a cake with walnuts, cinnamon and yougurt – no eggs), often enjoyed in my family which i still make 🙂 I could give the recipe if anyone wants it.

I'm not sure what exactly qualifies as a retro-dessert… but my mom used to make us a fabulous pumpkin-grand marnier cheesecake for dessert in fall. Sometimes she'd even let us eat a piece for breakfast the next morning! 🙂

Retro Dessert? Does it have to be "favorite"? When I think "retro desserts" what comes to mind is "Heavenly Hash" – a dessert that was apparently very popular in the 60's & 70's at bridal and baby showers, according to my mom. Its use of raw eggs probably puts it on the "bad" list today. Haven't had it for years, but I remember liking it as a kid when my mom would make it for summer Sunday dessert. (It's got pineapple in it, and Nilla Wafers, eggs and butter and sugar, and I think plain whipping cream, and that's it…)

oh, i hope you will come to nyc one day. i would take both classes. my favorite retro desert was made by my mom and pretty simple. homemade graham cracker crust. chocolate pudding. whipped cream on top. comfort food. have a wonderful trip!

Your trifle looks absolutely divine. I love taking classic desserts and giving a twist to it. The lemon mousse is something I'd definately would like to try have a go at.

Here in Australia we have this traditional Australian dessert called pavlova. Basically a meringue base served with cream and seasonal fruits. Not long ago I created a "retro" pavlova; it was served as a messy kind of trifle. The meringue was chocolate served with coffee cream and roasted hazelnuts. YUM! I'll send you a photo of it so you know what I'm talking about 😀

My favorite dessert is angel food cake with lemon sorbet and fresh berries. It reminds me of my favorite restaurant in NYC and going there in the summers when they would have all the windows open. Nice and sunny, and not overpowering at all.

My favourite retro dessert is one that makes me wince, despite how good it is. It is a pineapple dessert, made in a pan. The base has raw egg, which always leaves me a bit concerned. The rest of it is pretty much tinned pineapple, icing sugar, butter, and whipped cream. Taste great, but not light in any sense of the word.

My favorite retro dessert is definitely oranges with caramel. It was with great glee that I discovered Alice Medrich had included a recipe in her book…
if I can't have that one, I'll take angel food cake with fresh fruit. It's a little less "retro" in the Americana sense, but it always feels like a dessert from the past.
If I can't have that, I'll take the atrociously named "Indian Pudding" that my grandmother used to let me eat for breakfast the day after Thanksgiving.

That trifle looks AMAZING!! My favorite retro dessert would actually have to be a trifle! When I was younger, I went to one of my first "fancier" dinners at Summit House in Fullerton, CA, and they offered this English Trifle as a complimentary dessert for birthday guests. WOW, I fell head over heals, the rum-soaked genoise, the creamy chantilly cream, the berries and the perfectly toasted almonds. I was in heaven.
Just recently I tried to make one for myself, somewhat mixing all sorts of other recipes to make the kind of trifle I had in my head (that English Trifle from Summit House) and it turned out GREAT! I had to really watch myself, because once I started tasting it, I wanted to take a couple bites every 10 minutes. Hope I'll have the opportunity to make the amazing trifle pictured here!

Do angel food cakes count as retro? They're so classic, and so easy, and pretty much the most delicious thing with any kind of fruit. I use my grandmother's pan to make them, so maybe that makes them retro.

Hmmm… my Grandma and I used to make wonderful sugar cookies together, so I guess that'd be my favorite "retro" dessert. She recently sent me the book the recipe's in and they spell it "cooky" throughout… it's precious!

I'm actually not sure what qualifies as a "retro" dessert, since everything old is becoming new again… But I'd say one of my childhood favourites is crème au chocolat.

Oh my, strawberries my absolute godlynessdelicius fruit. This recipe looks fantastic, with somewhat of heavenly soft and creamy and mmmm so yummy!!
Very similar to one of my favorite deserts in Italian"la nuola". I'll have to post it one of this days.
But as retro dessert I have to go with the simple apple cake my mom used to make when little.. Very different recipe but so simple 🙂

I agree with Chris, love lemon mousse and can't wait to try this recipe. When I think 'retro' I think of my mom and her friends. They weren't necessarily gourmands, but they made fun things for their kids. One of my favorites was an ice cream sandwich dish/dessert. Layer the bottom of a baking dish with ice cream sandwiches for the bottom layer, crush heath bar and mix with cool whip and layer on top of sandwiches – then put in the freezer. Garnish with more of the topping when it comes out.

Simple, but yummy for kids!

My favorite "retro" dessert would probably be pretzel salad (pretzels, butter, sugar, cool whip, cream cheese, fruit and jello…what could be better?). 2nd would definitely be strawberry shortcakes with the store bought cake cups. Ok, this is my first time posting a comment, but I have been following your blog for roughly a year now. It has really been inspiring reading about the creative desserts you invent and modify. While I do not have a favorite dessert, let alone a favorite retro dessert, my Dad does. He loves banana pudding. And the way he tries to hint us into making it for him? He buys bananas, Nilla wafers, and pudding, then hopes we catch on. Does not work, but he still tries. Have fun in the crazy city of Atlanta!

My favorite retro dessert…it's hard to choose! When I think 'retro', my mind goes to the classics. I love chocolate chip cookies, angel food cake and my grandpa's strawberry pie an awful lot, but I'm never opposed to a macaron, hand-dipped ice cream or a cherry pie either!

In my family, retro desserts are a staple. One of them is meringue bomb. It is a mix of fresh black dates (pealed of course) with tons of French whipped cream and broken meringue chunks. Very light in texture. Super tasty, but calorie rich. This dessert feels very 80ies to me.

By the way, I loved the tarte des rois recipe you posted. I am making it this week-end.
In my family it was a “gateau des rois” they used to bake with a coin and hard bean hidden in it. Of course the one who got the coin was crowned king of the year and the unlucky one who got the bean… well… better luck next time. Hehehe

It's not exactly retro, but I have a recipe for lemon blueberry cookies with a lemon zest icing that I love. The recipe is something that my mom cut out from the newspaper ages ago, and I grew up eating them (so, they're retro for me). I love to bake them for groups of people when blueberries come into season. No one has ever had them before, and I usually get lots of recipe requests.

More importantly…REALLY want to get tickets to your Seattle class. I'd love to surprise my daughter (who lives there..I'm in Portland) with a little day out and this would be perfect. I love making Oreo Cookies. I found the recipe at smittenkitchen, but I'm pretty sure it came from a cookbook called Retro Desserts. I've done some different things with them too. During Christmas I made them and put some pulverized candy canes in with the filling. Delicious.

But I also love all those old-fashioned fruit desserts, like buckles and such.

Helen, it is my birthday this weekend and I was going to ask my mother to make me either a Tres Leches Cake or a Strawberry Shortcake!!! I love all desserts, retro and modern. I still live with my mother so I only ever bake, I don't do much REAL cooking. This beautiful book would be the best birthday present ever!!! I too love recipes with a story.

Its definitely rice pudding for me! My aunt makes it for every Christmas. She hides and almond inside, and whoever gets the almond wins a prize…a wonderful family tradition.

Those trifles looks so pretty with strawberries! Sadly we don't find them here in winter. My fav retro desert has to be rice pudding with almonds,raisins, cashews and dried coconut pieces. super yummy!

You continue to amaze me.

I recently made your toasted blueberry pound cake (from the recipe with watermelon soup and lemon ice cream) and it was gone within the hour when my family descended upon it like vultures, sneaking down in the middle of the night eating it all before the morning!

I also tried your chai coffee cake and apricot teacakes, and let me tell you, your recipe's put every other recipe I have in my arsenal, to shame. There is simply something elegant yet basic about your recipes, making one slap their hand to their forehead wondering how that combination of flavors never occurred to them.

Your recipe's, and blog in general, have made me more inventive, trying how different combination's taste and seeing how perfect they can be. They aren't off the wall, out of nowhere combination's but refreshing ones that make you feel silly for just realizing.

Anyways, I am a big retro person. I love watching old television shows of my childhood, the old movies and I yearn for Halloween when I get to delve back in the past and play out my fantasies of living in the 50's, 60's, 70's, or 80's for the day.

However, my favorite way to wax nostalgia is food. And more specifically, desserts. To me, black and white cookies are the be all and end all retro dessert. I have a strawberry shortcake every year for my birthday so that just feels like tradition but b&w cookies, as well as rainbow cookies, bring me back like nothing else.

Thanks for letting me stroll down my gastronomic past for a moment, I should definitely do it more often!

Everytime I see lemon in a recipe I think about our lime (which is lemon for us here), and to be sincere, I think it tastes even better with lime than lemon 😉

As always, your photos are beautiful and the lemon mousse recipe looks delicious. I think I'm going to try it alone, because I have all the ingredients for it, but not strawberries.

Retro dessert? Well, that's difficult. I'm not really sure what would be considered retro.

However, one of the Spanish traditional desserts I love is "Tocino de cielo" (literally, "Heaven's Pork Fat"), which is sort of a flan-like dessert, only it uses exclusively egg-yolks and sugar.

BTW, I had never (ever) commented (I'm sorry) even though I've been reading your blog for ages. Still, the chance to win "Rose Heavenly Cakes" made me jump to it. And I promise (pinky-promise) I'll comment more often.

My girlfriend recently visited London and had French Macaroons and all she could think of was how I was explaining the little 'feet' that they have. I'm yet to master them, but I'm being optimistic about it!

You're really hard on people's diets, you know that? Your trifle looks wonderful, anything with strawberries and lemon is a winner in my book! I don't think it's "retro" but the dessert that we've been eating forever is my mom's chocolate roll. Chocolate sponge cake, whipped cream and chocolate sauce is another wicked combination.

Wow! Looks fabulous.
My favourite is self saucing chocolate-orange pudding. That's pudding in the British sense of cake-like dessert.
So easy! Mix everything together, throw the batter in the mixing bowl into the microwave (it was an updated version) for just a few minutes, turn it out onto a plate and you have a lovely cakey dessert with chocolate-orange sauce.

Mine's ais kacang! It's a Malaysian dessert literally translated as "bean ice".

It has a base of red beans, sweet corn, palm seed, grass jelly and cendol, with a mountain of shaved ice on top drizzled with evaporated milk and syrup. I like mine with vanilla ice cream on top. Yum!

TRIFLE!? Thank God someone is show casing this!! This is very popular for my family during the holidays, and is widely popular in Canada, but not so much in the states. I love the theme of lemon+berry and that macaron is so cute atop it all!
As for retro desserts, Brownie pudding- a standard from BHG red and white checked cookbook, though I prefer to jazz it up and make it a little more moist and fudgy. Nanaimos as well as the common puffed wheat cereal treat are both things that remind me of Canada and family!

Hmmm, lemon mousse… That's something I definitely have to try soon.
BTW, yesterday I made Meyer Lemon Cupcakes from your recipe, though I had to substitute ordinary lemon for meyer lemon, cause we can't find any here. It was a major hit. My 2 daughters couldn't stop asking for more.. 🙂
As for retro dessert, I wouldn't reject a slice of blackforest cake or a bowl of banana split ice cream or some crepes suzette..
Sigh… if only, I could attend one of your workshops, that would be precious.

Can't wait to try it out, as one of my best friends has gone gluten free. She'll be thrilled!

Retro dessert – my great grandmother made something that we just called "Stuff"…coolwhip blended into not completely set jello. YUM! One time she added crushed graham crackers to the top and we called it "Crummy Stuff". My mom was appalled until she realized what we meant. Still laugh about it and really miss great-mother and Stuff.

I found a recipe from my great great grandmother a lemon meringue pie that sounds amazing…only problem was she came from the "I don't use exact measurements, I just know how many palmfuls to use" camp of baking, so I've been trying to decipher the amounts she used…haven't been brave enough yet to try.

Have to say I am in LOVE with your blog!!! You have given me the chance to brush up on my French with your wonderful recipe (betcha didn't think it would take me 4 hours to translate this wonderful Le P'tit Coin (kidding). Your photography makes me drool at the sight of everything you make.
Way back when my dad introduced us to our first microwave oven. There I made my first dessert (I thought it was very professional of me), a chocolate souffle. It turned out pretty good and ever since the sight or thought of Chocolate souffles brings back the memory of our first microwave and my 1st pro dessert.

Oh. This brings a memory of mine on my b-day, I went to this restaurant and they had this delicious 7 layers of strawberry short cake. It had strawberries, strawberry moouse, whipped cream and some sort of sponge cake. I only had it once and I wish I had the recipe!!!

thanks for such a beautiful blog, I especially was drawn to the recipe for pumpkin semifredo. If the offer to win the cookbook is running, please include me!!! My favorite retro dessert is from my great grandmother and we called them apple slices. Another common name for them is apple slab pie. It was a wonderful blend of spiced granny smith apples tucked between two sheets of pie crusts and topped with a thick drizzle of icing. I miss it and her.

I actually just checked this book out of the library and decided to make her white velvet cake as a belated birthday gift to myself. Her mixing method was completely new to me, and resulted in one of the best white cakes I've ever tasted. And when she says "velvet" boy, does she mean it! Every Friday, my Grandmother used to bake an apple raisin cake. It was not tall, and a little runny, like a cobbler. It filled a whole rack in the oven. The aroma alone was heavenly. We were a large family, so there was never any left over. So good… I can still taste it.

Wow I just wanted to say that i LOVE your blog so much. I am starting out my own blog and part of it will be melding together cooking and photography. Whenever I cook recipes for the blog, I want to be able to take pictures of the food, as well as you do. If you have any comments or tips to help me out, please come over to my blog and take a look (of course I only have a few posts since I am just beginning)! I just wish I lived in LA so I could attend your workshop! My family does live out there so I hope that one day, just one day in the future it will work out there I am there the same time as your workshop!

As for retro desserts, my mom is the Jello queen and I've just grown up with eating it. Her specialty is three layer jello with two fun colors on top and bottom and a white layer in the middle!

My (retro) dream is that I can walk to a shop and buy good quality gluten free puff pastry dough at a reasonable price and make buttery flaky Danishes (among other things).

Ummm, toss up between Banana Pudding & "Fluffy Stuff"- Jell-o pudding with whipped cream and fruit. Delicious!

Your triffle looks to die for! I absolutely love strawberries… but I live in Michigan and they cost an arm and a leg!

As far as a favorite retro dessert… my mom's banana bread pudding. Although, I don't know if it's more "nostalgic" than "retro."

I believe my favourite retro dessert is "Marängsviss". It's a Swedish variant of Eton Mess that contains whipped cream, meringues, sliced bananas, vanilla ice cream and chocolate sauce!

My favorite retro dessert is the Seven Layer Jello that my grandma makes. She cuts it into cute little rectangles, and I used to love to pull apart the layers and eat them one at a time.
