White Chocolate Brownies

This has been a heck of a week…truly nerve wracking. How would you feel if somebody told you that your paycheck (you know, the thing that makes your blog look good) is somewhere out there…but 3 days late… Yep, I thought you might react the way I did and picked up a spatula, some chocolate, cracked up some eggs and made brownies…Had to work out my nerves on something and when things don’t go right I bake, I stir, I knead and I know I am not the only one. The world could have crumbled and fallen…I would not have cared…Maybe I need to take these to the bank tomorrow and they might be more understanding of a slight chance of an overdraft…!

I don’t use white chocolate that much but here it truly worked magic and gave a great fudgy brownie. Oh yes, these are great. Really…I used my "mental" brownie recipe but reduced the sugar as white chocolate is already very sweet to my taste. I am surprised I liked these that much as I did. Yes, I know "white chocolate" is not remotely close to chocolate but that velvety smooth confections is known around the world as "chocolate", so indulge me with this one before calling the chocolate police.

White Chocolate Brownies:

6 tablespoons unsalted butter
8 ounces white chocolate
2 eggs
1/4 cup sugar
1/2 tablespoon vanilla
1 cup flour
1/2 cup semisweet chocolate chips

Preheat oven to 350.
Grease and flour an 8 inch square baking pan, or line with foil.
Melt butter and 4 oz of white chocolate together in top of double boiler over hot water. When melted remove from heat and add the remaining white chocolate. Stir to blend well. Set aside. Beat the eggs and sugar until pale and thick.Add white chocolate and butter mixture, vanilla and flour. Beat just until smooth. Add chocolate chunks and mix in by hand, being careful not to overmix.
Pour into prepared pan and bake 35 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. Cut into squares or bars.

They made me feel so much better that I am virtually sending them to Myriam for her second Browniebabe Of The Month event. Check out the round up sometime after June 10th.

Update: the check finally came in… phewww!

Leo May 25, 2007 um 3:51 am

Amazing. I don’t even like white chocolate, but these sound so amazing, I think I’m going to have to hurry to the grocery store and nab the ingredients!

Unknown May 25, 2007 um 4:34 am

These are brilliant. I love it when creative cooks switch up ingredients. I’ve finally–after too long–gotten over my disinterest in white chocolate, largely by understanding places where it excels. I can’t wait to try these!

MyKitchenInHalfCups May 25, 2007 um 5:26 am

Chocolate or not, it does seem to have a good spot on the taste buds. No sir, there can be no chocolate police on this case.
I’ll have two please.

Meeta K. Wolff May 25, 2007 um 6:32 am

Helen, it’s the best way to work those nrves. BTW: you mentioned that we live in a parallel universe in one of your mails to me. Well guess what I made white chocolate brownies yesterday too!! I’ll be shooting them today LOL! Hugs!

Rosa's Yummy Yums May 25, 2007 um 7:55 am

Those blondies look marvelous and very delicious! Yummy! I still have to try that white version of brownies…

breadchick May 25, 2007 um 10:46 am

oh….
my….
GOD!!!

Helen those look sooooo good that I am ordering white chocolate from the Baker’s Catalogue right after I hit "submit" on this comment. If you don’t win BrownieBabe this month just for this recipe alone you will be my BrownieBabe!!

Freya May 25, 2007 um 2:12 pm

I know exactly how you feel Helene, my boss 'forgot' to transfer my wages so I have to go through yet another weekend with no money – and it’s a bank holiday. Still, there’s always brownies…

Brilynn May 25, 2007 um 2:21 pm

I’m generally not much of a white chocolate fan, but those really appeal to me.

Deborah May 25, 2007 um 2:37 pm

I’m not a huge white chocolate fan, either, but I might make an exception for these!!

Aimée May 25, 2007 um 3:24 pm

I can relate to hitting the kitchen when I need to calm my nerves or get over something. Who need self-help books?
These brownies look like gooood therapy.

Cookie baker Lynn May 25, 2007 um 3:46 pm

Baking therapy – nothing better for stress. I love you brownies (whities?); they look like white chocolate fudge. Yumm.

wheresmymind May 25, 2007 um 4:34 pm

I wouldn’t be mad…I’d be pissed!!

Veron May 25, 2007 um 4:35 pm

great therapy for frayed nerves. I could have sworn off ever using white chocolate but my sister in law swears it makes a good filling. And judging from this, it makes a great brownie too.

Lis May 25, 2007 um 4:44 pm

You know what? I hate white chocolate. But I (seriously, not just saying it) would love to try these.. they look that good.

xoxo

talida May 25, 2007 um 5:47 pm

those look awesome!

Anonymous May 25, 2007 um 6:01 pm

wow, simply awesome. I really need to try these very soon. Now, let´s suppose one´s trying to cut back the fat content just a bit, would you think this recipe would work with a 30% butter, 70% plain yogurt ratio or so?
I´ve always liked cakes with plain yogurt because you get the moisture minus all the fat, and I´m hoping it can work because the white chocolate itself already has a high fat content.

Kelly-Jane May 25, 2007 um 7:45 pm

They look great, I especially love the chocolate chips peeking out.

Anonymous May 25, 2007 um 8:31 pm

Oh my Helene, that’s terrible news about your paycheque! Yipes! I hope it all gets sorted out!

Beautiful brownies… I’ve been warming up to white chocolate a bit over the last few months, as I’ve never been a fan. These sound just lovely!

Thistlemoon May 25, 2007 um 8:57 pm

I am not a huge fan of chocolate – white or otherwise, but these look really good. It reminds me that I need to come up with a recipe for some kind of brownie or bar dessert that I am doing for my cooking class…and brownies are a cooks dessert – no kneading here!

Peabody May 25, 2007 um 9:00 pm

They almost look like giant pieces of white fudge…yum.

Jenny May 26, 2007 um 1:09 am

If I were the bank, I’d give you overdraft!
How about sending me some as well?

Mallow May 26, 2007 um 3:53 am

Those are absolutely GORGEOUS!

monica May 26, 2007 um 5:36 am

Papilles et Pupilles May 26, 2007 um 11:45 am

emily May 26, 2007 um 3:35 pm

They look gorgeous!

browniegirl May 26, 2007 um 6:27 pm

Oooooh WOW! All my senses have gone onto alert……..these look amazing!!!Thank you Helene, I am also into baking therapy! So glad your pay check got sorted. I love your blog.

Unknown May 26, 2007 um 7:07 pm

I agree that baking can be SO therapeutic. Nothing like mixing brownies by hand!

I adore the idea of this recipe. So many people do the opposite approach – chocolate dough, which chips, and I love this version. Must try!

Anonymous May 26, 2007 um 11:35 pm

ma pauvre. Hope this bank misery will sort itself out, especially now that the long weekend is coming up! Is there really a chocolate police? I think these look just tempting as if they were dark. And I am a dark chocoholic!

Chris May 27, 2007 um 1:14 am

I am sorry you had an icky week. But, these brownies look to-die-for.

Anonymous May 28, 2007 um 2:48 am

Yum! I love white chocolate and wanted to make some white chocolate brownies too. Your version looks really good.

Unknown May 31, 2007 um 3:28 pm

I made these last night! They turned out beautifully, maybe not quite as uniform as yours, but that is probably because I didn’t wait until they were perfectly cool to cut them into squares.

The only thing I think I would change is to add a little salt to really bring out the flavors.

Beautiful.

Am a beginner in baking and just made this awhile ago – love it! Thanks for the recipe!

Laura Hejl July 21, 2007 um 4:50 am

Thanks so much for the recipe. I made them last night and they were delicious! Even my husband, who does not particularly like white chocolate had more than one serving. I linked your reciped on my blog 🙂

Anonymous August 1, 2007 um 4:58 pm

I just made these last night and they are so incredibly good!! I’m not a white chocolate fan but, truly, these are fantastic. I can’t wait to share them with a friend who is obsessed with white chocolate. Thank you for this wonderful recipe!

eatme_delicious August 15, 2007 um 6:09 am

yum those look awesome. i’ve been wanting to try out a white chocolate brownie recipe so i will save this one!

motuhwatery goodness!

I used your recipe and my brownie turned out like cake. =( Can I microwave the chocolate and butter or do I have to melt it on the stove top?

Anonymous February 24, 2008 um 7:43 pm

Looks delicious! I am going to have to give these a try!

Anonymous April 13, 2008 um 5:17 am

i just made these and i dont really like them.. i love white chocolate but they ended up tasting like plain white cake to me. i dont know.. i would have liked more white chocolate flavor i guess. thanks though

Anonymous July 28, 2008 um 5:11 pm

I’ve been looking for a good recipe, and the feedback for this one seems wonderful.

But I was curious. Has anyone made them WITHOUT the chocolate chips? I’d love to know if they’re just as good without.

Anonymous August 10, 2008 um 5:50 pm

i’m gonna try them right now! 🙂
help though, how much is 6tbsp of butter in grams?

Helene August 10, 2008 um 6:55 pm

It’s about 75-80 grams.

Anonymous August 10, 2008 um 6:59 pm

wow! thanks for the swift reply!
let me go put my baking skills to the test now… 🙂

PS: I was thinking of replacing the choc chips with macadamia nuts – just because I’m nuts for nuts… how does that sound?

Helene August 10, 2008 um 7:05 pm

That sounds good!

Anonymous August 10, 2008 um 9:34 pm

OMG, I hate you!!! :p hahaha, why? why did u have to come up with this? It tastes so good, I’m never gonna stop making it!! 🙂
Thanks a zillion!
PS: Will try the macadamia nuts next batch, was out of them so just shredded some white chocolate into the batter 🙂 heavenly!

Anonymous August 13, 2008 um 5:06 pm

I just made these as per the recipe. Although I thought it tasted good I didn’t like the texture. It was too cakey and not "gooey" as I like my brownies. I would probably decrease the amount of flour next time.

Helene August 13, 2008 um 6:02 pm

Anon: it’s always interesting when two people using the same recipe can achieve different results. Mine tured out really fudgey and not cakey!

Anonymous September 1, 2008 um 9:42 am

At last! My first borwnies were this white chocolate brownies and I must say they were really delicious (better when still warm). I wanted a pink version and I changed some of the sugar for raspberry jelly nad the result was great. Thank you for this recipe, is really good.

Syrals October 3, 2008 um 4:46 pm

Thank you for this recipe. I love white chocolate brownies and made this for the first time last night. It came out fudgy and very tasty. Also, your recipe was so simple.

I could not get white chocolate bars and so, used white chocolate chips. However, it still tasted like the brownies I get from the restaurant. Thanks a lot. 🙂

eatme_delicious October 29, 2008 um 5:23 am

I made these awhile ago and loved them. Thanks for posting the recipe! The only thing that I thought was weird was that yours looked more fudgey and mine turned out more cakey. Maybe I ended up using more flour than you?

Anonymous November 18, 2008 um 7:52 am

the brownies were ok, but definately better with a scoop of ice cream. Mine turned out less fudgey and rather paisty.

Anonymous December 6, 2008 um 6:11 pm

Do you think these could be sweetened with honey? I’m pretty obsessed with the stuff, and it sounds like it would pair fabulously with white chocolate. The only problem is that it tends to brown rather quickly. Do have an idea for the baking temp and time?

Unknown January 3, 2009 um 7:09 pm

Just like a lot of others posting, mine came out very cakey too. I might try making them again, but ehh. Maybe refrigerating the batter? I’m not really sure what part I’m missing, where the consistencies are so different.

Helene January 3, 2009 um 8:38 pm

Julie: refrigerating the batter might work. Here are a few things to keep in mind to help them be fudgier: altitude and humidity play a big part in redering brownies cakey or fudgey, the way you measure your flour (packed or scooped), that’s why I like to weigh ingredients instea) (here it is 125gr flour), and not to beat the eggs with the chocolate/flour mixture for too long.

Anonymous July 3, 2010 um 5:11 pm

What do u mean by vanilla? Vanilla extract or vanilla essence? Thanks

Helene July 3, 2010 um 5:25 pm

Anonymous: extract.

test it comm June 13, 2012 um 10:45 am

These white chocolate brownies look so good!

Rina May 26, 2013 um 8:46 am

Made these for my family yesterday and got praised reviews!
I had them in the oven for only 25mins and even then I probably should have taken them out 5mins earlier to make them more soft/gooey.

Easiest recipe and so quick, will definitely make them again!

D Evans July 18, 2013 um 7:20 pm

These sound so good. I only have the white candi-coat in the house. Do you think this could be melted down and used in place of the white chocolate?

Helene July 20, 2013 um 2:14 pm

D Evans: I don't think the taste would be as good. Might have an issue with the texture too.

Unknown September 12, 2013 um 6:19 pm

Mine are in the oven right now, excited!
Thanks for the great recipe and easy to follow instructions.
