
This has been a heck of a week...truly nerve wracking. How would you feel if somebody told you that your paycheck (you know, the thing that makes your blog look good) is somewhere out there...but 3 days late... Yep, I thought you might react the way I did and picked up a spatula, some chocolate, cracked up some eggs and made brownies...Had to work out my nerves on something and when things don't go right I bake, I stir, I knead and I know I am not the only one. The world could have crumbled and fallen...I would not have cared...Maybe I need to take these to the bank tomorrow and they might be more understanding of a slight chance of an overdraft...!
I don't use white chocolate that much but here it truly worked magic and gave a great fudgy brownie. Oh yes, these are great. Really...I used my "mental" brownie recipe but reduced the sugar as white chocolate is already very sweet to my taste. I am surprised I liked these that much as I did. Yes, I know "white chocolate" is not remotely close to chocolate but that velvety smooth confections is known around the world as "chocolate", so indulge me with this one before calling the chocolate police.
White Chocolate Brownies:
6 tablespoons unsalted butter
8 ounces white chocolate
2 eggs
1/4 cup sugar
1/2 tablespoon vanilla
1 cup flour
1/2 cup semisweet chocolate chips
Preheat oven to 350.
Grease and flour an 8 inch square baking pan, or line with foil.
Melt butter and 4 oz of white chocolate together in top of double boiler over hot water. When melted remove from heat and add the remaining white chocolate. Stir to blend well. Set aside. Beat the eggs and sugar until pale and thick.Add white chocolate and butter mixture, vanilla and flour. Beat just until smooth. Add chocolate chunks and mix in by hand, being careful not to overmix.
Pour into prepared pan and bake 35 minutes or until toothpick inserted in center comes out clean. Cool on wire rack. Cut into squares or bars.

These are brilliant. I love it when creative cooks switch up ingredients. I've finally--after too long--gotten over my disinterest in white chocolate, largely by understanding places where it excels. I can't wait to try these!

wow, simply awesome. I really need to try these very soon. Now, let´s suppose one´s trying to cut back the fat content just a bit, would you think this recipe would work with a 30% butter, 70% plain yogurt ratio or so?
I´ve always liked cakes with plain yogurt because you get the moisture minus all the fat, and I´m hoping it can work because the white chocolate itself already has a high fat content.
They look great, I especially love the chocolate chips peeking out.

Beautiful brownies... I've been warming up to white chocolate a bit over the last few months, as I've never been a fan. These sound just lovely!
I am not a huge fan of chocolate - white or otherwise, but these look really good. It reminds me that I need to come up with a recipe for some kind of brownie or bar dessert that I am doing for my cooking class...and brownies are a cooks dessert - no kneading here!
They almost look like giant pieces of white fudge...yum.

I made these last night! They turned out beautifully, maybe not quite as uniform as yours, but that is probably because I didn't wait until they were perfectly cool to cut them into squares.
The only thing I think I would change is to add a little salt to really bring out the flavors.

Tsara Be: je les melange en general a la main avec un fouet ou une spatule. Avec un fouet electrique, je trouve qu'il y a trop d'air.

i just made these and i dont really like them.. i love white chocolate but they ended up tasting like plain white cake to me. i dont know.. i would have liked more white chocolate flavor i guess. thanks though

I just made these as per the recipe. Although I thought it tasted good I didn't like the texture. It was too cakey and not "gooey" as I like my brownies. I would probably decrease the amount of flour next time.
Anon: it's always interesting when two people using the same recipe can achieve different results. Mine tured out really fudgey and not cakey!
At last! My first borwnies were this white chocolate brownies and I must say they were really delicious (better when still warm). I wanted a pink version and I changed some of the sugar for raspberry jelly nad the result was great. Thank you for this recipe, is really good.

I made these awhile ago and loved them. Thanks for posting the recipe! The only thing that I thought was weird was that yours looked more fudgey and mine turned out more cakey. Maybe I ended up using more flour than you?
the brownies were ok, but definately better with a scoop of ice cream. Mine turned out less fudgey and rather paisty.
Do you think these could be sweetened with honey? I'm pretty obsessed with the stuff, and it sounds like it would pair fabulously with white chocolate. The only problem is that it tends to brown rather quickly. Do have an idea for the baking temp and time?
Just like a lot of others posting, mine came out very cakey too. I might try making them again, but ehh. Maybe refrigerating the batter? I'm not really sure what part I'm missing, where the consistencies are so different.
Julie: refrigerating the batter might work. Here are a few things to keep in mind to help them be fudgier: altitude and humidity play a big part in redering brownies cakey or fudgey, the way you measure your flour (packed or scooped), that's why I like to weigh ingredients instea) (here it is 125gr flour), and not to beat the eggs with the chocolate/flour mixture for too long.

Made these for my family yesterday and got praised reviews!
I had them in the oven for only 25mins and even then I probably should have taken them out 5mins earlier to make them more soft/gooey.
Easiest recipe and so quick, will definitely make them again!
These sound so good. I only have the white candi-coat in the house. Do you think this could be melted down and used in place of the white chocolate?
